How To Make Low Carb Self Saucing Pudding

The chocolate dessert is easy to prepare, start by preheating the oven and greasing an oven proof dish really well to prevent the pudding sticking.
Pop the kettle on because you’ll need a cup of boiling water just before the pudding goes into the oven.

Melt the butter in the microwave or in a small pot over medium heat, and mix through the milk, vanilla and egg until fully combined.

Combine the coconut flour, baking powder, stevia, cocoa powder and salt in a bowl. You can sieve the ingredients for a super smooth low-carb chocolate pudding.
Stevia is my sweetener of choice in keto desserts, but you can feel free to swap for any sugar free sweetener you like including sugar free maple syrup, powdered sweetener or monk fruit sweetener.

Pour the melted butter mixture over the flour bowl and mix until fully incorporated and you have a chocolatey pudding batter.
You can either do this with a wire whisk or an electric mixer, depending what you have to hand.

Move the homemade chocolate pudding batter to the prepared baking dish, then sprinkle the topping of stevia and cocoa powder over the top of the pudding.

Pour the cup of boiling water over the pudding and place into the preheated oven for 30 to 35 minutes or until it’s set to your liking. I like mine brownie like on top and gooey on the bottom.
You can enjoy the ketogenic diet pudding as it is or with whipped heavy cream, coconut cream or ice cream, which I really enjoy for the sublime warm and cold dessert experience, that’s sure to satisfy your sweet tooth.
How Does This Keto Chocolate Pudding Become Self-Saucing?
The magic happens when the cocoa powder and sweetener topping are covered with boiling water before baking.
As the pudding bakes, the water moves through the topping and combines with the cocoa mixture underneath the batter. This creates a rich chocolate sauce beneath the soft, brownie-like pudding.
Don’t stir the boiling water into the batter. Simply pour it gently and evenly over the top before placing the dish in the oven.

Frequently Asked Questions
Is this chocolate pudding keto?
Yes. This is a keto-friendly chocolate pudding made with coconut flour, unsweetened cocoa powder, butter, egg and a keto-friendly sweetener. It is baked as a self-saucing pudding, so you get a soft chocolate pudding with a rich sauce underneath.
What is keto self-saucing pudding?
Keto self-saucing pudding is a low-carb version of the classic self-saucing chocolate pudding. A cocoa and sweetener topping is covered with boiling water before baking, creating a rich chocolate sauce underneath the pudding as it cooks.
How do you make keto chocolate pudding?
To make this keto chocolate pudding, combine the melted butter with milk, vanilla and egg, then mix with coconut flour, cocoa powder, baking powder, salt and keto-friendly sweetener. Transfer the batter to a baking dish, add the cocoa and sweetener topping, pour over boiling water and bake for 30 to 35 minutes.
Can I use almond flour instead of coconut flour?
I don’t recommend substituting almond flour for the coconut flour in this recipe without changing the other ingredients. Coconut flour absorbs considerably more liquid than almond flour, so a straight substitution can change the texture and consistency of the pudding.
Can I use a different keto sweetener?
Yes. You can use another granulated keto-friendly sweetener, but sweetness and texture can vary between products. If you’re using pure stevia or another concentrated sweetener, follow the conversion instructions on the package rather than replacing it cup-for-cup.
How do I know when the chocolate pudding is done?
The top should look set and cake-like while the bottom remains soft and saucy. I like this pudding when the top has a brownie-like texture and there is still plenty of chocolate sauce underneath.
Can I make this keto pudding ahead of time?
This pudding is best served warm from the oven. If you have leftovers, refrigerate them in a covered container and gently reheat individual portions before serving.
What can I serve with keto chocolate pudding?
Try serving it warm with whipped heavy cream, sugar-free whipped cream or a keto-friendly ice cream. The contrast between the warm chocolate pudding and a cool creamy topping is particularly delicious.
How should I store leftover keto chocolate pudding?
Allow the pudding to cool, then cover and refrigerate leftovers. Reheat individual portions gently before serving. The texture of the sauce may change slightly after refrigeration, but it will still make a delicious chocolate dessert.
Recommended Products
A few simple kitchen staples make this keto chocolate self-saucing pudding easy to prepare:
Coconut Flour – Coconut flour is the flour used in this recipe. Because it absorbs considerably more liquid than regular flour, use the amount specified in the recipe rather than substituting it cup-for-cup with another flour.
Unsweetened Cocoa Powder – A good unsweetened cocoa powder gives the pudding its rich chocolate flavor and is also used in the self-saucing chocolate topping.
Measuring Cups and Spoons – Accurate measurements are particularly useful when baking with coconut flour, as small changes in the amount of flour or liquid can affect the final texture.
Baking Dish – A medium oven-safe baking dish works well for this pudding. Choose one that gives the batter enough room to rise while leaving space for the chocolate sauce to form underneath.
Wire Whisk – A basic wire whisk is all you need to combine the wet and dry ingredients and make the pudding batter.
