This keto ricotta dessert is a light, creamy panna cotta sweet treat that’s full of low carb, sugar free friendly ingredients.

You can prep the no bake dessert ahead of time and have it ready and waiting in the fridge for you for when sweet cravings strike.

To make the panna cotta you’ll need gelatin or agar agar powder to help the pudding set, you can use whichever you usually use in desserts or can get a hold of.

You’ll find that ricotta, when mixed into desserts, creates a creamy texture while adding subtle flavor, as well as protein, to this decadent treat.

How to make low carb keto no bake panna cotta dessert

Keto Ricotta Dessert Recipe

  • 2 teaspoons Gelatin or Agar Agar Powder
  • 1/3 Cup Water 
  • 1/2 Cup Almond Milk
  • 1/4 Cup Stevia
  • 1 teaspoon Vanilla Extract
  • 250g/8.8oz Ricotta Cheese
  1. Mix the gelatin or agar agar and the water together in a small bowl until the gelatin has dissolved. 
  2. Set the gelatin aside for 5-10 minutes to bloom. 
  3. In a small saucepan, combine the almond milk, stevia, vanilla and ricotta cheese. 
  4. Place the saucepan over medium heat and cook until the mixture has warmed through but is not yet bubbling. 
  5. Remove from the heat and whisk through the prepared gelatin until fully incorporated. 
  6. Pour the dessert into a serving bowl and move to the fridge for a few hours to set and thicken, then enjoy as is or topped with berries.

7 Low Carb Breakfast Ideas

Here is a week of easy keto breakfasts to start your day with.

The above big low carb breakfast fry up which includes:

  • Fried eggs
  • Mushrooms
  • Leftover sausages

It was all cooked/heated up in plenty of coconut oil in a frying pan.

You could cook your eggs any how you like, fry them up with your choice of vegetables from the following low carb foods:

  • Broccoli
  • Mushrooms
  • Spinach
  • Cauliflower
  • Asparagus
  • Radishes (which fry up like potatoes!)
  • Onion/Garlic (sparingly)

You can use low carb sausages as the meat portion or fry up bacon, leftover roast chicken/meat or any other breakfast protein you like.

2. Cheesy Fried Eggs

If you like crispy cheese and crisp fried eggs, then this is the perfect breakfast for you.

Start by frying a circle of cheese in a frying pan, then crack a couple of eggs over. Cook until the eggs are done to your liking. Serve with your keto vegetables of choice.

4. Granola

If you’re after snacks to enjoy between meals, then here are simple snack ideas for every day of the week:

Here are 7 easy keto desserts that are quick to make and a delight to enjoy.

1. Hot Chocolate

My go to keto sweet treat is a comforting hot chocolate, like the above pictured Cinnamon Hot Chocolate. Simply heat 1 Cup of almond milk in a saucepan until simmering. Then, quickly whisk in a row of low carb chocolate (like this) and a dash of cream.

Pour into a mug and enjoy! You could also top the hot chocolate with more cream, low carb ice cream or some shaved chocolate.

2. Fruity Parfait

Create your own fruity parfait by layering low carb yogurt with your choice of berries for an almost instant keto dessert.

3. Chia Pudding

Pop 2 tablespoons of chia seeds into a bowl, glass or mug.

Top with half a cup of liquid from the following options – almond milk, kefir, low carb yogurt, cream.

I went for a quarter of a cup of almond milk and a quarter of a cup of kefir.

Add a half a teaspoon of stevia (or more) for sweetness and stir well to combine. Move the chia pudding to the fridge to thicken for a few hours or overnight.

Enjoy topped with berries, grated low carb chocolate, cream or shredded coconut. (Read more about chia seeds on keto.)

4. Waffles

You can of course enjoy waffles for breakfast or as an indulgent sweet treat with your choice of sweet keto toppings.

My recipe has only 4 ingredients:

  • 4 eggs
  • 1/4 Cup Cream, Almond Milk or Coconut Milk
  • Pinch of Salt
  • 1/4 Cup Coconut Flour

You simply whisk the ingredients together and cook them in a waffle maker. (Here’s my full keto waffles recipe for you.)

5. Chocolate Mousse

There are a couple of different options for creating a keto friendly hot chocolate, my favorite though is my 4 ingredient chocolate mousse with cream cheese, that’s lovely, light and creamy and tastes like a rich chocolate cheesecake dessert.

This Keto Broccoli Quiche is quick and easy to prepare and makes a tasty meal for breakfast, lunch or dinner. (Here are more Keto Broccoli Recipes.)

Ensure the dish that you cook your quiche in is very well greased so that it’s easy to remove and doesn’t get stuck.

How to make an easy low carb crustless quiche

You can keep the quiche simple with just broccoli and leek (or onion), or add in other vegetables such as mushrooms, cauliflower, garlic or add in chopped bacon, ham, tuna or chicken for a protein rich quiche.

  • 1 Leek or Onion
  • 1 Head of Broccoli
  • Salt & Pepper, to taste (plus any other seasoning you like)
  • 4-6 eggs
  • 1/4 to 1/2 Cup of Cream
  • 1/2 Cup Grated Cheese 
  • Butter or Coconut Oil, for frying
  1. Preheat the oven to 350F/180C and well grease an oven safe pie or quiche dish. 
  2. Heat butter or coconut oil in a frying pan. 
  3. Meanwhile, chop the leek or onion and broccoli into bite sized pieces. 
  4. When the pan is hot, add the leek or onion and cook until starting to soften.
  5. Add the broccoli, salt, pepper and any other seasoning to taste. 
  6. Cook, adding more butter when needed, until starting to soften. 
  7. Then, move the vegetables to the prepared quiche dish. 
  8. Whisk the eggs, cream and half the cheese, together in a bowl. 
  9. Pour the whisked eggs over the vegetables. 
  10. Top with the other half of the cheese. 
  11. Place into the preheated for 20 to 30 minutes, or until golden to your liking. 
  12. Slice into 8 pieces and serve.

This keto cookie dough dip makes an indulgent no bake dessert that’s easy and ready in an instant.

The dessert makes a lovely sweet treat that’s loaded with chocolate chips and will help you both stay on plan and meet your macros thanks to the inclusion of plenty of healthy fats.

I’ve gone for 4 core ingredients in my recipe, and there are tons of variations and additions to make your own personalised cookie dough dip dessert. Here are some keto friendly ideas:

  • Add salt
  • Add vanilla
  • Add peppermint or another flavoring
  • Add cocoa powder
  • Add coffee
  • Swap the butter for 1/4 cup peanut butter

To make the actual dessert, all you need to do ahead of time is take the butter and cream cheese out of the fridge to begin to soften.

Then, it’s just a matter of whisking the butter and cream cheese until creamy. For the sweetness, you can add stevia or your sweetener of choice.

If you can get hold of a keto friendly powdered sugar (like this) then you’ll find that it blends in quickly, smoothly and evenly. Whisk in the sweetener then fold through half of the chocolate chips.

Move the dip to a bowl and top with the other half of the chocolate chips. You can then enjoy the dip immediately or pop it into the fridge for a few hours to allow the flavors to develop.

How to make keto cookie dough

  • 1.7oz/50g Butter, softened
  • 3.5oz/100g Cream Cheese
  • 2-4 Tablespoons Stevia or Keto Powdered Sugar
  • 1/4 to 1/2 Cup Keto Chocolate Chips
  1. Place the butter and cream cheese into a large bowl and whisk, using electric beaters until creamy.
  2. Add in the stevia or keto powdered sugar and whisk in until smooth.
  3. Fold half of the chocolate chips through the dip until fully incorporated.
  4. Move the dip to a serving bowl and top with the other half of the chocolate chips.
  5. Enjoy immediately or store in the fridge for a few hours to allow the flavors to develop, then consume within a few days.

This Keto Raspberry Mousse makes a light, creamy low carb and ketogenic diet friendly dessert, is quick to put together and has only 4 simple ingredients.

The mousse makes a romantic dessert to make for special occasions, like valentine’s day or mother’s day, or simply any time of the year when you’re craving a simple sweet treat that’s low in net carbs and keto diet approved.

How To Make The Low Carb Recipe

To make the low carb raspberry mousse recipe couldn’t be easier – start by whipping heavy cream, with an electric mixer or in a stand mixer, until you just start to get stiff peaks.

You can use heavy cream, heavy whipping cream or double cream. Any cream that you can whip into whipped cream is what you want to use in this instance.

Then, whisk in stevia, monk fruit sweetener or your sweetener or regular sugar substitute of choice. It’s up to you how sweet you like your sweet treats to be, go for 2 to 4 tablespoons.

You can further enhance the flavor of the fruity dessert by adding in a pinch of salt or half a teaspoon of vanilla extract, or boost the raspberry flavor by adding in a little bit of raspberry extract. 

Once the sweetener has been incorporated, add in the cream cheese and whisk until you have a light, creamy keto cheesecake fluff mousse.

Mixing raspberries through the mousse

For the raspberry mixture, you can whisk all the fresh raspberries in, fold them through or just top the dessert with a handful of fresh berries.

Or, you can do as I do, and go for a variety of textures by including all three elements in the dessert.

You can enjoy the guilt-free dessert straight away, but I find that the easy recipe benefits from a few hours in the fridge, to thicken slightly and to allow the flavors to develop together.

The low carb diet no bake recipe can be served in one pretty serving bowl, or popped into a piping bag and swirled into individual small cups or shot glasses for an indulgent keto raspberry cheesecake mousse experience.

How to make low carb mousse with raspberries

Keto Raspberry Mousse Recipe

  • 1 Cup Cream (Heavy/Whipping/Double)
  • 2-4 Tablespoons Stevia or Low Carb Sweetener
  • 7oz/200g Cream Cheese
  • 1/4 to 1/2 Cup Raspberries
  1. Pour the cream into a large bowl and, using a hand mixer on high speed, whisk until soft peaks form.
  2. Add the stevia or your sweeteners of choice into the mixing bowl and whisk until fully incorporated.
  3. Add the cream cheese and whisk until mixed through and creamy.
  4. Chop most of the raspberries, then whisk some of the berries into the mousse, fold more of them into the mousse and finally, top with a small handful of berries.
  5. Pop the delicious dessert into the fridge for a few hours to thicken, then enjoy.

  1. Pour the cream into a large bowl and, using a hand mixer on high speed, whisk until soft peaks form.
  2. Add the stevia or your sweeteners of choice and whisk until fully incorporated.
  3. Add the cream cheese and whisk until mixed through and creamy.
  4. Chop most of the raspberries, then whisk some of the berries into the mousse, fold more of them into the mousse and finally, top with a small handful of berries.
  5. Pop the delicious dessert into the fridge for a few hours to thicken, then enjoy.

With Summer around the corner, we plan on taking plenty of road trips and taking along these keto road trip snacks to help keep on plan and nutritiously satisfied.

You may like to take your keto travel snacks on the go with you or you may be lucky enough to find a couple of the options at a local grocery store, truck stops or gas stations on the road that are low in net carbs.

All of these easy keto snacks should mean you can avoid junk food and fast-food restaurants wherever possible and go a long way to helping you achieve your own health and weight loss goals.

1. Cheese

This keto ricotta cheesecake has only 4 ingredients and makes a quick low carb friendly baked cheesecake that couldn’t be simpler to prepare.

Using ricotta in a cheesecake creates a protein rich dessert that’s lightly flavored and not as rich as traditional cream cheese cheesecakes.

How to make 4 ingredient keto ricotta dessert

You can add vanilla or strawberry extract for a fuller flavor and enjoy the cheesecake as is, or topped with homemade jam. (Here’s a keto jam recipe for you.)

Keto Ricotta Cheesecake Recipe

  • 500g/1.1lb Ricotta Cheese
  • 4 Eggs
  • 2-4 Tablespoons Stevia (Or you sweetener of choice)
  • 200g Strawberries, chopped
  1. Preheat the oven to 180C/350F and line a round spingform baking tin with well greased baking paper.
  2. Place the ricotta into a large bowl and, using electric beaters, whisk until creamy.
  3. Add the eggs, one a time, whisking until each egg is fully incorporated before adding the next one.
  4. Add the stevia, one tablespoon at a time until fully mixed in and the batter is smooth and creamy.
  5. You can either fold some or all of the strawberries into the batter and then pour the batter into your baking tin and scatter all the rest of the chopped strawberries over the top.
  6. Place into the preheated oven for 50 to 55 minutes or until golden and done.
  7. Remove from the oven, allow to cool completely then carefully remove the cake from the tin and move it onto a plate.
  8. Place the cake into the fridge for a few hours to fully chill and set, then enjoy.

This Keto Chocolate Cream Cheese Frosting makes a sweet, decadent topping for low carb cakes, cupcakes, brownies or to sandwich keto cookies together.

Keto Powdered Sugar – the trick to super smooth icing is using powdered or icing sugar. Thankfully a keto friendly version is easy to find on Amazon. (Find it here.)

Take the cream cheese and butter out of the fridge a few hours before needed, so that it’s perfectly soft and ready for whipping.

It’s up to you how sweet or dark to make your frosting, start with a smaller amount of keto sugar and cocoa powder and then add more of one or the other until you have the perfect chocolate frosting for you.

Keto Chocolate Frosting Recipe

  • 100g/3.5oz Cream Cheese, softened
  • 50g Unsalted Butter, softened
  • 1/2 to 1 teaspoon Vanilla Extract
  • 2-4 Tablespoons Keto Powdered Sugar
  • 1-2 Tablespoons Cocoa Powder
  1. Place the softened cream cheese and butter in a large bowl, then, using electric beaters, whisk until smooth and creamy.
  2. Add the vanilla and whisk in.
  3. Add the keto sugar and whisk in until fully combined.
  4. Add the cocoa powder and whisk one last time until smooth and creamy. You can have a quick taste of the frosting and add more cocoa powder or keto sugar, depending on the chocolate/sweetness ratio you’re after.
  5. Use straight away or place in the fridge for a few hours to harden, if need be. Store in the fridge, ideally in a sealed container, and enjoy within 4 to 5 days.

This sugar free jam recipe has only 3 ingredients and you can make it with any low carb friendly berries you like.

Chia seeds work to thicken and set the jam, while adding plenty of healthy fiber, without the need for pectin.

I went for a bag of frozen mixed berries for a jam that’s bursting with beautiful berry flavor.

You can enjoy this jam in any of the following keto friendly ways:

  • Mixed through low carb yogurt
  • With keto waffles
  • With keto pancakes
  • With keto bread
  • To sandwich together keto breakfast cookies

Sugar Free Jam Recipe

  • 500g/1.1lb Berries
  • 1/4 Cup Chia Seeds
  • 1/4 Cup Stevia
  1. Place the frozen berries into a small saucepan on the stove top over medium to high heat.
  2. Heat, stirring continuously, until the berries have become soft and can be easily mashed with the back of a spoon or fork.
  3. Take the berries off of the stove top and mash until smooth. I like to use a potato masher to mash the berries, if you’d like a smoother consistency then you can use a stick blender.
  4. Add the chia seeds and stevia, and stir until well combined. Taste to be sure the jam is sweet enough, stirring through more stevia, if you’d like the jam to be sweeter.
  5. Allow to cool and then pour the jam into a jar and move to the fridge to cool completely and thicken.
  6. Use the jam within a week and enjoy.

If you like cheese you’re not the only one. In 2020 there was over US$ 75b worth of cheese sold around the world and the trend is only predicted to grow.

With cheese being so popular, is cheese keto friendly? What cheese is the best cheese for a keto diet?

In this keto cheese list post, we will explore some of the best cheeses to have on keto and how to pick the cheese to suit you.

Parmesan Cheese

You can enjoy parmesan in keto friendly meals like Keto Fried Chicken, roasted brussel sprouts with parmesan or the above pictured zucchini with alfredo sauce.

Originally called Parmesano meaning ‘from Parma’ , true Parmesan cheese is called Parmigiano-Reggiano that on average is aged for two years.

This aging leaves behind a beautifully complex hard cheese that is high in fat, protein and ultra low in carbs.

According to the USDA the nutritional of Parmigiano-Reggiano per 100g (3.5oz) is:

  • 393 kcal/1644kj (kilojoules)
  • Protein: 32g
  • Fat: 28g
  • Carbs: 0g (That’s not a typo – zero carbs)

In addition to its zero carbs one study on Parmigiano-Reggiano found its also very high in calcium, which helps to strengthen the bones and teeth and high in vitamins A and D which support the immune system.

Plus Parmesan contains good amounts of magnesium which supports metabolic function, biotin which is needed for energy and vitamin B12 which can help with brain cognition, red blood cell production and can reduce anaemia.

Cheddar Cheese

Originating in the village of Cheddar in an area of England called Somerset, cheddar has been around for at least 900 years, if not longer.

While there are many different styles of cheddar cheese the main strengths of the cheese varies depending on the maturing process:

  • Mild 3 months
  • Medium 3-6 months
  • Mature 9 months
  • Extra Mature 15 months
  • Vintage 18+ months

When choosing Cheddar cheese be sure to pick the full-fat varieties. The carb content is extremely low at 0 – 1g per 100g (3.5oz) depending on what type, brand and strength. The more mature varieties tend to be lower in carbs.

Below is the nutritional info per 100g (3.5oz) on cheddar cheese (macros):

  • 393 kcal/1644kj (kilojoules)
  • Protein: 25g
  • Fat: 32g
  • Carbs: 0g

How Is Cheddar Cheese Made?

Cheddar cheese can be made from raw, pasteurised or even skimmed milk so always read the label to check.

Basically the milk is given a starter caluture which will vary between manufacturers, then get separeted into curds and whey.

The curds are then stacked to decrease moisture, cut away or removed and then pressed into moulds and matured to the the relevant strength of the cheese – a process called “cheddaring”.

Like most cheeses cheddar is a keto friendly cheese that is high in fat, high in protein and cheddar cheese also has reasonable amounts of vitamin A too.

Cheddar cheese has creamy sweet and nutty flavour and is a great snack to have with your favourite nut butter.

Here are some keto friendly ways to enjoy cheddar:

  • Baked Cauliflower Mac and Cheese

  • Cheesy Fried Eggs

Halloumi

Carbs in Halloumi Cheese

Halloumi is believed to have originated in Cyprus, quickly spread to the whole Middle East and is made from a mixture of goat’s and sheep milk.

With a high melting point and a salty flavour, halloumi is perfect for frying or grilling, enjoyed in a salad or by itself.

It’s net carb content is 2.20g per 100g/ (3.5 Oz) providing high calcium levels as well as high vitamins A, many B vitamins and magnesium, making halloumi an easy quick hot snack ideal for the keto diet.

The macros for halloumi according to the USDA are:

  • 321 kcal/1343kj (kilojoules)
  • Protein: 21g
  • Fat: 25g
  • Carbs: 3.5g

Brie

Brie has an amazingly low 0 – 0.5g per 100g (3.5 oz) of carbs and is lovely to enjoy as a snack or in a recipe like the above pictured garlic baked brie.

Originally from the Seine-et-Marne area south of Paris it has roots going back to the 8th century during the reign of French Emperor Charlemagne.

Made of cow’s milk Brie’s soft texture with a tangy fruity and nutty flavour.

Plain Brie vs Double Brie vs Triple Brie

There are many varieties of brie including; plain, double and triple brie.

The difference between plain brie, double brie and triple brie is to do with cream content within the milk used in the making of the variety of brie cheese.

With double brie using creamier milk than plain and triple using creamier milk still or even adding extra cream, to give the brie a creamier taste.

Brie de Meaux, the original brie cheese, is the highest regarded by some as it is made with unpasteurized raw milk giving that characteristic creamy rich buttery flavour.

The USDA puts Brie’s macros per 100g (3.5oz) at:

  • 357 kcal/1494kj (kilojoules)
  • Protein: 18g
  • Fat: 32g
  • Carbs: 0g (Can be 0.5g depending on the brand)

Camembert Cheese

First made in Normandy Northern France, camembert is a soft creamy cheese with a hard rind similar in texture and appearance to brie.

You can enjoy brie as a snack or as part of a keto friendly dessert platter, like the one pictured above. (Here’s how to make it.)

How Is Camembert Made?

The official Normandy Camembert called Camembert de Normandie (a protected term) was and still is made with unpasteurised milk (by law). Though many other varieties are made with either pasteurised or unpasteurised milk.

Warmed cow milk is introduced to (or inoculated with) a yeast bacteria during the coagulation of the cheese

This is done before the milk curdles and is then cut into moulds, which are drained of the whey to create even appearance and a more creamy texture.

What Does Camembert Taste Like?

Depending on the variety, Camembert has been described as being mushroomy, nutty, milky, grassy, and/or fruity.

How Long Is The Aging Process?

The ageing process takes around four weeks to give it its soft rich creamy texture and taste.

Is Camembert Keto Friendly?

The nutritional information of camembert is:

  • 321 kcal/1494kj (kilojoules)
  • Protein: 18g
  • Fat: 28g
  • Carbs: 0g

As with other cheese varieties – the significantly low carb content, makes it an ideal food to include in a keto diet.

Is Feta Keto Friendly?

You’ll be pleased to learn that feta is keto friendly and a great alternative to cow milk based cheeses.

Feta meaning slice, is made from either solely sheep’s milk or a combination of sheep’s and goat’s milk.

Having been referenced in Homer’s Odyssey which, dates to the 8th century B.C. or B.C.E. So its been around for a while.

Feta is a cheese that’s aged for over two months in brine (salt water) with many health benefits.

Genuine Greek Feta contains only 1g of carbs per 100g (3.5oz). and is great to have with salads, lamb, chicken, used in baking, or with eggs, making it a very versatile cheese.

  • Good levels of vitamins A, B12 (which is good for you hair, nails and skin, can give an energy boost).
  • A study has shown feta cheese can possess minerals such as iron, zinc, manganese, copper and cadmium,
  • Vitamin K – helps promote blood clotting when cut
  • Plus, feta has decent levels of magnesium, iron and folic acid too.
