Low Carb Creamed Spinach Recipe

Ingredients

  • Butter or Coconut Oil for frying
  • Fresh Spinach
  • Mascarpone Cheese
  • Salt Pepper or Seasoning, to taste

Instructions

  1. Heat butter or coconut oil in a large frying pan.
  2. When hot, add the fresh spinach and cook until wilted.
  3. Add more butter or coconut oil if it gets absorbed by the spinach.
  4. Once wilted, add a few generous dollops of mascarpone cheese.
  5. Add salt, pepper and your seasoning of choice.
  6. Cook until the sauce is thickened to your liking.
  7. Serve as a side with your favourite keto meal or even eggs for breakfast.
