Despite popular belief, you don’t have to have eggs for breakfast when you’re on a low carb diet like the keto diet.

There are lots of easy options for breakfasts with no eggs to enjoy for your morning meal that can help you with your health and weight loss goals.

1.Low Carb Granola – this homemade keto granola recipe is really easy to make keto friendly and this simple recipe is lovely when enjoyed with a bowl of low carb yogurt such as Greek yogurt or milk such as almond milk.

You can easily adapt the recipe to include your choice of nuts and seeds including almonds, cashews, hemp hearts or flax seeds to create the perfect keto breakfast for you.

This low carb granola is so easy and adaptable depending on your tastes and what you have available. 

I like to enjoy my granola with a bowl full of low carb diet yoghurt, but you could also enjoy a bowl full of the keto cereal alternative with milk that’s low in grams of net carbs such as almond milk or coconut milk.

You can make a big batch of the homemade granola over the weekend to then enjoy for speedy breakfast or as the perfect snack through the week.

It’s great to have a break from eggs for breakfast every now and then. And there are loads of other easy keto breakfasts that have no eggs. (Here are 10 Keto Breakfast Ideas Without Eggs.)

Keto Granola Ingredients

Here are some ideas for keto diet friendly ingredients that are low in carbs and high in healthy fats to include in your granola. Mix and match to make up 2 cups of nuts and seeds of your choosing. 

  • Almonds
  • Walnuts
  • Cashew Nuts
  • Pecan Nuts
  • Pumpkin Seeds
  • Sunflower Seeds
  • Hemp seeds or hemp hearts
  • Flax Seeds
  • Sesame Seeds
  • Chia Seeds

The great recipe for sugar-free granola is sweetened with the help of stevia, but you can feel free to swap for the keto-friendly sweetener you usually include in your diet to help keep the carb count down in the keto granola clusters.

Low Carb Granola - Easy Keto Breakfast without eggs

Low-Carb Granola Recipe

  • 1 Egg White
  • 2 Cups Nuts & Seeds
  • 1/4 Cup Shredded Coconut or Coconut Flakes
  • 1 teaspoon Vanilla Extract
  • 1/2 teaspoons Ground Cinnamon
  • 1-2 Tablespoons Stevia
  • Pinch of Salt 
  1. Preheat the oven to 120C/250, get out a baking tray and line it with well greased baking parchment paper. 
  2. In a large mixing bowl, whisk the egg white until frothy. 
  3. Roughly chop the nuts, either in a food processor or pop them into a ziploc bag and crush them with a rolling pin. 
  4. Add the dry ingredients of chopped nuts, coconut, vanilla, cinnamon, stevia and salt to the frothy egg whites in the large bowl. 
  5. Mix until fully combined and then place onto the prepared baking tray, flattening down to form a single even layer. 
  6. Place into the preheated oven for 15 minutes, remove from the oven and toss the granola so it all cooks evenly. 
  7. Place back into the oven for another 1-2 15 minute sessions, or until dried and golden to your liking. Mine took 45 minutes in total – or 3 X 15 minutes in the oven, with a good toss between. 
  8. Remove from the oven and allow to cool to room temperature on the baking sheet to further crisp up to become crunchy granola. 
  9. Once cool, break the homemade keto granola into larger pieces or clusters and store in an airtight container or mason jar. Serve just as you would a traditional granola with low carb yogurt such as Greek yogurt, fresh berries, coconut chips or keto milk.

Cook Time 45 minutes
Total Time 50 minutes

Ingredients

  • 1 Egg White

I’ve had a bottle of Irish Cream Essence lingering in my kitchen for a while. I shared a recipe for Chocolate Mousse on my other blog and thought I’d share another Irish Cream delight right here for you.  

Irish Cream Essence is handy to have on hand to be able to enjoy the delicious flavour of Baileys but without carbs. (Here’s where to find it.)

Keto Hot Chocolate with Irish Cream

The below recipe will make one Irish Cream Hot Chocolate, for more simply double the recipe.

Start with 1/4 teaspoon of Irish Cream Essence, have a taste and add more if you want a richer taste. You could also swap out the Irish Cream Essence for another essence to flavour your hot chocolate with peppermint, orange or vanilla.

Low Carb Irish Cream Hot Chocolate

  • 1 Cup Almond Milk (Or milk or choice) 
  • 1/4 Cup Cream
  • 25g Dark Chocolate
  • 1/4 teaspoon Irish Cream Essence
  • Whipped Cream (Optional) 
  1. Pour the cream and milk into the saucepan. 
  2. Chop the chocolate and add to the saucepan. 
  3. Place the saucepan over a medium heat. 
  4. Heat, stirring regularly, until the hot chocolate just comes up to a simmer. 
  5. Pour into a mugand stir through the Irish cream essence. 
  6. Enjoy as is or top with (optional) whipped cream.

This easy keto vegetable soup recipe is as a result of a fridge overflowing with green vegetables that needed to be used ASAP.

So, I popped them all together into a soup for a hearty, nutritious meal. You could really use any low carb vegetables that you like in your soup. Here are some ideas: 

  • Broccoli
  • Cauliflower
  • Brussels Sprouts
  • Mushrooms
  • Garlic
  • Onion
  • Leek

You can easily elevate the fat content by stirring through some cream, sour cream or even cream cheese. Another option is topping the soup with cheese such as regular grated cheese, feta, goats cheese or blue cheese. 

Easy Keto Vegetable Soup Recipe

Keto Vegetable Soup Recipe

  • 1 Leek
  • 500g/1.1lbs Zucchini
  • 1 Head of Broccoli
  • 500g/1.1lbs Brussels Sprouts
  • 4 Cups Vegetable Stock
  • Salt & Pepper, to taste
  • Butter or Coconut Oil, for cooking
  1. Prepare your vegetables by cleaning them all and chopping into roughly equal sized pieces. 
  2. Melt butter or coconut oil in a large saucepan and, when melted, add the leek and cook until starting to soften, adding more butter or coconut oil when needed. 
  3. Add the rest of the vegetables, stir to combine and pour over the stock and water to cover. 
  4. Shake over the salt, pepper and any other seasoning to taste. 
  5. Bring up to the boil, reduce to a simmer and cook for 15 to 20 minutes or until done to your liking. 
  6. Enjoy as is or use a stick blender to blend until smooth. 
  7. Stir though your cream and cheese of choice to elevate the healthy fat content.

This Cheesy Low Carb Vegetable Casserole Recipe is so easy, has only a few simple ingredients and you can adapt it to your tastes and what’s in season wherever you are. 

The best part is that the whole family, even picky eaters, will enjoy the tasty casserole that’s loaded with creamy and cheesy goodness that makes the perfect comfort food meal. 

This can be a really easy, budget friendly dish because you can use whatever vegetables are in season where you are.

For me at the moment, that’s fresh broccoli and brussels sprouts. Though in the past I’ve made this dish with just broccoli, cauliflower or brussels sprouts and it’s been excellent. 

Low Carb Veggie Bake

Here are some ideas for low-carb vegetables to mix and match in your veggie casserole to help keep it low in grams of carbs: 

  • Broccoli Florets
  • Cauliflower Florets
  • Brussels Sprouts
  • Zucchini/Courgette
  • Onion
  • Garlic
  • Leek 
  • Bell Peppers
  • Mushrooms
  • Asparagus

You can include any kind of shredded cheese you’d like in the easy recipe for the low-carb casserole, including mozzarella cheese, sharp cheddar cheese, Parmesan cheese or Monterey Jack cheese. 

The creamy cheese sauce in the great recipe is made by combining together heavy cream or heavy whipping cream and sour cream to create the perfectly flavored and textured creamy sauce.

You can feel free to swap one of the creamy ingredients for cream cheese, ricotta cheese or cottage cheese instead if that’s what you have available.

The combination of the fresh vegetables, sauce and cheese result in a perfectly flavored keto casserole that’s low in g net carbs, but you can feel free to also add in seasoning such as salt, black pepper, garlic powder or onion powder if you’d like as well.

  • Brussels Sprouts, halved
  • Broccoli Florets, chopped
  • 1/4 to 1/2 Cup Sour Cream
  • 1/4 to 1/2 Cup Heavy Cream
  • 1/2 to 1 Cup Grated Cheese 
  1. Preheat the oven to 180C/350F and get out a baking dish. 
  2. Place the brussels sprouts, broccoli or your low carb vegetables of choice into the baking casserole dish. 
  3. Top with the sour cream, heavy cream and half of the cheese. 
  4. Mix to combine the creamy mixture well amongst the vegetables. 
  5. Top with the remaining cheese and place into the oven for 15 to 20 minutes or until the cheesy topping is golden brown and cooked to your liking, serve immediately and then store any cooled to room temperature leftover in an airtight container to enjoy within a day.

When you think of shopping for the Keto Diet, you can’t go past ALDI for EVERYTHING on a budget.

You’ll be able to easily (and cheaply) meet your macros thanks to all the bargains that you’ll find on low carb, Ketogenic Diet staples.

Here’s some inspiration to include on your ALDI Keto Shopping List next time.

ALDI Keto Shopping List – Protein

You’ll find good quality, wonderfully economical protein options at ALDI. A favourite of mine is smoked salmon, which is great as a side with scrambled egg for breakfast or rolled up with cream cheese as a snack.

Here are more protein options to look out for:

  • Eggs – great for breakfast, snacks, or even making Keto cookies!
  • Beef Mince – look out for higher percentages of fat for a cheaper and more Keto friendly option
  • Lamb – whole roasts and pieces for stewing or frying
  • Pork – pieces and, or course, bacon!
  • Sausages & Chorizo – read the nutrition panel carefully for hidden carbs
  • Chicken – whole and pieces, great for roasts, chicken bake, salad and stews
  • Fish & Seafood – smoked salmon, tuna, sardines and more.
  • Nuts & Seeds – to be enjoyed in moderation, ALDI is one of the cheapest places I’ve found nuts and seeds, also keep an eye out for peanut and nut butter too.

There are loads of delicious dairy options at ALDI, you may include a portion in your meal, or more in a dish like Cheesy Cauliflower Rice:

  • Cheese – grated, whole, brie, cream cheese, mascarpone
  • Cream – full, heavy whipping, sour
  • Butter – salted and unsalted, for various uses

Whatever is in season, you’re going to find a bargain at ALDI. At ours they have 6 or so items a week for incredibly cheap, while the rest of the fresh produce is pretty economical too. You can also find frozen vegetable options too.

My go to vegetables are:

  • Spinach & leafy greens
  • Cucumber
  • Zucchini
  • Mushrooms
  • Broccoli
  • Cauliflower (I LOVE cauliflower soup!)

While you’re limited to the fruit you can have on the Keto Diet, you’ll find a number of options available at ALDI.

  • Fresh & Frozen Berries – strawberries, raspberries, blueberries
  • Lemons & Limes

Chocolate

Yes, you can have chocolate on Keto. And, at ALDI they have a delicious dark chocolate option which is low carb friendly. I enjoy a row every couple of days. Sometimes even heated with milk and cream in a bulletproof hot chocolate.

Cheesy Chicken Bake Recipe

This Cheesy Chicken Bake Recipe is always a huge hit with the family. There are only a few ingredients and it couldn’t be easier to prepare.

Simply top chicken drumsticks/legs with your go to low carb tomato pasta sauce and heaps of cheese and you’ll be enjoying this easy cheesy chicken bake in no time.

You can adapt the cheesy chicken bake to your tastes, including garlic, onion or other vegetables in the dish. The bake is wonderful on it’s own but you could also enjoy a portion with some cauliflower mash, to soak up the flavours.

Low Carb Cheesy Chicken Bake

Cheesy Chicken Bake Recipe

  • Chicken Drumsticks or Legs
  • Low Carb Tomato/Pasta Sauce
  • Salt & Pepper, to taste
  • Grated Cheese
  1. Preheat the oven to 180C/350F and get out an oven proof dish.
  2. Place the chicken drumsticks or legs into the oven proof dish.
  3. Pour over pasta sauce to cover, shake over salt and pepper to taste.
  4. Toss to combine.
  5. Place into the preheated oven for 30 minutes.
  6. Remove from the oven, top with plenty of grated cheese.
  7. Place back into the oven for a final 30 minutes or until the cheesy chicken bake is cooked to your liking.
  8. Remove from the oven and enjoy as is or with Cauliflower Mash.

I love the simplicity of this dish and how you only need a couple of ingredients to create a crispy, cheese comfort dish of dreams!

Zucchini is in abundance and so cheap at the moment. So, I’m going through heaps of it and experimenting with all kinds of low carb, keto friendly dishes.

This Keto Zucchini Side Dish is easy, hearty and delicious. You can include as little or as much onion as you want, depending on how many carbs you want to include in your side dish.

I included oregano and salt as my seasoning combination of choice, but feel free to swap in your favourite seasoning instead.

There’s also the option to include garlic or any other vegetables. And, you could use goats cheese, feta or any other cheese to crumble over the top of your finished dish.

Keto Zucchini Side Dish Idea with feta and onions

Keto Zucchini Side Dish Recipe

  • 1 Zucchini, Chopped
  • 1/4, 1/2 or 1 Onion, Peeled and Chopped
  • Salt & Pepper, or seasoning to taste
  • Goats Cheese or Feta
  • Butter or Coconut Oil, for frying
  1. Heat butter or coconut oil in a frying pan over medium to high heat.
  2. When hot, add the chopped zucchini, onion, salt, pepper and seasoning to taste.
  3. Cook until golden on all sides, adding more butter when needed.
  4. Once cooked to your liking, remove to a plate and crumble over goats cheese or feta.
