Keto Vanilla Ice Cream Recipe

Keto Vanilla Ice Cream Recipe – How To Make Easy Homemade 4 Ingredient Low Carb & Sugar Free No Churn Iced Treat Dessert Without An Ice Cream Maker – with the video tutorial.

Keto Vanilla Ice Cream Recipe - How To Make Easy Homemade 4 Ingredient Low Carb & Sugar Free No Churn

Keto Vanilla Ice Cream

This Keto Vanilla Ice Cream is really easy to prepare, it’s no churn so you don’t even need an ice cream maker to be enjoying indulgent homemade low carb ice cream.

Here are the four ingredients you’ll need for this no bake low carb dessert:

Eggs – you’ll need to separate eggs for this recipe and you’ll be consuming them raw, so make sure they are super fresh and don’t serve to anyone who’s pregnant or has a weakened immune system.

On the plus side, this recipe uses both the whites and the yolks, so nothing goes to waste. (You may find that other ice cream recipes only use the yolks and leave you with an over supply of egg whites.)

Mixing ingredients together

Stevia – you can use stevia as I have, or your low carb friendly sweetener of choice.

Cream – use double, heavy, whipping or any cream that you can whisk into thickened whipped cream.

Vanilla – to enhance the pure vanilla flavor of the ice cream.

You can enjoy the ice cream on it’s own to appreciate the simplicity and creaminess of the dessert or you could mix through or top your ice cream with your choice from the following low carb ingredients:

  • Berries – raspberries, strawberries, blueberries
  • Keto chocolate – chips, grated or chopped
  • Crumble over keto brownies or keto cookies
  • Drizzle over low carb chocolate sauce
How to make low carb sugar free no churn ice cream without an ice cream maker

Keto Vanilla Ice Cream Recipe

  • 4 Eggs
  • 1/3 to 1/2 Cup Stevia
  • 1 Cup Cream (Double/Heavy/Whipping)
  • 1 teaspoon Vanilla Essence
  1. Start by separating the eggs into two bowls, with the whites going into a large bowl for whisking and the yolks into a second, small bowl to add into the ice cream mixture later.
  2. Using electric beaters, whisk the egg whites until thickened.
  3. Add in the stevia and whisk until you have glossy, thickened, meringue like egg whites.
  4. Set the whipped egg whites aside, wash and dry the beaters well, then pour the cream into another large bowl and whisk until you have thickened whipped cream, then set aside.
  5. Get the whipped egg white mixture back and then pour in the reserved egg yolks and vanilla.
  6. Fold through gently until fully combined.
  7. Add in the whipped cream and fold through until light, creamy and fully incorporated.
  8. Move the ice cream mixture into a freeze proof container that’s lined and greased, then place in the freezer to harden for at least a few hours.
  9. Once the ice cream has hardened and set to your liking, remove from the freezer and enjoy.

Zero Carb Snacks

July 27, 2021 by Easy Keto Living

Zero Carb Snacks – Ideas for the best low carb keto friendly no carb snack foods list – with a video showing you carb free no prep and foods to buy.

Zero Carb Snacks - Ideas for low carb keto friendly no carb snack foods list

Zero Carb Snacks

These zero carb snacks are the perfect keto foods to keep you nourished between meals, without blowing out your macros for the day.

I find that when I’m starting out with keto (or when I’m getting back into it after a break), I am hungry ALL THE TIME, until I become adapted to the low carb way of eating.

In those times, these foods are my lifeline. After a while though, I find that the high fat keto meals keep me full without the need for snacking, but these options still come in handy from time to time when I just need that little something extra to keep me going through the day and to help me achieve my low carb diet weight loss goals.

Cheese

Cheese Snacks

Cheese is one of my favorite zero carb snacks that’s high in healthy fats – you can choose from cheddar cheese, mozzarella cheese, feta, brie, parmesan cheese, cream cheese, cottage cheese or really any cheese you like. Simply enjoy by the square or in a snack platter with a couple of other options from this list.

Meat & Chicken – Zero Carb Snacks

Meat chicken and salami - zero carb snacks

There are so many meat snacks to choose from that make a delicious snack and have virtually no carbs.

You can go for leftovers from a previous meal and have a piece of chicken or slice of beef, lamb or ham. Or, opt for deli meat or lunch meat that just need the package to be opened – no prep at all to enjoy a protein rich zero carb snack.

Another perfect snack option is salami sticks, meat sticks or salami, which can have little to no grams of carbohydrates but often have sugars or carbs added, so read the nutrition label carefully.

Zero Carb Snacks - Keto foods to buy - Salami

Pork Rinds, Biltong & Beef Jerky

Jerky Biltong and Pork Rinds

Dried, salty, meaty protein rich snack options that you can find at stores that are keto diet friendly and can be enjoyed by the handful. Double check the nutrition panel and ingredients for hidden carbs and added sugar.

Fish & Seafood

Canned tuna and salmon

You can enjoy a can of tuna, salmon or sardines by the fork full or mix a couple of spoons of sour cream or mayo through for a speedy snack that’s naturally low in grams of carbs and high in grams of protein.

Hard Boiled Egg – Zero Carb Snacks

Hard Boiled Eggs

I like to keep a bowl full of hard boiled eggs to make a super quick grab and go carb free snack that’s a good source of protein.

I’ve also found already hard boiled and peeled hard boiled eggs at supermarkets lately which make an easy, instant store bought snack food that’s low in grams of net carbs.

Cucumber, Celery & Greens

Cucumber and greens

Cucumber, celery and greens such as spinach or lettuce can be enjoyed in a salad, lettuce wrap or mixed with other ketogenic diet friendly foods such as tuna, hard boiled egg or olive oil as a great way to enjoy a tasty snack.

Olives & Pickles

Zero Carb Snacks - Olives

Olives and Dill Pickles are carb free and can be turned into an antipasti platter or enjoyed by the spoon or hand full as a great snack.

Low Carb Nuts and Seeds

Nut and seed options

Quick grab and go low carb snack ideas include all kinds of nuts and seeds to satisfy your crunchy cravings. Choose from a healthy snack of cashew nuts, almonds, macadamia nuts, pumpkin seeds, sunflower seeds as well as nut butters such as peanut butter.

Just be sure to exercise portion control because total carbs can quickly add up, despite nuts and seeds being keto-friendly foods.

Jello or Jelly – Zero Carb Snacks

Jello or jelly - zero carb snacks

Sugar free jelly or jello make easy sweet snacks to satisfy your sweet tooth with a variety of flavors. Just read ingredients carefully and be sure you’re happy to include artificial sweeteners in your low-carb lifestyle, as they can cause an upset stomach in some people.

Tea & Coffee

Tea or coffee snack

A simple cup of tea or coffee can satisfy between meal hunger and keep you going until the next main meal with zero net carbs.

Keto Cookie Dough Dip Recipe

Keto Cookie Dough Dip Recipe – How to make easy low carb sugar free chocolate chip cookie dough dip – no bake dessert idea with the video.

Keto Cookie Dough Dip Recipe - How to make easy low carb sugar free chocolate chip cookie dough dip

Keto Cookie Dough Dip Recipe

This keto cookie dough dip makes an indulgent no bake dessert that’s easy and ready in an instant.

The dessert makes a lovely sweet treat that’s loaded with chocolate chips and will help you both stay on plan and meet your macros thanks to the inclusion of plenty of healthy fats.

I’ve gone for 4 core ingredients in my recipe, and there are tons of variations and additions to make your own personalised cookie dough dip dessert. Here are some keto friendly ideas:

  • Add salt
  • Add vanilla
  • Add peppermint or another flavoring
  • Add cocoa powder
  • Add coffee
  • Swap the butter for 1/4 cup peanut butter
Ingredients in bowls

To make the actual dessert, all you need to do ahead of time is take the butter and cream cheese out of the fridge to begin to soften.

Then, it’s just a matter of whisking the butter and cream cheese until creamy. For the sweetness, you can add stevia or your sweetener of choice.

If you can get hold of a keto friendly powdered sugar (like this) then you’ll find that it blends in quickly, smoothly and evenly. Whisk in the sweetener then fold through half of the chocolate chips.

Move the dip to a bowl and top with the other half of the chocolate chips. You can then enjoy the dip immediately or pop it into the fridge for a few hours to allow the flavors to develop.

How to make keto cookie dough

Keto Cookie Dough Dip Recipe

  • 1.7oz/50g Butter, softened
  • 3.5oz/100g Cream Cheese
  • 2-4 Tablespoons Stevia or Keto Powdered Sugar
  • 1/4 to 1/2 Cup Keto Chocolate Chips
  1. Place the butter and cream cheese into a large bowl and whisk, using electric beaters until creamy.
  2. Add in the stevia or keto powdered sugar and whisk in until smooth.
  3. Fold half of the chocolate chips through the dip until fully incorporated.
  4. Move the dip to a serving bowl and top with the other half of the chocolate chips.
  5. Enjoy immediately or store in the fridge for a few hours to allow the flavors to develop, then consume within a few days.

To make the low carb raspberry mousse recipe couldn’t be easier – start by whipping heavy cream, with an electric mixer or in a stand mixer, until you just start to get stiff peaks.

You can use heavy cream, heavy whipping cream or double cream. Any cream that you can whip into whipped cream is what you want to use in this instance.

Then, whisk in stevia, monk fruit sweetener or your sweetener or regular sugar substitute of choice. It’s up to you how sweet you like your sweet treats to be, go for 2 to 4 tablespoons.

You can further enhance the flavor of the fruity dessert by adding in a pinch of salt or half a teaspoon of vanilla extract, or boost the raspberry flavor by adding in a little bit of raspberry extract.

Once the sweetener has been incorporated, add in the cream cheese and whisk until you have a light, creamy keto cheesecake fluff mousse.

For the raspberry mixture, you can whisk all the fresh raspberries in, fold them through or just top the dessert with a handful of fresh berries.

Or, you can do as I do, and go for a variety of textures by including all three elements in the dessert.

You can enjoy the guilt-free dessert straight away, but I find that the easy recipe benefits from a few hours in the fridge, to thicken slightly and to allow the flavors to develop together.

The low carb diet no bake recipe can be served in one pretty serving bowl, or popped into a piping bag and swirled into individual small cups or shot glasses for an indulgent keto raspberry cheesecake mousse experience.

How To Serve The Low Carb Raspberry Mousse

  • individual dessert glasses
  • ramekins
  • shot glasses for parties
  • topped with fresh raspberries
  • grated/sugar-free chocolate
  • whipped cream
  • a few chopped nuts
  • mint leaves

For a a quick raspberry cheesecake mousse: add a little vanilla and serve with a few crushed low-carb biscuits or nuts underneath.

Frequently Asked Questions

Is raspberry mousse keto?

Yes, this raspberry mousse can be enjoyed as a keto dessert when made with a low-carb, sugar-free sweetener. Raspberries are also one of the lower-carb fruits, making them a good choice for adding fresh berry flavour to keto desserts. Check the nutrition information for the exact net carbs per serving.

How many carbs are in keto raspberry mousse?

The exact carbohydrate content depends on the ingredients and sweetener you use. This recipe uses cream, cream cheese, low-carb sweetener and raspberries. For the most accurate information, calculate the nutrition using the specific brands and quantities you use.

Is raspberry mousse sugar free?

Yes, this raspberry mousse is sugar free when you use a sugar-free keto sweetener such as stevia or monk fruit instead of regular sugar. The natural raspberries do contain a small amount of naturally occurring sugar.

Can I use frozen raspberries?

Yes, you can use frozen raspberries, although I recommend thawing and draining them first. Frozen raspberries can release extra liquid as they thaw, which may make the mousse softer. Fresh raspberries work particularly well when you want to use some berries as a topping.

Can I make keto raspberry mousse ahead of time?

Yes. In fact, I recommend making the mousse a few hours ahead of serving. Chilling gives the mousse time to thicken and allows the raspberry and creamy cheesecake flavours to develop.

How long does raspberry mousse last in the fridge?

Store the raspberry mousse covered in the refrigerator and enjoy it within a few days. For the best texture and flavour, I recommend serving it within 1–2 days.

Can I use mascarpone instead of cream cheese?

Yes, mascarpone can be used instead of cream cheese for a richer and creamier raspberry mousse. The flavour will be milder and more similar to a traditional creamy mousse. Keep in mind that changing the ingredients will also change the nutritional information.

What sweetener is best for keto raspberry mousse?

You can use your preferred sugar-free sweetener in this recipe. Stevia and monk fruit are both suitable options. Start with a smaller amount, taste the mixture and add more if needed, as different sweeteners vary considerably in sweetness.

Can I make raspberry mousse without cream cheese?

Yes, but the texture and flavour will be different. The cream cheese gives this recipe its creamy, slightly tangy cheesecake-style flavour. If you leave it out, you can make a simpler raspberry whipped cream dessert, but it won’t have quite the same rich mousse texture.

Can I use other berries?

Absolutely. You can experiment with other low-carb berries such as strawberries or blackberries. Keep in mind that changing the fruit will change the flavour, texture and nutritional information of the finished dessert.

Can I make this raspberry mousse for Valentine’s Day?

Yes! The pretty pink colour makes this an easy keto Valentine’s Day dessert. Serve the mousse in individual glasses and top each one with a few fresh raspberries for a simple romantic dessert.

Can I make keto raspberry mousse for a dinner party?

Yes. Individual servings make this recipe particularly suitable for entertaining. Spoon or pipe the mousse into small dessert glasses, ramekins or shot glasses and refrigerate until you’re ready to serve.

What can I put on top of raspberry mousse?

Fresh raspberries are an easy topping, but you can also add whipped cream, a little grated sugar-free chocolate, chopped nuts or a few fresh mint leaves. For a more indulgent keto raspberry cheesecake mousse, try adding a small amount of crushed low-carb biscuit or nuts underneath the mousse.

Why is my raspberry mousse too soft?

If your mousse is too soft, it may need more time to chill. Refrigerating it for a few hours helps the mixture firm up. Make sure the cream was whipped to soft peaks before adding the other ingredients, and avoid adding excessive liquid from thawed frozen raspberries.

Can I make this recipe less sweet?

Yes. The amount of sweetener can easily be adjusted to suit your taste. I recommend starting with the lower amount in the recipe, tasting the mousse and adding more sweetener if needed. The natural tartness of raspberries works particularly well with a lightly sweetened creamy mousse.
