This easy Keto Chia Pudding is a creamy, low carb breakfast or snack that takes just a few minutes to prepare. Made with chia seeds, keto-friendly milk, yogurt and raspberries, it’s perfect for making ahead and storing in the fridge for a quick breakfast the next morning.

With no cooking required, this keto chia seed pudding is one of the easiest make-ahead low carb breakfasts you can prepare. You can enjoy it with berries, nuts, nut butter, coconut, cocoa or your favourite keto-friendly toppings.

The Simple Ingredients For The Easy Recipe

Here are the simple ingredients I’ve included in my chia pudding and some ideas to adapt yours depending on your tastes and dietary requirements:

Raspberries – I went for raspberries but you can include any other berry you like and include as little or as much as you’d like to. If you’re following a strict low carb diet, then you may only want a small handful in your pudding.

Spoon of easy make ahead breakfast

Keto Milk – you can use any type of milk you like from unsweetened almond milk, coconut milk, cashew milk or any other non-dairy milks that are low in carbs and sugars.

You can also swap some of the milk for heavy cream, heavy whipping cream or coconut cream for a keto pudding with more healthy fats.

Yogurt – for a creamy pudding, mix through a few spoons of yogurt. Choose a yogurt that’s low in total carbs and sugars such as plain, natural or Greek yogurt.

Chia Seeds – the star of our chia pudding – I included 2 tablespoons of the healthy seeds, but feel free to use more or less depending if you want a thicker pudding and the texture of chia pudding you want.

You can even meal prep a big batch of the creamy keto chia pudding as a simple treat to satisfy you sweet tooth or enjoy as the perfect breakfast when needed.

Here are some ideas for ways you could adapt your low carb chia seed pudding:

Chocolate Keto Chia Pudding

Add unsweetened cocoa powder and keto-friendly sweetener.

Strawberry Chia Pudding

Use strawberries instead of raspberries.

Vanilla Chia Pudding

Add vanilla extract and your preferred keto sweetener.

Peanut Butter Chia Pudding

Mix through a spoonful of natural peanut butter.

Coconut Chia Pudding

Replace some of the almond milk with unsweetened coconut milk.

Why is my chia pudding watery?

How do I make chia pudding thicker?

This keto sauteed zucchini recipe makes a simple, great side dish for everyday meals or as a quick side option for special occasions and holidays like Thanksgiving or Christmas that the whole family will enjoy, especially picky eaters.

When you have an abundance of zucchini, there are plenty of ketogenic diet friendly ways to make the most of the nutritious vegetables.

From a zucchini bake, zucchini noodles or crispy keto zucchini fries to this easy keto side dish that I’m sharing with you today, which is a great way to include zucchini in your diet plan.

How To Saute Zucchini

This is such a simple dish to prepare, start by slicing zucchini into pieces. You can go for rounds, half moons or the zucchini chips shape that I went for in this easy recipe.

In the frying pan with oregano

Then, heat oil, butter or coconut oil in a frying pan and add in the zucchini once hot. You can cook just the low-carb zucchini fries if you like or add in sliced onion, garlic or any other vegetable you like to include that are your personal favorites that are low in grams of carbs.

Shake over salt, black pepper and any other seasoning you like. I simply went for oregano because I find that it complements the zucchini perfectly in the great recipe. You could also add in a little bit of garlic powder or fresh herbs to the delicious recipe.

How to make zucchini in a frying pan

Then, it’s just a matter of cooking the zucchini slices in a single layer until golden and done to your liking. Just keep tossing and keep a close eye on them so they don’t burn.

You can crumble feta or goats cheese or sprinkle parmesan cheese or mozzarella cheese over the top of the zucchini to finish off the dish with melty cheese if you like.

Serve with your low carb diet friendly meal of choice, along with a dollop of sour cream as a dipping sauce, which makes a delicious way to complete the perfect comfort food zucchini side dish.

Keto Sauteed Zucchini Recipe

  • 1-2 Fresh Zucchini
  • Salt & Black Pepper, to taste
  • Oregano, or any other seasoning
  • Butter, Olive Oil or Coconut Oil, for frying
  1. Heat a large frying pan on the stove stop over medium heat to high heat.
  2. Add butter, oil or coconut oil to the frying pan.
  3. Slice or chop the zucchini into rounds, half moons or strips.
  4. Once the frying pan is hot, add the chopped zucchini.
  5. Shake over salt, pepper, oregano and any other seasoning you like, to taste.
  6. Cook, tossing regularly, until golden brown on all sides, adding more oil or butter if needed.
  7. Once cooked to your liking, remove from the frying pan and serve the great dish straight away with your keto friendly recipes of choice.

This Keto Beef Stroganoff Recipe is a creamy, dreamy dinner that you can easily enjoy by the bowl full on it’s own or with cauliflower rice, zucchini noodles, shirataki noodles, cabbage noodles or any other low carb friendly egg noodles you like. 

It’s the perfect low carb diet approved meal, especially on a busy weeknight when you need to get dinner on the table as quick as possible and as budget friendly as possible. (Here are more cheap keto meals.)

2 Of the simple ingredients

My local supermarket reduces the fresh meat/chicken first thing in the mornings and in the evenings. So, I try to get there at one of those times to discover what bargains they have on offer to incorporate into ketogenic diet favorite dinner meals.

Easy recipe cooking

On this particular morning they had ground beef and mushrooms reduced to clear. I brought them home and combined them together with ingredients I already had in my kitchen for a ridiculously cheap, creamy stroganoff dish that’s a keto comfort food meal that the whole family enjoyed.

You can adapt this delicious keto version of a classic beef stroganoff to include beef broth, heavy cream and/or sour cream as well in your creamy sauce if you like. You could also add in minced garlic, a couple of shakes of paprika, salt, black pepper or another spice to create your ideal tender beef stroganoff. 

How to make low carb keto stroganoff with ground beef mince

Low Carb Beef Stroganoff Recipe

  • 1/2 to 1 Onion, peeled and sliced
  • 2-3 Garlic Cloves, peeled and chopped
  • 500g/1.1lbs Ground Beef
  • 250g/0.5lb Fresh Mushrooms, chopped
  • 1/2 Cup Almond Milk
  • 100g/3.5 ounces Cream Cheese
  1. Melt coconut oil, olive oil, avocado oil or butter in a frying pan or large skillet over medium heat.
  2. When hot, add the onion and garlic.
  3. Once the onion and garlic start softening, add the ground beef into the hot skillet.
  4. Toss the ground beef so that it browns all over.
  5. Once the pieces of beef have browned, add in the mushrooms.
  6. Cook until the mushrooms have reduced and the meat is completely cooked through.
  7. Pour over the milk and add the cream cheese.
  8. Stir to mix the cream cheese into the cooked beef stroganoff and cook until bubbling and you have a creamy, thick sauce.
  9. Move the low-carb beef stroganoff to bowls, enjoy as is or with cauliflower rice, cauliflower mash or low-carb noodles for a speedy low carb dinner, storing any cooled leftover beef in an airtight container and enjoying within a couple of days.

This keto fried eggs with cheese recipe is my go to breakfast through the week, especially on busy mornings. It’s quick and easy to throw together while being ketogenic diet approved to help you with your weight loss goals.

Eggs are the perfect keto food to enjoy for breakfast on a low-carb diet, with a single large egg only having around 0.6 g net carbs.

The eggs are super simple to prepare, just add grated cheese into a frying pan such as a non-stick pan.

How to cook the easy low carb breakfast

Then, crack a couple of eggs over the cheese and cook until you have a crisp, cheesy breakfast dish that’s naturally high in grams of protein and healthy fats while being low in grams of carbs.

I adore how the edges of the eggs become crispy and crunchy with cheese when following the simple recipe, with a similar texture to the crisp parts of a perfect toasted cheese.

What Cheese Goes With Eggs?

The simple ingredients for the easy recipe

You can use one or more grated cheese in your breakfast eggs. Here are some ideas for good cheese options that are low in grams of net carbs:

  • Mozzarella
  • Cheddar
  • Gouda
  • Parmesan Cheese
  • Pecorino
  • Crumbled Blue Cheese
  • Crumbled Goat Cheese
  • Crumbled Feta

Cheesy Fried Eggs Recipe

  • Grated Cheese
  • Free Range Eggs
  1. Heat coconut oil, avocado oil, olive oil or butter in a frying pan over medium heat.
  2. When hot, create a circle or semi circle of grated cheese.
  3. Allow to melt for about a minute.
  4. Then, crack eggs over the melted cheese.
  5. Cook until the eggs are sunny side and done to your liking, cheese has melted to a creamy texture and crisped at the edges. 
  6. Carefully move the cheesy eggs from the bottom of the pan to a plate and enjoy as is or with your breakfast accompaniments of choice such as non-starchy vegetables like green vegetables.

This Keto mushroom sauce is my go to sauce to have with meaty meals such as steak or chicken breasts or meat free meals such as with zucchini noodles or cauliflower rice. Really the keto-friendly recipe can be enjoyed with any meal calling our for a creamy and saucy side with incredible flavors.

The best part is that you can adapt the easy keto recipe to include as much or as little as you like of each of the simple ingredients to create the perfect mushroom, garlic and creaminess ratio for you.

You can use heavy cream or whatever cream you like in the great recipe, or swap it for coconut milk or coconut cream for a dairy free, vegan friendly sauce with creamy mushrooms. Or, stir a splash of white wine, vegetable stock, chicken stock, beef broth or chicken broth through the sauce for added flavor.

The 3 simple ingredients for the easy recipe

Choose any type of mushroom you find at your local grocery store for the mushroom flavor in the easy recipe. Choose from oyster mushrooms, cremini mushrooms, big white mushrooms, white button mushrooms or portobello mushrooms.

When making the creamy mushroom sauce to serve with ketogenic diet friendly zucchini noodles, simply add the noodles into the frying pan as soon as the sauce is ready.

You can also stir through or top the dish with parmesan cheese, cream cheese or any cheese you like for a cheesy sauce or simple ingredients such as sour cream, Dijon mustard or Worcestershire sauce for added flavor and a finished dish that’s low in net carbs.

Mushroom varieties

You can of course add in salt, black pepper, red pepper flakes, oregano, fresh parsley and any other seasoning or fresh herbs you like to the simple sauce.

If serving the creamy sauce as a side dish with steak, chicken breast or keto pork chops, the best way is to cook the sauce, set it aside in a bowl covered with a lid.

Then, cook your meat and once it’s ready you can briefly re-heat the sauce over medium heat.

I find this works best with steak which can do with a couple of minutes rest time to help develop rich flavor until ready to serve (and devour) with your cream sauce.

Cooking the keto mushroom sauce

Creamy Keto Mushroom Sauce Recipe

  • 250g/8.8oz Fresh Mushrooms
  • 2-3 Fresh Garlic Cloves
  • 1/4 Cup Cream
  1. Slice the mushrooms into bite sized pieces.
  2. Melt butter, coconut oil or olive oil in a frying pan or cast iron skillet over medium-high heat, then add the sliced mushrooms into the hot pan.
  3. Chop the garlic or place into a garlic press to crush.
  4. Add the chopped or crushed garlic to the mushrooms, along with more oil or butter when needed.
  5. Cook until the mushrooms have reduced and browned.
  6. Pour over the cream and bubble away for a few minutes.
  7. Serve and enjoy the creamy garlic mushroom recipe straight away, storing any leftovers in an airtight container to use within a few days.

The chia seeds will continue absorbing liquid as the jam sits, helping it naturally thicken.

How To Make Sugar Free Blueberry Jam

Step 1: Cook the Blueberries

Add frozen blueberries to the saucepan

Place the fresh or frozen blueberries into a medium saucepan over medium heat.

Cook, stirring regularly, until the blueberries have softened and released plenty of their natural juices.

Step 2: Cook Until Soft and Juicy

Cook until soft and juicy

Continue cooking until the blueberries are very soft and easy to mash with the back of a spoon or fork.

Frozen blueberries may release more liquid as they cook, which is completely normal.

Step 3: Mash the Blueberries

Mash until smooth

Remove the saucepan from the heat and mash the blueberries using a potato masher, fork or the back of a spoon.

For chunky blueberry jam, mash lightly and leave some berries whole.

For smoother jam, mash the blueberries more thoroughly.

Step 4: Stir Through the Chia Seeds and Sweetener

Add chia seeds and sweetener

Add the chia seeds and your chosen sweetener to the warm blueberry mixture.

Stir well until everything is fully combined.

Taste the mixture and add additional sweetener if needed.

Step 5: Allow the Jam to Thicken

  2. Heat, stirring regularly, until the blueberries come to a full boil and have become soft and can easily be mashed with the back of a spoon or fork.

Serve with your keto vegetables of choice, like the above pictured mushrooms, for an easy breakfast.

There are plenty of different ways to enjoy a simple fry up on a lazy keto meal plan that’s low in total carbs.

The above big low carb breakfast fry up plate includes:

It was all cooked/heated up in plenty of coconut oil in a frying pan.

You could cook your eggs any how you like, frying them up with your choice of vegetables from the following low carb foods list:

  • Radishes (which fry up like potatoes!)
  • Onion/Garlic (sparingly)

I went for a quarter of a cup of almond milk and a quarter of a cup of kefir.

Add a half a teaspoon of stevia (or more) for sweetness and stir well to combine. Move the chia pudding to the fridge to thicken for a few hours or overnight.

This keto almond cake is super easy to prepare and makes an impressive keto diet friendly treat for when sweet cravings strike.

You can enjoy a slice of the delicious cake simply with a cup of coffee as an afternoon keto dessert or decorated as a birthday cake to serve to a crowd.

The best part is that the cake has only 4 ingredients and it’s the easiest recipe to prepare. 

The 4 Ingredients

Here are the 4 simple ingredients you’ll need to make the keto recipe:

Eggs – separated and whisked separately, eggs provide light, fluffy texture to the cake.

Vanilla Extract – for a comforting vanilla flavor. You can swap for almond extract for a richer almond flavor in your cake. For a lemon flavored cake, you can mix lemon zest or lemon juice through the cake batter.

Mixing ingredients together

Stevia – you can use whatever ketogenic diet friendly sweeteners you usually include in your diet, choose from stevia, as I have done or use monk fruit or erythritol instead.

Almond Flour – depending on the texture you’re wanting the easy almond flour cake to be and the options you have in your pantry, you can use either almond flour, ground almonds or almond meal. The finer the texture of the flour, the finer your cake will be.

Here are ideas for toppings that are low in net carbs that you can pop on top of the cake once it’s at room temperature:

Powdered Sugar – my choice for this cake is usually sprinkling a little bit of sugar free powdered sugar over a sieve over the cake to keep it simple and elegant. 

Keto Chocolate Cream Cheese Frosting Recipe

Frosting – choose from cream cheese frosting, chocolate cream cheese frosting, chocolate whipped cream frosting or a decadent chocolate ganache to smother your low carb cake with.

Nuts – sprinkle sliced almonds, flaked almonds or toasted almonds over the center of the cake for even more nutty flavor.

Fresh Berries – top your cake with low carb diet approved fresh berries like strawberries, raspberries or blueberries or keto friendly jam like sugar free blueberry jam.

  • 4 Eggs, separated
  • 1 teaspoon Vanilla Extract
  • 1/2 Cup Stevia, or your sweetener of choice
  • 2 Cups Almond Flour, Ground Almonds or Almond Meal
  1. Preheat the oven to 350F/180C and line a springform pan with well greased baking parchment paper.
  2. Pour the egg whites into a large mixing bowl and whisk with an electric mixer until thickened and stiff peaks form.
  3. In a second large bowl, whisk together the egg yolks, vanilla and stevia until fully combined.
  4. Fold the whipped egg whites into the egg yolk mixture until just starting to come together.
  5. Next, add the almond flour and fold gently until you have a smooth, creamy cake batter.
  6. Move the cake batter to the prepared cake pan and place in the preheated oven for 30 to 40 minutes or until golden and cooked through.
  7. Allow the cake to cool completely, then serve, storing any leftover cake in an airtight container to enjoy within a few days.
