Heat butter or coconut oil in a large frying pan.

When hot, add the fresh spinach and cook until wilted.

Add more butter or coconut oil if it gets absorbed by the spinach.

Once wilted, add a few generous dollops of mascarpone cheese.

Add salt, pepper and your seasoning of choice.

Cook until the sauce is thickened to your liking.
