Keto Corned Beef Hash Recipe - Easy Crispy Low Carb Irish Inspired Breakfast Idea

Keto Corned Beef Hash

This keto corned beef hash is the perfect way to enjoy leftover corned beef in a meal that makes a protein rich breakfast or breakfast for dinner.

You can prepare this any time of year, whether that’s around St. Patrick’s Day or simply to enjoy a tasty, hearty meal that will help you achieve your own personal health and weight loss goals.

Low Carb Diet Friendly Ingredients

Meal Prep Airtight Container with leftovers

Here are the low-carb diet friendly ingredients that are included in the keto corn beef hash:

Corned Beef –  I used leftover corned beef that I shared the easy recipe for recently, you can also swap and use beef brisket, roast beef or any other leftover already cooked meat you’d like.

Cabbage – I’ve used sliced cabbage as the potato substitute that you usually find in a breakfast hash. The cabbage that I used in this dish was already cooked, along with the corned beef, the day before. If you’re using fresh cabbage, then be sure to give it a head start by frying it for about 5-10 minutes, until softened and ready to go into your breakfast hash.

Frying leftover beef and cabbage together

Eggs – adding in a fried egg or two adds in additional protein and flavor to the corned beef recipe.

More Keto Diet Ingredient Ideas – there are plenty of extra ingredients and good substitutes that you can add to the corned beef mixture to satisfy your taste buds. Instead of simple salt and pepper add in your seasoning of choice, such as chilli flakes or garlic powder, or herbs like fresh chives.

You can also feel free to swap the cabbage for chopped broccoli, bell pepper, cauliflower or cauliflower rice instead. You can also make this breakfast with pre-cooked deli meat or even salami that’s lowest in g net carbs that you can find at your local grocery store.

Make It A Reuben – create a keto version of a classic Reuben by adding grated cheese, sauerkraut and Russian dressing to the finished dish.

Irish Corned Beef and Cabbage Recipe

January 14, 2024 by Easy Keto Living

Irish Corned Beef and Cabbage Recipe – How to make the best easy low carb and keto friendly dinner for St. Patrick’s Day – with the video tutorial.

Irish Corned Beef and Cabbage Recipe - How to make the best easy low carb and keto friendly dinner

    Irish Corned Beef and Cabbage

This Irish Corned Beef and Cabbage is the perfect low carb, keto friendly dinner to make on St. Patrick’s Day or any time of the year when you’re craving a hearty comfort food meal that the whole family will enjoy.

I’ve lived in Ireland for 6 years now, and this is by far my favorite Irish inspired meal that I cook over and over again, having adapted the recipe over the years as friendly locals have provided me with cooking tips and the perfect way to create meltingly tender meat.

As such, there aren’t exact measurements, but rather adding in the right ingredients and enough water to slowly cook the corned beef to perfection.

You can feel free to cook the easy recipe in your slow cooker, pressure cooker or instant pot, following the directions and length of time for cooking an appropriate sized piece of corned beef according to your machine’s instructions.

The Simple Ingredients For The Easy Recipe

The simple ingredients for the keto corned beef recipe

Here are the keto diet friendly ingredients that are included in the great recipe for traditional corned beef:

Corned Beef – I’ve used a 1kg/2.2lb piece of corned beef, if yours is bigger (or smaller), then adjust the cooking time accordingly. I usually aim for half an hour per 500g, plus an extra half an hour cooking time, so the 1kg piece of corned beef takes 1.5 hours to cook to tender perfection.

Onion –  the best way to add plenty of flavor to the meal is by adding in sliced onions. I like to keep mine fairly thick so that they can be enjoyed with the meat, rather than chopped so fine that they dissolve into the liquid during the cooking time.

    Sliced onion and chopped garlic

Garlic – another flavor must have, in my opinion, is plenty of chopped peeled garlic, which I also keep fairly chunky so that it maintains it’s shape during cooking. You can add as little or as much garlic as you’d like, depends on how garlicky you like your meals to be.

Seasoning –  you can add in your seasoning to taste, although I find that the corned beef that I find at my local grocery store is perfectly seasoned during the curing process and doesn’t need anything else added to it.

You can feel free to add in sea salt, rock salt, black pepper, mustard seeds, coriander seed, bay leaves or any other seasoning you like into the cooking liquid. You could also add in some beef broth, chicken broth or stock for added flavor, too.

Sliced and cooked keto Irish Corned Beef and Cabbage

Cabbage –  you can use green cabbage or purple cabbage wedges as a great way to add in plenty of flavor and nutrition to the meal without brining up the total carbs too much.

Carrots –  while being higher in g net carbs than other vegetables, I like to include chopped carrots when cooking my best corned beef for the flavor that it brings to the low carb version of the dish. My kids, who don’t follow a low carb diet, enjoy the carrots, while I enjoy the flavor they bring.

    Sides and Leftover Ideas

    Ideas for leftovers and sides

There are plenty of choices for sides to serve with the easy corned beef and ways to use leftovers of the comfort food meal the next day:

Sides – serve with your choice of sides such as cauliflower mash, cauliflower rice, horseradish sauce, spinach or broccoli.

Keto Reuben Casserole – to make this low carb recipe that makes a further entire meal with so much flavor, pop leftover corned beef into a casserole dish, along with Swiss cheese, sauerkraut or cabbage and Russian Dressing, which you can then either bake until cheesy or saute until perfectly cooked to your liking.

Corned Beef Hash Recipe – a great option is to whip up a hash for breakfast, or breakfast together, by frying leftover beef, along with chopped cabbage or radishes and once golden, cracking over a couple of eggs. (Here’s the full easy keto corned beef hash recipe.)

Meal Prep Boxes – a fun way to use leftovers is to create boxes to grab and go, chopped vegetables such as cucumber or bell peppers and a little sour cream.

Meal Prep Airtight Container with leftovers

Keto Salmon Recipe With Creamy Garlic Sauce - Easy Low Carb Dinner Ideas

        Keto Salmon Recipe

This keto salmon recipe with a creamy sauce is quick and easy to make, is high in healthy fats and has almost zero carbs.

You can serve the easy keto meal with a simple side salad, cauliflower rice, green beans, asparagus or your side of choice.

The Simple Ingredients For The Easy Recipe

The simple ingredients for the main dish

Here are the low carb diet approved ingredients that you’ll need to make the pan-seared salmon dish:

Salmon Fillets – choose from a variety of different types of salmon including wild-caught salmon, Atlantic salmon or any other fresh salmon that you can get a hold of. You can also use frozen salmon filets if you’d prefer.

Ideally your salmon will have it’s skin on so that you can enjoy the crispy skin that this recipe produces.

Fresh salmon fillets in the frying pan

Heavy Cream –  the easiest way to create a creamy, tender salmon dish is to pour over plenty of heavy cream. You can also make it cheesy by adding a little Parmesan Cheese to the creamy sauce.

Garlic Cloves – crush or grate peeled garlic cloves for the best way to achieve a dish with so much flavor. You could of course always swap for garlic powder, if you’d prefer.

Seasoning – season your salmon with sea salt, black pepper or any other seasoning or herb you’d like. You could also squeeze over a little lemon juice or soy sauce for flavor, too.

        3. Pour the heavy cream into a small bowl then peel and either crush or grate the garlic cloves over the cream, and stir together until well combined.
        4. Once the pan is hot, place the salmon skin side down into the hot pan and cook for 3-5 minutes, then turn the salmon over and cook for a further 3-5 minutes or until golden brown and cooked through.

Low Carb Sauce Recipes – The 5 best easy keto friendly sugar free delicious dipping sauces, creamy dressings and condiments to make.

Low Carb Sauce Recipes - The 5 best easy keto friendly sugar free delicious dipping sauces

          Low Carb Sauce Recipes

These low carb sauce recipes are the best way to add plenty of healthy fats to a low-carb diet meal.

Of course you can just drizzle a little hot sauce, tomato sauce, soy sauce or olive oil over a dish to add flavor, but as you’ll see, these keto sauce recipes need very little effort to prepare and taste incredible.

The best thing is that, as you’ll see, these delicious keto sauces are all so easy to make. They make a brilliant alternative to sauces and salad dressings that you’ll find at grocery stores, that may have an ingredients list that includes added sugar not keto friendly ingredients.

          1. Keto Cheese Sauce

Broccoli topped with creamy keto cheese sauce - low carb sauce recipes

A great way to add cheesy goodness to low-carb dishes is with this cheese sauce recipe that consists of only 3 ingredients – sour cream, almond milk and plenty of grated cheese.

You can include mozzarella cheese, cheddar cheese, Parmesan cheese or include a mix of cheeses for the ultimate cheese sauce to serve with low-carb meals.

You can of course add in sea salt, black pepper, garlic powder or any other flavor that’s low in g net carbs that you’d like. Or, swap the sour cream for cream cheese or mascarpone cheese for an extra rich, luxurious cheese sauce that’s ketogenic diet approved.

The sauce can be poured over a plate of vegetables, like the above pictured broccoli with cheese sauce, poured over zucchini noodles or served with your low-carb vegetables of choice.

          2. Keto Mushroom Sauce

Creamy mushroom sauce cooking in the frying pan

I adore this mushroom sauce as my favorite sauce to serve with a hearty steak to enjoy as a quick and easy keto meal.

You may prefer to serve yours with a comforting roast meal, such as a roast chicken, instead.

The best part is that the creamy mushroom sauce has only a couple of ingredients and couldn’t be simpler to prepare.

To make this easy recipe, simply brown plenty of chopped mushrooms and garlic until reduced and browned, then pour over a generous amount of cream and bubble until you have an indulgent, creamy garlic infused steak sauce that’s full of extra flavor and has a low carb count.

          3. Russian Dressing

          Keto Russian Dressing Recipe

If you’d prefer a choice of low carb sauces that don’t require any cooking, then this Russian Dressing is the perfect sauce option.

To make the delicious sauce, you stir together the simple ingredients of sour cream, tomato sauce, paprika and salt to create a tasty sauce that has a multitude of uses, here are some ideas for you:

          • Irish Corned Beef and Cabbage
          • Keto Fried Chicken

          Is Dark Chocolate Keto Friendly?

December 20, 2023 by Easy Keto Living

Is Dark Chocolate Keto Friendly? Can you eat chocolate on a low-carb diet? With the best keto-friendly brands, dark chocolate bar options and recipe ideas.

Is Dark Chocolate Keto Friendly Can you eat chocolate on a low-carb diet

          Is Dark Chocolate Keto Friendly?

Is Dark Chocolate Keto Friendly? That’s a question I’m often asked by blog readers and followers of a low-carb diet.

The short answer is that yes – you are likely to find chocolate bars or chocolate chips that are low enough in sugar and grams of net carbs to both satisfy your sweet tooth and be able to fit into your keto diet plan.

For me, the best option to get the most of the health benefits of unsweetened chocolate is to opt for one free of too many artificial sweeteners, which just don’t agree with me, and rather opt for one as low in natural sugars or a natural sweetener like stevia or monk fruit sweetener instead.

          How Many Carbs In Chocolate?

Chocolate On Keto - how many carbs in chocolate

Depending on the chocolate bars or chocolate chips you pick, the carb content and included ingredients can vary wildly. You’ll find that the higher percent cocoa solids equates to a lower sugar amount and fewer carbs.

Unfortunately regular milk chocolate and white chocolate tends to have a high sugar content as opposed to dark chocolate brands that naturally have less sugar due to the higher portion of cocoa butter and cocoa content, sometimes including unsweetened cocoa powder.

Sugar-free chocolate can often include sugar alcohol or artificial sweeteners which, as I mentioned, don’t agree with me, so I prefer to opt for a small serving size of an 85% or 90% dark chocolate that has a rich chocolate flavor without artificial ingredients.

As a general rule of thumb small amounts of low-carb chocolate is a great option to get your chocolate fix, while also helping you to stay on plan to achieve your own personal health and weight loss goals.

As mentioned, different types of chocolate will have a different carb count. With that being said, here is a look at the nutritional value from one of the best keto chocolate options that I could find at my local grocery store, 85% Lindt, per 100g:

          • 584 calories
          • 46g Fat
          • 27g Saturated Fat
          • 22g Carbohydrates
          • 15g Sugars
          • 12.5g Protein

I’d recommend not consuming an entire block of chocolate in one sitting, but aiming for around a 25g portion so that the dark chocolate fits within your daily macros. A 25 gram portion of 85% Lindt would have the following nutritional content:

          • 146 calories
          • 11.5g Fat
          • 6.75g Saturated Fat
          • 5.5g Carbohydrates
          • 3.75g Sugars
          • 3.125g Protein
Aldi and Green and Blacks Organic Options

In addition to Lindt 85%, 90% or even 99%, depending on where you are in the world, there are a number of other brands producing keto friendly chocolate.

These include Green and Blacks Organic Dark Chocolate, Lily’s Sweets Chocolate Chips and one of my personal favorites is budget friendly Aldi, which have an 85% dark chocolate option that’s perfect in all kinds of keto recipes.

Easy Keto Desserts Recipes With Chocolate

Here are some keto lifestyle friendly recipes to satisfy your chocolate cravings.

Is Dark Chocolate Keto Friendly - hot chocolate

Hot Chocolate – as a chocolate lover, I enjoy a warming, indulgent mug of hot chocolate most days, no matter the weather.

This sweet treat is super easy to make and is naturally low in g net carbs. Simply heat almond milk and a little heavy cream until just starting to gently bubble, then whisk through a couple of dark chocolate squares to melt and pour out into a mug. You can top your drink with a little whipped cream to naturally elevate the fat content to help you meet your daily keto macros.

Chocolate Mousse –  this keto chocolate recipe has only a few simple ingredients including an entire bar of low carb friendly chocolate. This easy recipe is full of healthy fats and also happens to be potentially dairy free, as long as the chocolate you pick is without milk solids, which 85% plus chocolate tends to be. (Just be sure to check the packaging carefully if serving to someone who has a dairy allergy.)

Keto Fudge – you can create indulgent fudge with a good chocolate that doesn’t have much sugar, peanut butter and your keto sweetener of choice. These are perfect to be able to enjoy the taste of those always popular peanut butter cups while being keto journey friendly.

          2 ingredient fat bombs

Fat Bombs – keto dieters often find that a great way to get into a state of ketosis, and stay there, is to include fat bombs in their diet.

There are plenty of easy keto recipes and delicious options when it comes to creating the bite sized treats without many added sugars, including adding in coconut oil, butter or in the case of my 2 ingredient fat bomb recipe – mascarpone cheese.

Keto Truffles – these decadent chocolate truffles are low in grams of carbs and contain only 3 high quality ingredients – low carb chocolate, butter and heavy cream.

The ingredients are simply melted together and then set in the fridge, before being cut into bite sized squares and stored in an airtight container to be able to quickly grab when sweet, chocolate cravings strike.

December 10, 2023 by Easy Keto Living

Best Low Carb Yogurt Options – keto friendly choices for yogurts to buy that are low-carb and low in sugars – with recipe ideas to enjoy.

Best Low Carb Yogurt Options - keto friendly choices for yogurts to buy that are low-carb

          Best Low Carb Yogurt Options

These are the best low carb yogurt options that are naturally low in carbs and also tend to be high in healthy fats.

They are also usually significantly lower in sugars than more regular yogurt options on the market, with the below options tending to include little to no added sugar, while still including all of the incredible health benefits that comes from including yogurt that contain live cultures in your diet.

It’s up to you whether you’d like to include artificial sweeteners in your diet, or stick to the yogurt options in this list that are unsweetened and then you can have control over the sweetness level yourself.

Just be sure to read the nutrition label and ingredient list carefully and be sure that the carb count and included ingredients meet your own personal dietary requirements.

          Plain Yogurt

          Plain or natural variety

The first low-carb diet friendly yogurt option that’s low in grams of carbs, naturally high in grams of protein is plain or natural yogurt.

As the name suggested, plain, natural or traditional yogurt is plain in flavor, tangy in taste and usually without any additional ingredients aside from whole milk and bacteria which converts the lactose in the milk into lactic acid through the natural fermentation process.

The best yogurt is usually low in g net carbs, moderate in protein and high in healthy fat content.

          Plain Greek Yogurt

          Plain Greek Yogurt

Greek Yogurt is a type of yogurt that has the whey and other liquids strained away from the yogurt, making it a much thicker consistency and a more sour, tangy flavor that plain yogurt and other low-carb yogurt options, while still being low in grams of sugar.

          Dairy-Free Option Ideas

          Dairy-Free Option Ideas

There are a number of dairy-free options when it comes to store-bought yogurt. My local store has some good yogurt options that are made with coconut milk, almond milk and even cashew milk that have had active cultures and good bacteria added to create dairy-free yogurts with fewer carbs.

Check your local grocery store for different types of yogurt that have been made without dairy if you’re wanting to either include dairy free yogurt in your diet due to allergies or to balance the dairy products in your diet.

I personally really like the flavor of coconut yogurt, finding it naturally much sweeter than the dairy options, while still being low in total carbs.

          Best Keto Yogurt Recipe Ideas

          Easy chia pudding

Here are some easy ideas for ways to include keto-friendly yogurts in your diet that are low in total carbohydrates:

Chocolate Yogurt – a good option for a speedy chocolate treat as part of a healthy keto diet is to add a little cocoa powder and stevia to a portion of yogurt, give it a stir and enjoy.

Chocolate Nut Clusters Recipe - How to make an easy 3 ingredient low carb, keto sugar free dessert

          Chocolate Nut Clusters

These dark chocolate nut clusters are the perfect low carb, keto friendly treat to enjoy any time of the year, and especially during the holiday season when there’s so much temptation everywhere you look.

The holiday treat also makes an ideal edible gift to give to a friend or family member who is following a keto diet lifestyle.

The best part is that the keto clusters recipe is easily adaptable depending on the chocolate and nuts you’d like to use, are your favorites and easy to come by at your local grocery store.

The Simple Ingredients For The Easy Recipe

The simple ingredients youll need for the easy recipe

Keto Chocolate – you can use your favorite keto friendly good quality chocolate which is usually 85% or 90% and can be a broken up chocolate bars or dark chocolate chips, if you’d prefer. (Here are keto chocolate options on Amazon.)

If you’re giving the clusters as food gifts or not counting your carbs, then you can feel free to use any kind of chocolate you like including milk chocolate chips, semi-sweet chocolate, white chocolate chips or candy melts.

Coconut Oil – to help the chocolate safely melt and then harden in the fridge, coconut oil is the perfect ingredient to add to the easy treat.

Mixed Nuts – include any kind of nut you’d like, choose from 1, 2, 3 or more raw nuts varieties from the following options – almonds, walnuts, cashew nuts, Brazil nuts, macadamia nuts or peanuts.

          Bowl of mixed nuts

You can leave your favorite nuts whole or break them into small pieces, if you’d prefer.

Sweetness – depending on how sweet a sweet tooth you have and how dark you like your unsweetened chocolate, you can add in stevia, monk fruit sweetener or whichever sweetener you usually enjoy in low carb dessert recipes.

Extra Ingredients – there are plenty of ways to flavor the tasty treat, choose from adding in peanut butter, toasted coconut, coconut chips or coconut flakes, flaky sea salt, vanilla extract, peppermint extract or seeds such as pumpkin seeds, sunflower seeds, flax seeds, hemp seeds or chia seeds.

How To Make Homemade Nut Clusters

Melting chocolate and coconut oil together

These great recipe couldn’t be simpler to make. Start by popping the 250g/8.8oz of mixed nuts into a bowl, you may want to break up the larger nuts into smaller pieces if you’d like.

Then, see to melting the chocolate and coconut oil together. You can do this in the microwave in 30 second increments, mixing in between until melted.

Or, using the double boiler method whereby you bring a saucepan of water up to the boil ,then carefully place a heatproof bowl with the chocolate and coconut oil in it and stir regularly until melted.

          Mixing nuts into melted chocolate

Add the mixed nuts to the melted chocolate and mix until well combined. Allow to cool slightly. Meanwhile, line a sheet pan or a couple of large baking sheets with well greased baking paper.

Drop a tablespoon per nut cluster onto the prepared sheet, then move to the fridge for a one to two hours to set. If you find that they are too runny and you end up with one big tray of clusters, then you can simply break them into chocolate bark once set.

Once set, remove from the fridge and enjoy as a little treat with a mug of tea, coffee or hot chocolate. Store in a covered container, air tight containers or move into decorative boxes to take to a holiday party.
