Keto Blueberry Fool Recipe

Ingredients

  • 1 Cup Thickened/Heavy/Whipping Cream
  • 1/4 teaspoon Vanilla Extract
  • 1/2 Cup Blueberries
  • 1/2 to 1 teaspoon Stevia Optional
  • 1-2 teaspoons Lemon Juice Optional

Instructions

  1. Whip the cream in a large bowl to stiff peaks. When thick, whisk in the vanilla.
  2. Using a potato masher, mash the blueberries in a separate bowl until smooth.
  3. Whisk the blueberries through the whipped cream.
  4. Taste and adjust the flavour to your desired sweetness using the stevia and lemon juice.
  5. Refrigerate to cool and thicken, then serve.
