Low Carb Breakfast Bowl Recipe

It’s so easy to put together a keto breakfast bowl. Just raid your kitchen for vegetables which need to be used, fry them up and top them with an egg (or 3)!

For the first 6 or so months of my Keto Diet Journey, I had 2-3 eggs every day for breakfast. I took a little egg break after that, for balance, and I’m back having egg again, with just one a day. Feel free to have as many eggs as you like though.

In this instance, I had some broccoli and mushrooms in the fridge that were crying out to become my breakfast. You could mix it up and include your vegetable/s of choice in place of broccoli and mushrooms.

Here are some ideas of ingredients to fry in loads of butter or coconut oil and include in your breakfast bowl:

  • Mushrooms
  • Broccoli
  • Cauliflower
  • Brussels Sprouts
  • Green Beans
  • Garlic/Onion (in small amounts)
  • Tomato

Low Carb Breakfast Bowl Recipe

  • Mushrooms
  • Broccoli
  • Egg/s
  • Butter or Coconut Oil, for frying
  • Salt, pepper or seasoning
  1. Heat butter or coconut oil in a frying pan.
  2. When hot, add the mushrooms and broccoli.
  3. Cook until almost done, adding more butter/coconut oil when you think it needs it.
  4. Add the egg/s and cook until done to your liking.
  5. Move to a plate and add salt, pepper or your seasoning of choice.

Cinnamon Hot Chocolate Recipe

I’ve always LOVED Italian hot chocolates, which are usually thickened with the help of corn starch. Well, that’s a no-no on the Keto Diet.

So, you can imagine my surprise when I was experimenting with different hot chocolate flavors and discovered that cinnamon has a similar thickening affect on hot chocolates that corn starch does.

So, not only does cinnamon bring a comforting flavour to this low carb hot chocolate, it also results in a wonderfully thickened drink that you just can’t get enough of.

Keto Hot Chocolate Recipe

I prefer to use 90% dark chocolate and then sweetening with stevia to keep the carb count as low as possible.

Feel free to use your chocolate of choice and as little (or as much) as you like. You can even top your keto hot chocolate with a swirl of whipped cream for added decadence.

This recipe makes enough for one mug, but I’ve easily doubled all the ingredients to make a serve for myself and one for my Husband.

How To Make Almond Milk Hot Chocolate

This keto hot chocolate is really simple to make. You just combine all of the ingredients together in a small saucepan.

Then, place the saucepan over low heat to gently warm until the hot chocolate has heated up and thickened to your liking.

Pour the hot chocolate into a mug and top with a generous swirl of whipped cream.

Keto Cinnamon Hot Chocolate Recipe

  • 1 Cup Almond Milk
  • 1/3 Cup Heavy Cream
  • 1-2 Rows 90%+ Dark Chocolate (where to find chocolate)
  • 1/2 teaspoon Ground Cinnamon (where to find cinnamon)
  • 1 teaspoon Stevia (where to find stevia)
  1. Combine all of the ingredients together in a small saucepan.
  2. Place over low heat and cook, stirring continuously until heated through and remove from the heat as soon as it starts bubbling.
  3. Pour into a mug and enjoy.

Who doesn’t love chocolate chip cookies? And these are super simple to make – you melt the butter, stir the other ingredients through and you’ll have warm keto chocolate chip cookies out the oven in no time!

I used chopped 90% Dark Chocolate in place of chocolate chips, so you can see they look more like chocolate chunk cookies.

Use your favourite low carb, keto friendly chocolate of choice to make your chips.

Keto Coconut Flour Cookies

Give the cookies time when they are out of the oven to rest as they crisp on cooling. Though, I’m often not that patient and can’t resist a warm, chocolatey cookie straight from the oven!

You’ll find that a little bit of coconut flour goes a long way and that the batter for these cookies is very moist.

Coconut flour is a super absorbent ingredient to work with, so you need all that liquid to balance the recipe out and the resulting cookies are chocolate chip perfection!

Keto Chocolate Chip Cookies Recipe

  • 100g/3.5 ounces Unsalted Butter
  • 1/4-1/3 Cup Stevia
  • 1 teaspoon Vanilla Extract
  • Pinch of Salt
  • 1 Egg
  • 1/4 Cup Coconut Flour (Where to find coconut flour)
  • 1/4 Cup Low Carb Chocolate (Where to find chocolate), chopped into chocolate chips
  1. Preheat the oven to 180C/350F and line a baking tray with parchment paper.
  2. Melt the butter over low heat.
  3. When the butter has melted, pour it into a large bowl to cool.
  4. Once cool, whisk in the stevia, vanilla, salt and egg until smooth.
  5. Stir through the coconut flour and when a cookie dough starts to form, fold through the chocolate chips.
  6. Drop a teaspoon of cookie dough onto the tray per cookie.
  7. Place into the oven for 10-15 minutes or until golden.
  8. Remove from the oven and allow to cool to harden and crisp up.

I honestly prefer creamy cauliflower mash as a tasty substitute to mashed potatoes.

I find there is just so much more flavour and complexity to a creamy bowl full of cauliflower mash that I would happily enjoy it on it’s own.

Although, this does make an irresistible keto side dish and is perfect topped with a couple of low carb sausages, corned beef or roast lamb.

You can really make this dish as creamy (or extra creamy) as you want, simply by adding more butter, mascarpone, cream cheese or almond milk.

If you do want to just enjoy it by the bowl full, then consider simply topping a portion with a (generous) sprinkling of Parmesan. Simple and delicious!

Creamy Keto Cauliflower Mash Recipe

  • 1 Head of Cauliflower
  • Salt and pepper to taste
  • 2 Tablespoons Butter
  • 2 Tablespoons Mascarpone or Cream Cheese
  • Almond Milk (or your milk of choice)
  1. Finely chop the whole head of cauliflower.
  2. Half fill a large pot with water and bring up to the boil.
  3. Once boiling, add the chopped caulifower, salt and pepper to taste.
  4. Simmer until the caulflower is soft and easy to mash.
  5. Drain and mash your cauliflower.
  6. Add the butter, mascarpone and any additional salt, pepper or other seasoning to taste.
  7. Mash until smooth.
  8. If you’d like your cauliflower mash extra creamy then add a few (or more) tablespoons of almond milk or your milk of choice.

Brussels Sprouts Breakfast Hash

Preparing a breakfast hash is an easy, nourishing and hearty keto breakfast. You can mix and match your favorite vegetables, possibly even some meat too and top your creation with fried eggs.

Here are some ideas for more ingredients to mix and match in your keto breakfast hash:

  • Peppers
  • Garlic
  • Tomatoes
  • Cauliflower
  • Broccoli
  • Zucchini
  • Eggplant
  • Spinach
  • Kale
  • Avocado
  • Leftover roast chicken/meat/corned beef/burgers
  • Salami
  • Herbs/Spices
  • Flavored salt

Just keep in the mind the cooking times of each of the ingredients that you want to add and give them more (or less) time accordingly.

Are Brussel Sprouts Keto?

You may be wondering whether brussels sprouts are actually keto. And, the answer? Yes! They can absolutely be included in a low carb, keto diet. 

A half a cup of brussel sprouts has just 2 grams of net carbs, so they can be enjoyed in dishes like this brussels sprouts hash for breakfast. 

In this instance I went for brussels sprouts, mushrooms and red onion. Turns out the combination works really well together, resulting in a vibrant plate full that left me full until lunch time.

Note that onions are one of the highest carb vegetables. So, enjoy sparingly for flavor. I haven’t listed exact volumes of ingredients because it really depends on your tastes, what you have to hand and how many people you’ll be feeding.

You could serve this in a bowl, making a low carb breakfast bowl with your breakfast hash.

  3. Cook until reduced and the onions are translucent.
  4. Add the brussels sprouts and more butter/coconut oil if needed.
  5. Once the vegetables are almost cooked, make room for the eggs and crack them into the frying pan.
  6. Cook until done to your liking then enjoy.

I just love preparing meals in these easy lunch boxes to take out and about. It fits the perfect amount for a meal and snacks on the side.

How To Make A Low Carb Tuna Salad Lunch Box

The main attraction in this lunch box is the tuna salad, which has the following:

  • A bed of lettuce leaves/cups
  • A small tin of tuna
  • A generous drizzle of sour cream (got to love healthy fats!)
  • A crumbling of feta

Feel free to adapt the salad to your tastes. Here are some more low carb, keto friendly tuna salad ingredient ideas:

  • Avocado
  • Olive Oil
  • Avocado Oil
  • Mayonnaise
  • Salt
  • Chopped Tomatoes or Peppers (enjoyed sparingly)
  • Cucumber
  • Pesto

In the other lunch box compartments you’ll find:

  • A portion of almonds – sub in your favorite nuts and seeds.
  • 3 sliced strawberries – the lowest carb fruit, strawberries can be enjoyed in small amounts on the Keto diet.
