Keto Beef Stroganoff Recipe

December 10, 2022 by Easy Keto Living

Keto Beef Stroganoff Recipe – How to make the best easy low carb stroganoff with only 6 simple ingredients including ground beef and mushrooms. With the full video tutorial.

Keto Beef Stroganoff Recipe - How to make the best easy low carb stroganoff with only 6 simple ingredients

Keto Beef Stroganoff

This Keto Beef Stroganoff Recipe is a creamy, dreamy dinner that you can easily enjoy by the bowl full on it’s own or with cauliflower rice, zucchini noodles, shirataki noodles, cabbage noodles or any other low carb friendly egg noodles you like.

It’s the perfect low carb diet approved meal, especially on a busy weeknight when you need to get dinner on the table as quick as possible and as budget friendly as possible. (Here are more cheap keto meals.)

2 Of the simple ingredients

My local supermarket reduces the fresh meat/chicken first thing in the mornings and in the evenings. So, I try to get there at one of those times to discover what bargains they have on offer to incorporate into ketogenic diet favorite dinner meals.

Easy recipe cooking

On this particular morning they had ground beef and mushrooms reduced to clear. I brought them home and combined them together with ingredients I already had in my kitchen for a ridiculously cheap, creamy stroganoff dish that’s a keto comfort food meal that the whole family enjoyed.

You can adapt this delicious keto version of a classic beef stroganoff to include beef broth, heavy cream and/or sour cream as well in your creamy sauce if you like. You could also add in minced garlic, a couple of shakes of paprika, salt, black pepper or another spice to create your ideal tender beef stroganoff.

How to make low carb keto stroganoff with ground beef mince

Low Carb Beef Stroganoff Recipe

  • 1/2 to 1 Onion, peeled and sliced
  • 2-3 Garlic Cloves, peeled and chopped
  • 500g/1.1lbs Ground Beef
  • 250g/0.5lb Fresh Mushrooms, chopped
  • 1/2 Cup Almond Milk
  • 100g/3.5 ounces Cream Cheese
  1. Melt coconut oil, olive oil, avocado oil or butter in a frying pan or large skillet over medium heat.
  2. When hot, add the onion and garlic.
  3. Once the onion and garlic start softening, add the ground beef into the hot skillet.
  4. Toss the ground beef so that it browns all over.
  5. Once the pieces of beef have browned, add in the mushrooms.
  6. Cook until the mushrooms have reduced and the meat is completely cooked through.
  7. Pour over the milk and add the cream cheese.
  8. Stir to mix the cream cheese into the cooked beef stroganoff and cook until bubbling and you have a creamy, thick sauce.
  9. Move the low-carb beef stroganoff to bowls, enjoy as is or with cauliflower rice, cauliflower mash or low-carb noodles for a speedy low carb dinner, storing any cooled leftover beef in an airtight container and enjoying within a couple of days.

Keto Fried Eggs With Cheese Recipe – How to make the best easy cheesy low carb friendly breakfast idea with crispy cheese and egg – with the video tutorial.

Keto Fried Eggs With Cheese Recipe - How to make the best easy cheesy low carb friendly breakfast idea

Keto Fried Eggs With Cheese

This keto fried eggs with cheese recipe is my go to breakfast through the week, especially on busy mornings. It’s quick and easy to throw together while being ketogenic diet approved to help you with your weight loss goals.

Eggs are the perfect keto food to enjoy for breakfast on a low-carb diet, with a single large egg only having around 0.6 g net carbs.

The eggs are super simple to prepare, just add grated cheese into a frying pan such as a non-stick pan.

How to cook the easy low carb breakfast

Then, crack a couple of eggs over the cheese and cook until you have a crisp, cheesy breakfast dish that’s naturally high in grams of protein and healthy fats while being low in grams of carbs.

I adore how the edges of the eggs become crispy and crunchy with cheese when following the simple recipe, with a similar texture to the crisp parts of a perfect toasted cheese.

What Cheese Goes With Eggs?

The simple ingredients for the easy recipe

You can use one or more grated cheese in your breakfast eggs. Here are some ideas for good cheese options that are low in grams of net carbs:

  • Mozzarella
  • Cheddar
  • Gouda
  • Parmesan Cheese
  • Pecorino
  • Crumbled Blue Cheese
  • Crumbled Goat Cheese
  • Crumbled Feta

You can enjoy the ketogenic lifestyle egg breakfast as it is or in different ways to make a hearty breakfast place.

Choose from serving with a thick slice of Keto bread with grass-fed butter, crispy bacon, sour cream or low carb diet friendly vegetables such as spinach, red peppers, green onions or avocado to balance the richness of the perfect breakfast.

  5. Cook until the eggs are sunny side and done to your liking, cheese has melted to a creamy texture and crisped at the edges.
  6. Carefully move the cheesy eggs from the bottom of the pan to a plate and enjoy as is or with your breakfast accompaniments of choice such as non-starchy vegetables like green vegetables.

Keto Mushroom Sauce Recipe

August 11, 2022 by Easy Keto Living

Keto Mushroom Sauce Recipe – How To Make A Quick, Simple & Easy Creamy Low Carb Sauce with garlic and mushrooms that’s perfect for steak, chicken or pork – with only 3 ingredients.

Keto Mushroom Sauce Recipe - How To Make A Quick, Simple & Easy Creamy Garlic Mushroom Sauce

Keto Mushroom Sauce

This Keto mushroom sauce is my go to sauce to have with meaty meals such as steak or chicken breasts or meat free meals such as with zucchini noodles or cauliflower rice. Really the keto-friendly recipe can be enjoyed with any meal calling our for a creamy and saucy side with incredible flavors.

The best part is that you can adapt the easy keto recipe to include as much or as little as you like of each of the simple ingredients to create the perfect mushroom, garlic and creaminess ratio for you.

You can use heavy cream or whatever cream you like in the great recipe, or swap it for coconut milk or coconut cream for a dairy free, vegan friendly sauce with creamy mushrooms. Or, stir a splash of white wine, vegetable stock, chicken stock, beef broth or chicken broth through the sauce for added flavor.

The 3 simple ingredients for the easy recipe

Choose any type of mushroom you find at your local grocery store for the mushroom flavor in the easy recipe. Choose from oyster mushrooms, cremini mushrooms, big white mushrooms, white button mushrooms or portobello mushrooms.

When making the creamy mushroom sauce to serve with ketogenic diet friendly zucchini noodles, simply add the noodles into the frying pan as soon as the sauce is ready.

You can also stir through or top the dish with parmesan cheese, cream cheese or any cheese you like for a cheesy sauce or simple ingredients such as sour cream, Dijon mustard or Worcestershire sauce for added flavor and a finished dish that’s low in net carbs.

Mushroom varieties

You can of course add in salt, black pepper, red pepper flakes, oregano, fresh parsley and any other seasoning or fresh herbs you like to the simple sauce.

If serving the creamy sauce as a side dish with steak, chicken breast or keto pork chops, the best way is to cook the sauce, set it aside in a bowl covered with a lid.

Then, cook your meat and once it’s ready you can briefly re-heat the sauce over medium heat.

I find this works best with steak which can do with a couple of minutes rest time to help develop rich flavor until ready to serve (and devour) with your cream sauce.

Cooking the keto mushroom sauce

Creamy Keto Mushroom Sauce Recipe

  • 250g/8.8oz Fresh Mushrooms
  • 2-3 Fresh Garlic Cloves
  • 1/4 Cup Cream
  1. Slice the mushrooms into bite sized pieces.
  2. Melt butter, coconut oil or olive oil in a frying pan or cast iron skillet over medium-high heat, then add the sliced mushrooms into the hot pan.
  3. Chop the garlic or place into a garlic press to crush.
  4. Add the chopped or crushed garlic to the mushrooms, along with more oil or butter when needed.
  5. Cook until the mushrooms have reduced and browned.
  6. Pour over the cream and bubble away for a few minutes.
  7. Serve and enjoy the creamy garlic mushroom recipe straight away, storing any leftovers in an airtight container to use within a few days.

Sugar Free Blueberry Jam Recipe

July 9, 2022 by Easy Keto Living

Sugar Free Blueberry Jam Recipe – How to make easy low carb keto friendly 3 ingredient chia seed jam with no added refined sugars – with the video tutorial.

Sugar Free Blueberry Jam Recipe - How to make easy low carb keto friendly chia seed jam

Sugar Free Blueberry Jam

Celebrate blueberry season with this sugar free blueberry jam recipe that has no added sugar and is low in net carbs, making it perfect to enjoy as part of a low carb, ketogenic diet.

You only need 3 natural ingredients for the easy blueberry jam – whole blueberries, chia seeds and stevia. You can of course swap the blueberries for any berries you like and substitute the stevia with your low carb sweetener or white sugar alternative of choice that you can find at your local grocery store.

If blueberries aren’t in season you can feel free to use frozen blueberries, which means you can enjoy the perfect jam and fresh blueberry flavor all year around.

Heating berries in a saucepan

This recipe uses chia seeds as the perfect way to thicken and set the jam, while adding plenty of healthy fiber, without the need for pectin that’s usually used in regular jam.

I prefer to simply mash the healthy blueberry jam with a potato masher for a thick texture. If you’d prefer a smoother texture, then you can pop the cooled jam into a blender or use an immersion blender until smooth to your liking.

How to make keto jam

Adding a little lemon juice, lime juice or vanilla extract can enhance the natural flavor of jam recipes, so feel free to add some into your healthier homemade jam.

You can enjoy the homemade blueberry jam in any of the following keto friendly ways:

  • As a low carb bread spread or in a keto peanut butter and jelly sandwich
  • Mixed through low carb yogurt
  • As an ice cream topping
  • With keto waffles
  • With keto pancakes
  • With keto bread
  • To sandwich together keto breakfast cookies
Sugar free low carb keto blueberry chia seed jam recipe

Sugar Free Blueberry Chia Jam Recipe

  • 10.5oz-17.7oz/300g-500g Frozen or Fresh Blueberries
  • 1/4 Cup of Stevia or your favorite sweetener
  • 1/4 Cup of Chia Seeds
  1. Place the blueberries into a medium saucepan on the stove top over medium heat.
  2. Heat, stirring regularly, until the blueberries come to a full boil and have become soft and can easily be mashed with the back of a spoon or fork.
  3. Take the sauce pan off of the heat and mash the hot jam until smooth. I like to use a potato masher to mash the berries.
  4. Add the chia seeds and stevia, stir until well combined. Taste to be sure the jam is sweet enough, stirring through more stevia, if needed.
  5. Allow to cool and then pour the jam into a jar and store in the fridge.
  6. Use within a week and enjoy.

Lazy Keto Breakfast Recipes – 10 Easy ideas for the best delicious quick low carb friendly meals to start your day with.

Lazy Keto Breakfast Recipes - 10 Easy ideas for the best delicious quick low carb friendly meals

Lazy Keto Breakfast Recipes

These lazy keto breakfast recipes are loaded with healthy fats and low in grams of carbs, making them perfect to enjoy on the ketogenic diet.

The best part is that all of the Lazy Keto Recipes are perfect for keto beginners or for those of you who have been on a keto journey for a while and looking for fresh breakfast inspiration.

To me, lazy keto means enjoying low carb, high fat meals that fit keto macros, but without actually counting calories. (Here’s a blog post with more tips about how to follow a lazy keto approach.)

10 Lazy Keto Breakfast Recipes

Here are the 10 Lazy Keto Breakfast Recipes that you can enjoy as part of a weight loss plan or just to enjoy homemade breakfasts made with simple ingredients.

1. Cheesy Fried Eggs

Lazy Keto Breakfast - Cheesy Fried Eggs

If you like crispy cheese and crisp fried eggs, then these keto fried eggs are the perfect lazy keto diet breakfast for you.

Start by frying a circle of grated cheddar or mozzarella cheese in a frying pan, then crack a couple of eggs over. Cook until the eggs are done to your liking and the base is wonderfully crisp.

Serve with your keto vegetables of choice, like the above pictured mushrooms, for an easy breakfast.

2. Breakfast Fry Up

Fry Up

There are plenty of different ways to enjoy a simple fry up on a lazy keto meal plan that’s low in total carbs.

The above big low carb breakfast fry up plate includes:

  • Fried eggs
  • Mushrooms
  • Keto Sausage

It was all cooked/heated up in plenty of coconut oil in a frying pan.

You could cook your eggs any how you like, frying them up with your choice of vegetables from the following low carb foods list:

  • Broccoli
  • Mushrooms
  • Spinach
  • Cauliflower
  • Asparagus
  • Radishes (which fry up like potatoes!)
  • Onion/Garlic (sparingly)

You can use low carb sausages as the meat portion or fry up crispy bacon, leftover roast chicken/meat or any other breakfast protein you like.

Feel free to add a portion of creamy avocado or a slice of cheese like brie for an indulgent breakfast plate.

3. Lazy Keto Breakfast Hash

Lazy Keto Breakfast Hash

A breakfast hash makes a hearty keto breakfast that’s high in grams of protein. You can really cook up any low carb vegetables you like and then crack a couple of eggs over.

The above breakfast has brussel sprouts and is a true one pan wonder. (Here’s the recipe)

4. Omelette

Omelette

You can fill an omelette with your keto fillings of choice for the perfect breakfast in your weekly meal plan.

My perfect omelette is usually filled with plenty of cheese and mushrooms, here are more ideas for you.

5. Waffles

Homemade low carb Waffles

You can make keto waffles with coconut flour or almond flour as a delicious breakfast that the entire family will enjoy. (Here’s my full keto waffles recipe for you.)

My go to recipe has only 4 ingredients:

  • 4 eggs
  • 1/4 Cup of Heavy Cream, Almond Milk or Coconut Milk
  • Pinch of Salt
  • 1/4 Cup of Coconut Flour

You simply whisk the ingredients together and cook them in a waffle maker and top with your choice of toppings from berries, whipped cream, ice cream or sugar free blueberry jam.

6. Smoothie or Protein Shake

Breakfast smoothie or shake

When you don’t have much time in the morning for a full cooked breakfast, then a breakfast smoothie and shake makes an easy, little to no prep meal.

You can make a keto friendly smoothie or protein shake with as little as 3 ingredients. Like the above picture raspberry smoothie. (Here’s the full easy recipe)

Here are more ideas for ingredients to include in your keto breakfast smoothies:

  • Almond Milk
  • Coconut Milk
  • Low Carb Yogurt
  • Cream
  • Cream Cheese
  • Mascarpone
  • Frozen berries
  • Fresh berries
  • Chia Seeds
  • Cacao Powder
  • Peanut Butter
  • Lemon
  • Stevia
  • Coconut
  • Sugar Free Jam

Too add a portion of protein to your breakfast drink, simply find a low carb protein powder (like this) and add a tablespoon or scoop to a protein shaker or blender, along with almond milk and cream.

I like to add a dash of heavy cream to my protein shakes to elevate the healthy fat content. Then, shake it up or blend for a speedy breakfast or breakfast on the go.

7. Lazy Keto Breakfast Granola

Homemade keto granola

It’s easy to make a nutty keto granola that you can enjoy with low carb yogurt as a healthy breakfast.

You’ll need a couple of cups of nuts, coconut, vanilla, stevia, cinnamon, salt and an egg to bind it all together. (Here’s the full easy recipe.)

8. Oatmeal

Oatmeal - low carb

This warming chocolatey breakfast uses ricotta to mimic the texture of oatmeal in a low carb diet friendly way.

It’s low in carbs, high in protein and makes a welcome change from regular keto breakfasts. (Here’s the full keto oatmeal recipe for you.)

9. Breakfast Cookies

Lazy keto breakfast cookies

10. Chia Pudding

Chia pudding bowl

Pop 2 tablespoons of chia seeds into a bowl, glass or mug.

Top with half a cup of liquid from the following options – almond milk, kefir, low carb plain yogurt, cream.

I went for a quarter of a cup of almond milk and a quarter of a cup of kefir.

Add a half a teaspoon of stevia (or more) for sweetness and stir well to combine. Move the chia pudding to the fridge to thicken for a few hours or overnight.

Enjoy topped with berries, grated low carb chocolate, cream or shredded coconut. (Read more about chia seeds on keto.)

Keto Almond Cake Recipe – How to make the best easy low carb and sugar free almond flour dessert with 4 ingredients – with the video tutorial.

Keto Almond Cake Recipe - How to make the best easy low carb and sugar free almond flour dessert

Keto Almond Cake

This keto almond cake is super easy to prepare and makes an impressive keto diet friendly treat for when sweet cravings strike.

You can enjoy a slice of the delicious cake simply with a cup of coffee as an afternoon keto dessert or decorated as a birthday cake to serve to a crowd.

The best part is that the cake has only 4 ingredients and it’s the easiest recipe to prepare.

The 4 Ingredients

4 Ingredients you'll need

Here are the 4 simple ingredients you’ll need to make the keto recipe:

Eggs – separated and whisked separately, eggs provide light, fluffy texture to the cake.

Vanilla Extract – for a comforting vanilla flavor. You can swap for almond extract for a richer almond flavor in your cake. For a lemon flavored cake, you can mix lemon zest or lemon juice through the cake batter.

Mixing ingredients together

Stevia – you can use whatever ketogenic diet friendly sweeteners you usually include in your diet, choose from stevia, as I have done or use monk fruit or erythritol instead.

Almond Flour – depending on the texture you’re wanting the easy almond flour cake to be and the options you have in your pantry, you can use either almond flour, ground almonds or almond meal. The finer the texture of the flour, the finer your cake will be.

Topping Ideas

Ideas for toppings

Here are ideas for toppings that are low in net carbs that you can pop on top of the cake once it’s at room temperature:

Powdered Sugar – my choice for this cake is usually sprinkling a little bit of sugar free powdered sugar over a sieve over the cake to keep it simple and elegant.

Keto Chocolate Cream Cheese Frosting Recipe

Frosting – choose from cream cheese frosting, chocolate cream cheese frosting, chocolate whipped cream frosting or a decadent chocolate ganache to smother your low carb cake with.

Nuts – sprinkle sliced almonds, flaked almonds or toasted almonds over the center of the cake for even more nutty flavor.

Fresh Berries – top your cake with low carb diet approved fresh berries like strawberries, raspberries or blueberries or keto friendly jam like sugar free blueberry jam.

Slice of keto almond cake

Keto Almond Cake Recipe

  • 4 Eggs, separated
  • 1 teaspoon Vanilla Extract
  • 1/2 Cup Stevia, or your sweetener of choice

  3. In a second large bowl, whisk together the egg yolks, vanilla and stevia until fully combined.
  4. Fold the whipped egg whites into the egg yolk mixture until just starting to come together.
  5. Next, add the almond flour and fold gently until you have a smooth, creamy cake batter.
  6. Move the cake batter to the prepared cake pan and place in the preheated oven for 30 to 40 minutes or until golden and cooked through.

All you need is zucchini that you spiralize into noodles. (You’ll need a spiralizer for that, here’s a selection of spiralizers on Amazon.)

Then cook in a creamy garlic sauce. You can add in a tin of tuna, cream cheese or grated parmesan for flavor and your quick keto lunch is on the table in mere minutes.

Whipped Cream

These are the 4 simple low carb friendly ingredients that you’ll need for the easy recipe:

Cream – you can use heavy, double, whipping or any other cream you can easily whip into soft whipped cream in this particular recipe.

More Ingredient Ideas

Mixing ingredients together

Here are more ideas for ingredients to include in your easy keto dip:

Creamy Ingredients – you can swap some of the cream or cream cheese in the cheesecake dip for Greek yogurt, sour cream or mascarpone cheese.

Chocolate – create a keto chocolate fruit dip by mixing through chocolate chips, cacao nibs or cocoa powder and enjoy sublime creamy chocolate goodness.

Flavor – you can swap the vanilla in the easy fruit dip recipe for another flavor option such as almond extract, a squeeze of orange juice or lemon zest.

Store any leftover dip in a sealed container and enjoy within a couple of days. (If it lasts that long!)
