This easy keto cucumber salad has only 4 simple ingredients and is quick to throw together.

You can make the creamy salad, pop it into an airtight container and then take it to a potluck or picnic on a hot summer day or serve as a side dish with your favorite low-carb diet meal.

The salad is naturally low in grams of net carbohydrates and is the perfect dish to include in your keto diet plan to help you stay on track and achieve your own personal health and weight loss goals.

Ingredients For The Great Side Dish

The four simple ingredients for the easy recipe

Best of all, all of the ingredients for the delicious salad are easy to find at a local grocery store, and there are lots of ideas for keto friendly ingredients to be able to adapt the salad to your taste and budget. (Especially with the rise of produce prices lately.)

Fresh Cucumbers – you can use any type of cucumber you like including fresh garden cucumbers, regular cucumbers, Persian cucumbers or English cucumbers, and carefully cut the cucumber slices with a sharp knife into round, half moons or cubes for the low-carb cucumber salad.

Red Onion – a quarter to half a red onion is the perfect addition for flavor and crunch to the great recipe, while still keeping is low in g net carbs.

Lemon – fresh lemon juice is added to as a quick salad dressing ingredient in the summer salad.

Feel free to swap the lemon juice for lime juice, apple cider vinegar, red wine vinegar, rice vinegar or white vinegar in the vinaigrette dressing instead.

Sour Cream – is an easy way to add creaminess to the creamy cucumber salad recipe, my choice is to add a luxurious quarter cup of sour cream. You can feel free to swap for mayo or Greek yogurt in the low-carb recipe instead.

There are lots of other ketogenic diet friendly ingredients that you can add to the low carb salad to adapt the flavors to suit your own tastes and dietary requirements that will complement the crisp cucumbers:

More Fresh Vegetables – consider adding in other vegetables that are low in grams of net carbs such as red peppers, celery, green onions, Kalamata olives or tomatoes to make a cucumber tomato salad.

Cheese –  make a cheesy salad by adding in grated cheese, parmesan cheese or crumbled tangy feta cheese to create a Greek cucumber salad.

Herbs –  add in any fresh herbs you like from fresh dill, fresh parsley or even fresh mint for the best cucumber salad.

  • 1 Cucumber, sliced
  • 1/4 to 1/2 Red Onion, peeled and diced
  • 1-2 Tablespoons Fresh Lemon Juice
  • 1/4 Cup Sour Cream
  1. Place the sliced cucumbers into a large bowl.
  2. Add the diced onion, squeeze over the lemon and pour over the sour cream as the creamy dressing.
  3. Stir well to combine, then serve the crunchy side dish immediately or move to the fridge for a few hours to allow for the flavors to develop, then enjoy within a couple of days.

    This Keto Coleslaw Recipe makes an easy, creamy low carb side or salad that has only 2 ingredient – cabbage and sour cream.

    You can use any budget friendly cabbage you like and either grate or chop from a head of cabbage or buy already shredded cabbage to make an almost instant salad. (For more budget inspiration, here’s my cheap keto grocery list.)

    I find sour cream to contain the perfect creamy, sour, tangy flavor that a coleslaw calls out for. Feel free to swap for keto friendly mayo, natural or Greek yogurt instead.

    More Low Carb Slaw Ingredients

    Here are more ideas for low carb ingredients to include in your slaw:

    Lemon – zest or juice can be squeezed over.

    Apple Cider Vinegar – drizzle over a teaspoon or more.

    Stevia – to balance the sourness with some sweetness.

    Garlic or Onion – briefly saute and then toss through your slaw.

    Cheese – grated cheese, feta or crumbled goats cheese for a cheesy keto coleslaw.

    Nuts or Seeds – toasted almonds, walnuts, pumpkin or sunflower seeds can be sprinkled over the salad for a nutty, crunchy element.

    Salt & Pepper – or any other seasoning you like, to taste.

    • 1/4 to 1/2 Head of Cabbage
    • 1/4 to 1/2 Cup Sour Cream
    1. Chop, peel or grate the cabbage, or use already shredded cabbage, and place it into a salad bowl.
    2. Drizzle over the sour cream, a little at a time until it’s perfectly creamy.
    3. You can add in your flavors, additional ingredients or seasoning of choice and toss well to combine.
    4. Place in the fridge for a few hours to allow the flavors to develop, then serve.
