Keto Blueberry Fool Recipe

It was only last week that I shared 9 Easy Keto Desserts and said that desserts are my favourite keto experimentation and I’m at it again! This time I have an easy, yummy Keto Blueberry fool recipe for you. Fools are easy desserts to prepare – you simple whip cream to thick peaks and whisk some berries through, making it easy to keto-fy.

Traditional fool recipes have copious cups of berries. To make it low carb, keto friendly, simple mix through 1/2 cup and enjoy your sweet and creamy dessert.

I’ve made this with strawberries and have just folded the berries through the whipped cream. With blueberries, however, the consistency is MUCH nicer if you use your beaters to blend the berries through your dessert, once you’ve whipped the cream.

The stevia and lemon juice can be called on to balance the dessert to your desired level of sweetness. Too sour? Add some stevia. Too sweet? Add some lemon juice.

Keto Blueberry Fool Recipe

  • 1 Cup Thickened/Heavy/Whipping Cream
  • 1/4 teaspoon Vanilla Extract
  • 1/2 Cup Blueberries
  • 1/2 to 1 teaspoon Stevia (Optional)
  • 1-2 teaspoons Lemon Juice (Optional)
  1. Whip the cream in a large bowl to stiff peaks. When thick, whisk in the vanilla.
  2. Using a potato masher, mash the blueberries in a separate bowl until smooth.
  3. Whisk the blueberries through the whipped cream.
  4. Taste and adjust the flavour to your desired sweetness using the stevia and lemon juice.
  5. Refrigerate to cool and thicken, then serve.

Ingredients
