Almond Milk Hot Chocolate Recipe - How to make an easy, creamy low carb keto friendly warm drink

Almond Milk Hot Chocolate Recipe

This almond milk hot chocolate recipe is easy, creamy, quick to prepare and has only 3 ingredients that are low carb and keto friendly.

I’ve enjoyed hot chocolates almost daily through my keto journey, it’s the perfect treat to satisfy your sweet tooth, keep you full until your next meal and also add healthy fats to your day to help you meet your macros.

The 3 Simple Ingredients For The Easy Recipe

The 3 simple ingredients for the easy recipe

Here are the basic ingredients that you’ll need to for the easy keto recipe as well as plenty of ideas for ingredient variations to meet your own tastes and dietary requirements:

Almond Milk – essential for an almond milk hot chocolate is the almond milk itself! Make sure that you include unsweetened almond milk so that there aren’t any other added sugars.

Combining the ingredients together in a mug and saucepan

Heavy Cream – I like to add in healthy fats by including a portion of heavy cream. If you’d prefer for the healthy hot chocolate to be dairy free then use coconut milk instead.

Dark Chocolate – include keto friendly hot chocolate such as 85% dark chocolate without any added sugar. You could also swap for sugar free chocolate chips if you’d prefer instead.

Mug of keto friendly hot chocolate

Extra Ingredients – you can go beyond the 3 ingredients by mixing a little stevia or your sweetener of choice through the hot chocolate for a sweeter hot chocolate or flavor with an extract such as a little bit of peppermint extract for a mint chocolate drink.

As for the toppings, you can choose to top your hot chocolate with an indulgent swirl of whipped cream or scoop of keto ice cream for an extra creamy, decadent comforting warm drink.

Chocolate Mousse With Coconut Milk

July 27, 2024 by Easy Keto Living

Chocolate Mousse With Coconut Milk Recipe – How to make the best easy creamy 3 ingredient low carb, keto, sugar free, dairy-free pudding dessert – with the full video tutorial.

Chocolate Mousse With Coconut Milk Recipe - How to make the best easy creamy 3 ingredient low carb, keto

Chocolate Mousse With Coconut Milk

This chocolate mousse with coconut milk makes a super quick and easy sweet treat that’s keto, low carb, sugar free and dairy free friendly too.

The best part is that you only need 3 ingredients to create the creamy mousse that will satisfy your sweet tooth and chocolate cravings, while helping you on your way to achieving your own personal health and weight loss goals.

You’ll find that the dessert doesn’t have a strong coconut flavor, with the cocoa powder and stevia working perfectly to create the flavors of a traditional mousse.

The Simple Ingredients For The Easy Recipe

Whisking the 3 keto simple ingredients for the easy recipe together

Here are the handful of ingredients that you’ll need for the effortless dessert, as well as good substitute ideas for extra ingredients to adapt the chocolate treat if you’d like.

Canned Coconut Milk – when you pop a can of coconut milk into the fridge and leave it overnight, it separates into two layers – coconut cream on top and coconut water on the bottom.

The coconut cream on top is what’s used as a heavy cream substitute in the dairy-free recipe to whip into perfectly creamy and rich whipped cream that the chocolate and stevia are blended into to form the fluffy mousse.

Whipped coconut cream

You can save the watery liquid that’s left at the bottom of the can to blend into smoothies and shakes. Ensure that you use unsweetened coconut milk that you’ll find at grocery stores, so you don’t include any added sugar in the carb count.

Cocoa Powder –  to achieve the rich, chocolate flavor in the indulgent dessert, add on 2 tablespoons or more of cocoa powder or cacao powder.

Stevia – to keep the dessert low in grams of net carbs, stevia is used to sweet the mousse. You can swap for your low carb sweetener of choice such as monk fruit sweetener, powdered sugar alternative or an erythritol blend instead.

The whisked quick easy keto decadent dessert

The recipe suggests 2 tablespoons each of cocoa powder and stevia, I’d suggest start with the 2 of each, then taste and if you’d prefer a mousse that has a richer chocolate flavor add more cocoa powder, or if you’d prefer a sweeter mousse, add more stevia to satisfy your taste buds perfectly.

Flavor – you can adapt the flavor of the elegant dessert by adding a little vanilla extract or a half to a teaspoon of one of the following extract flavors: orange extract, coconut extract or raspberry extract.

Toppings – there are plenty delicious options to top your chocolate coconut mousse with that will further satisfy your sweet craving while being ketogenic diet friendly, such as topping with dark chocolate shavings, dark chocolate chips, fresh berries, shredded coconut, vegan ice cream or whipped cream.

  1. Place the can of full fat coconut milk into the fridge overnight to separate into coconut cream and water.
  2. The following day, remove the can from the fridge, open it up and carefully remove the thickened coconut cream from the top of the can and place it into a large bowl, saving the watery liquid at the bottom of the can to use in smoothies or shakes.
  3. Using an electric mixer, hand mixer or a whisk attachment, blend the coconut cream until it becomes soft, thick cream.
  4. Add the cocoa powder and stevia to the whipped coconut cream, then whisk again to fully incorporate and you have a creamy dark chocolate mousse.

Keto Coconut Cookies Recipe

Keto Coconut Cookies Recipe – How To Make The Best Easy Low Carb Sugar Free Macaroons Treat with only 4 ingredients – with the video tutorial.

Keto Coconut Cookies Recipe - How To Make The Best Easy Sugar Free Treat

Keto Coconut Cookies

These keto coconut cookies taste like a cross between meringues and coconut macaroons, yet are so simple to make. (And have only 4 ingredients!)

The best part is that the sweet treat is naturally low in g net carbs and make the perfect option to satisfy your sweet tooth while helping you to stay on track to achieve your own personal health and weight loss goals.

You can make these cookies over the weekend to have ready and waiting for you to grab as a sweet keto treat through the week, or make a double batch to enjoy over the holiday season so that you have plenty of keto friendly treats and aren’t tempted to stray from your low carb plan.

The Simple Recipe Ingredients

Blending The Simple Recipe Ingredients

Here are the keto diet friendly ingredients that you’ll need for the easy recipe:

Egg White – you only need one egg white to create the easy cookies, I like to save the egg yolk to throw into omelette or scrambled eggs batter, so that nothing goes to waste.

Stevia – blend through your sugar substitute of choice, adding as little or as much as you like, depending on how sweet you usually like your sugar free cookies. You can include stevia, monk fruit sweetener or your sweetener of choice.

Adding in the coconut to fold through

Vanilla Extract – you can leave the vanilla extract out of the wet ingredients if you’d prefer to create 3 ingredients cookies, I find that vanilla boosts the flavor and makes the cookies simply irresistible.

Coconut – for the coconut flavor in the cookies, I’ve folded through desiccated coconut, although you can feel free to swap for shredded coconut or unsweetened coconut flakes that you shred in a food processor to become a finer consistency.

Chocolate Option – make chocolate coconut cookies by blending a couple of tablespoons of cocoa powder through the dough when you’re adding the sweetener, top the cookies with sugar free chocolate chips before baking or drizzle a little melted dark chocolate chips over the cookies once baked and cooled.

  3. Add in the stevia and whisk through until fully combined, then add in the vanilla extract and give the mixture a final whisk until you have a thickened, glossy meringue mixture.
  4. Fold the coconut through the whisked egg white until a cookie dough forms.
  5. Drop a teaspoon per cookie of the cookie dough onto the prepared baking sheet, then move it to the oven and bake for 10-15 minutes or until golden brown.

Strawberry Cheesecake Fluff Recipe

Strawberry Cheesecake Fluff Recipe – How to make an easy 4 ingredient low carb keto friendly dessert – with the video tutorial.

Strawberry Cheesecake Fluff Recipe - How to make an easy 4 ingredient low carb keto friendly dessert

Strawberry Cheesecake Fluff

A creamy strawberry cheesecake fluff dessert is the perfect way to make the most of fresh strawberries and satisfy your sweet tooth with an indulgent treat that’s quick and easy to prepare.

This dessert is just like a popular strawberry fluff salad that you could serve at a dinner party, potluck, summer BBQ or picnic, but made keto approved by swapping the sugar for stevia and using much less strawberries than a classic fluff salad.

The best part is that you only need 4 ingredients and you can make the dessert as sweet or as packed full of strawberries as you’d like.

The Simple Ingredients For The Easy Dessert

The Simple Ingredients For The Easy Dessert

Here are the keto friendly ingredients that you’ll need for the easy recipe:

Heavy Cream – you can use pouring cream, heavy cream, heavy whipping cream, double cream or any other cream that you can whip into soft peaks in the dessert to give it a super fluffy texture.

Cream Cheese – creamy, luxurious cream cheese is used to provide a mouthwatering cheesecake element to the creamy dessert, without the need to prepare a whole cheesecake from scratch.

Other Cream Ingredients – you can feel free to swap some of the heavy cream or cream cheese for another creamy ingredient, depending on what you have available and your tastes, choose from whisking through a little Greek yogurt, vanilla yogurt, mascarpone cheese or ricotta cheese.

Folding the fresh strawberries into the easy dessert

Stevia – you can add in as much sweetener as you’d like to create your perfect dessert sweetness, adding in the low carb keto friendly sweetener that you usually include in dessert recipes such as stevia or monk fruit sweetener.

Strawberries – for best results, I like to incorporate fresh berries into the dessert in multiple ways – by blending chopped strawberries into the cream cheese mixture, folding in some and then topping the serving bowl with even more berries, so you enjoy a berry burst in every mouthful.

You can use juicy strawberries as I have done or swap for your favorite berries such as raspberries, blackberries or blueberries instead.

  2. Add the softened cream cheese and stevia into the large mixing bowl and whisk again with the electric hand mixer until fully combined, thick and creamy.
  3. Slice up as many strawberries as you’d like to include in the delicious dessert and then blend some of the sliced strawberries through the cream cheese mixture and fold most of the rest of the strawberries through the dessert.
  4. Move the great dessert to a serving bowl and top with any remaining strawberries, serve straight away or place in the fridge for a few hours to thicken, then enjoy within 24 hours, storing leftovers in an airtight container in the fridge.

Low Carb Panna Cotta Recipe

July 1, 2024 by Easy Keto Living

Low Carb Panna Cotta Recipe – How To Make An Easy Keto Sugar Free Dessert Treat With Lemon – with the full video tutorial.

Low Carb Panna Cotta Recipe - How To Make An Easy Keto Sugar Free Dessert

Low Carb Panna Cotta

This low carb panna cotta is an indulgent way to enjoy the traditional Italian dessert in a way that’s keto diet approved.

I absolutely adore panna cottas as an easy, creamy dessert and have in fact already shared a chocolate panna cotta recipe on my blog. This version is a light, luscious and lemony elegant keto dessert.

The Simple Ingredients For The Easy Recipe

The simple ingredients for the easy keto dessert recipe

Here are all of the ingredients that you’ll need to create the easy sweet treat:

Gelatin Powder – is my gelling agent of choice in the gelatin mixture of the sweet recipe.

Heavy Cream – to create the perfect silky texture and provide plenty of healthy fats, heavy cream is incorporated into the elegant dessert. You can feel free to swap for heavy whipping cream, double cream or any other cream you’re able to get your hands on.

To create a fully dairy free dessert, you can swap the cream for full fat coconut milk or coconut cream to instead to easily whip up a creamy keto coconut panna cotta.

Mixing-creamy-ingredients

Unsweetened Almond Milk – a traditional panna cotta usually combines together milk and cream, as this is a keto friendly recipe, almond milk is swapped for the whole milk. You can feel free to swap the almond milk for whatever milk you usually include in your diet.

Stevia – is the sweetness that I usually include in a keto recipe. You can swap for your low-carb diet sweetener or sugar substitute of choice such as monk fruit sweetener or a swerve confectioners sweetener if you’d like instead. You can also add in additional sweetener if you’d prefer a sweeter healthy dessert.

Lemon – this lemon panna cotta dessert recipe is infused with fresh lemon to create a wonderfully citrusy treat. You can swap the lemon for orange zest and juice or vanilla extract for the panna cotta flavor you’d prefer.

How to make sugar free low carb keto panna cotta

Low Carb Panna Cotta Recipe

  • 1 Cup Heavy Cream
  • 1/2 Cup Unsweetened Almond Milk
  • 1/4 to 1/2 Cup Stevia or Low Carb Sweetener of Choice
  • 1/2-1 Lemon
  1. Sprinkle the gelatin into a small bowl, pour over the cold water, mix to combine and to help the gelatin dissolve in the water, then set it aside for 5 to 10 minutes to let the gelatin bloom.
  2. Pour the heavy cream, almond milk and stevia into a small saucepan, then grate the lemon zest over the top, cut the lemon in half and squeeze the lemon over a fine-mesh sieve to catch any pips while the lemon juice is added to the mixture.
  3. Move the pot to the stove top, place it over medium heat and cook until the cream mixture has warmed through and starts to steam, but is not yet at boiling point.
  4. Remove the pot from the heat and pour the bloomed gelatin over the creamy mixture, then quickly whisk well to fully combine and dissolve the gelatin in the dessert.
  5. Allow the delicious dessert dish to cool to room temperature, then pour the panna cotta mixture out into individual small bowls, jars, special molds or ramekins and carefully cover with plastic wrap.

    Is Dark Chocolate Keto Friendly?

December 20, 2023 by Easy Keto Living

Is Dark Chocolate Keto Friendly? Can you eat chocolate on a low-carb diet? With the best keto-friendly brands, dark chocolate bar options and recipe ideas.

Is Dark Chocolate Keto Friendly Can you eat chocolate on a low-carb diet

    Is Dark Chocolate Keto Friendly?

Is Dark Chocolate Keto Friendly? That’s a question I’m often asked by blog readers and followers of a low-carb diet.

The short answer is that yes – you are likely to find chocolate bars or chocolate chips that are low enough in sugar and grams of net carbs to both satisfy your sweet tooth and be able to fit into your keto diet plan.

For me, the best option to get the most of the health benefits of unsweetened chocolate is to opt for one free of too many artificial sweeteners, which just don’t agree with me, and rather opt for one as low in natural sugars or a natural sweetener like stevia or monk fruit sweetener instead.

    How Many Carbs In Chocolate?

Chocolate On Keto - how many carbs in chocolate

Depending on the chocolate bars or chocolate chips you pick, the carb content and included ingredients can vary wildly. You’ll find that the higher percent cocoa solids equates to a lower sugar amount and fewer carbs.

Unfortunately regular milk chocolate and white chocolate tends to have a high sugar content as opposed to dark chocolate brands that naturally have less sugar due to the higher portion of cocoa butter and cocoa content, sometimes including unsweetened cocoa powder.

Sugar-free chocolate can often include sugar alcohol or artificial sweeteners which, as I mentioned, don’t agree with me, so I prefer to opt for a small serving size of an 85% or 90% dark chocolate that has a rich chocolate flavor without artificial ingredients.

As a general rule of thumb small amounts of low-carb chocolate is a great option to get your chocolate fix, while also helping you to stay on plan to achieve your own personal health and weight loss goals.

As mentioned, different types of chocolate will have a different carb count. With that being said, here is a look at the nutritional value from one of the best keto chocolate options that I could find at my local grocery store, 85% Lindt, per 100g:

    • 584 calories
    • 46g Fat
    • 27g Saturated Fat
    • 22g Carbohydrates
    • 15g Sugars
    • 12.5g Protein

I’d recommend not consuming an entire block of chocolate in one sitting, but aiming for around a 25g portion so that the dark chocolate fits within your daily macros. A 25 gram portion of 85% Lindt would have the following nutritional content:

    • 146 calories
    • 11.5g Fat
    • 6.75g Saturated Fat
    • 5.5g Carbohydrates
    • 3.75g Sugars
    • 3.125g Protein
Aldi and Green and Blacks Organic Options

In addition to Lindt 85%, 90% or even 99%, depending on where you are in the world, there are a number of other brands producing keto friendly chocolate.

These include Green and Blacks Organic Dark Chocolate, Lily’s Sweets Chocolate Chips and one of my personal favorites is budget friendly Aldi, which have an 85% dark chocolate option that’s perfect in all kinds of keto recipes.

Easy Keto Desserts Recipes With Chocolate

Here are some keto lifestyle friendly recipes to satisfy your chocolate cravings.

Is Dark Chocolate Keto Friendly - hot chocolate

Hot Chocolate – as a chocolate lover, I enjoy a warming, indulgent mug of hot chocolate most days, no matter the weather.

This sweet treat is super easy to make and is naturally low in g net carbs. Simply heat almond milk and a little heavy cream until just starting to gently bubble, then whisk through a couple of dark chocolate squares to melt and pour out into a mug. You can top your drink with a little whipped cream to naturally elevate the fat content to help you meet your daily keto macros.

Chocolate Mousse –  this keto chocolate recipe has only a few simple ingredients including an entire bar of low carb friendly chocolate. This easy recipe is full of healthy fats and also happens to be potentially dairy free, as long as the chocolate you pick is without milk solids, which 85% plus chocolate tends to be. (Just be sure to check the packaging carefully if serving to someone who has a dairy allergy.)

Keto Fudge – you can create indulgent fudge with a good chocolate that doesn’t have much sugar, peanut butter and your keto sweetener of choice. These are perfect to be able to enjoy the taste of those always popular peanut butter cups while being keto journey friendly.

    2 ingredient fat bombs

Fat Bombs – keto dieters often find that a great way to get into a state of ketosis, and stay there, is to include fat bombs in their diet.

There are plenty of easy keto recipes and delicious options when it comes to creating the bite sized treats without many added sugars, including adding in coconut oil, butter or in the case of my 2 ingredient fat bomb recipe – mascarpone cheese.

Keto Truffles – these decadent chocolate truffles are low in grams of carbs and contain only 3 high quality ingredients – low carb chocolate, butter and heavy cream.

The ingredients are simply melted together and then set in the fridge, before being cut into bite sized squares and stored in an airtight container to be able to quickly grab when sweet, chocolate cravings strike.

Chocolate Nut Clusters Recipe – How to make an easy 3 ingredient low carb, keto sugar free dessert – with the video tutorial.

Chocolate Nut Clusters Recipe - How to make an easy 3 ingredient low carb, keto sugar free dessert

    Chocolate Nut Clusters

These dark chocolate nut clusters are the perfect low carb, keto friendly treat to enjoy any time of the year, and especially during the holiday season when there’s so much temptation everywhere you look.

The holiday treat also makes an ideal edible gift to give to a friend or family member who is following a keto diet lifestyle.

The best part is that the keto clusters recipe is easily adaptable depending on the chocolate and nuts you’d like to use, are your favorites and easy to come by at your local grocery store.

The Simple Ingredients For The Easy Recipe

The simple ingredients youll need for the easy recipe

Keto Chocolate – you can use your favorite keto friendly good quality chocolate which is usually 85% or 90% and can be a broken up chocolate bars or dark chocolate chips, if you’d prefer. (Here are keto chocolate options on Amazon.)

If you’re giving the clusters as food gifts or not counting your carbs, then you can feel free to use any kind of chocolate you like including milk chocolate chips, semi-sweet chocolate, white chocolate chips or candy melts.

Coconut Oil – to help the chocolate safely melt and then harden in the fridge, coconut oil is the perfect ingredient to add to the easy treat.

Mixed Nuts – include any kind of nut you’d like, choose from 1, 2, 3 or more raw nuts varieties from the following options – almonds, walnuts, cashew nuts, Brazil nuts, macadamia nuts or peanuts.

    Bowl of mixed nuts

You can leave your favorite nuts whole or break them into small pieces, if you’d prefer.

Sweetness – depending on how sweet a sweet tooth you have and how dark you like your unsweetened chocolate, you can add in stevia, monk fruit sweetener or whichever sweetener you usually enjoy in low carb dessert recipes.

Extra Ingredients – there are plenty of ways to flavor the tasty treat, choose from adding in peanut butter, toasted coconut, coconut chips or coconut flakes, flaky sea salt, vanilla extract, peppermint extract or seeds such as pumpkin seeds, sunflower seeds, flax seeds, hemp seeds or chia seeds.

How To Make Homemade Nut Clusters

Melting chocolate and coconut oil together

These great recipe couldn’t be simpler to make. Start by popping the 250g/8.8oz of mixed nuts into a bowl, you may want to break up the larger nuts into smaller pieces if you’d like.

Then, see to melting the chocolate and coconut oil together. You can do this in the microwave in 30 second increments, mixing in between until melted.

Or, using the double boiler method whereby you bring a saucepan of water up to the boil ,then carefully place a heatproof bowl with the chocolate and coconut oil in it and stir regularly until melted.

    Mixing nuts into melted chocolate

Add the mixed nuts to the melted chocolate and mix until well combined. Allow to cool slightly. Meanwhile, line a sheet pan or a couple of large baking sheets with well greased baking paper.

Drop a tablespoon per nut cluster onto the prepared sheet, then move to the fridge for a one to two hours to set. If you find that they are too runny and you end up with one big tray of clusters, then you can simply break them into chocolate bark once set.

Once set, remove from the fridge and enjoy as a little treat with a mug of tea, coffee or hot chocolate. Store in a covered container, air tight containers or move into decorative boxes to take to a holiday party.

Keto Hot Chocolate Recipe – How to make the best easy low carb sugar free warming creamy hot drink mix.

Keto Hot Chocolate Recipe - How to make the best easy low carb drink

      Keto Hot Chocolate

This keto hot chocolate recipe is a warming way to satisfy your sweet cravings, while being low in net carbs and helping you achieve your own personal health and weight loss goals.

There are lots of adaptions for keto diet friendly ingredients that you can include in your hot chocolate mix – you can stick to the few ingredients in the below recipe or get as creative as you’d like – creating your own dream cup of hot chocolate.

The Simple Ingredients In The Easy Recipe

Simple ingredients for the easy recipe

These are the ingredients that are included in my own personal best hot chocolate, plus ideas for more simple keto ingredients that you can add:

Almond Milk –  unsweetened almond milk is my milk of choice that I usually include in hot chocolate. You can feel free to swap for full fat coconut milk, cashew milk or any other nut milk or keto friendly milk or non-dairy milks you’d like that you can find at grocery stores.

I like to use the mug that I’m serving the hot chocolate in to measure the almond milk out, then I have the perfect amount for me!

Almond milk and heavy cream in a mug

Cream – choose from stirring heavy cream or coconut cream, for a dairy-free option, through your hot chocolate or add an indulgent swirl of whipped cream or heavy whipping cream to the top of your mug.

Chocolate – of course there’s chocolate in a hot chocolate – and it’s up to you whether you’d like to include unsweetened cocoa powder or raw cacao powder for more of a hot cocoa drink or chopped keto chocolate such as 85% dark chocolate for a deep chocolate flavor.

      Chopped chocolate in a bowl

Sweetness – if you prefer a dark, rich hot chocolate, then you may find that the keto dessert recipe is sweet enough. Alternatively, you’re welcome to add in your favorite sweetener such as stevia or monk fruit sweetener, to taste to satisfy your sweet tooth.

Healthy Fats – some keto dieters like to add a little coconut oil or MCT oil to elevate the fat content of the low-carb hot chocolate. i find that it doesn’t agree with me doing that, so I urge you to exercise caution and try a tiny amount first to determine whether it agrees with you.

Mug of low carb hot chocolate

Flavor – add in a little vanilla extract, peppermint extract or orange extract or a pinch of salt to flavor your creamy keto hot drink. I’ve also been known to add in a little bit of ground turmeric and a pinch of pepper for a nourishing hot beverage.

Toppings – create an extra indulgent sugar free hot chocolate recipe by topping your mug with whipped cream, grated chocolate and even keto marshmallows to comfort on cold winter nights.

How to make keto hot chocolate

      Keto Hot Chocolate Recipe

      • 3/4 Cup Almond Milk or Full-Fat Coconut Milk
      • 1/4 Cup Heavy Cream
      • 1 Row 85% Dark Chocolate
      • Keto-friendly Sweetener, to taste
      • Flavor and Toppings, to taste
      1. Pour the almond milk and heavy cream into a small saucepan, chop the chocolate into small pieces or use sugar free chocolate chips instead.
      2. Place the almond milk and cream onto the stove top over low to medium heat.
      3. Heat until the warm milk starts to gently bubble, then remove from the heat and quickly stir through the chopped chocolate and any sweetener or flavor you’d like. You can do this with a spoon, whisk or milk frother for a smooth and creamy homemade keto specialty drink.
      4. Pour into a mug and top with whipped cream or your topping of choice to enjoy on a cold winter day. (Or throughout the year when you’re craving a warming drink that’s low in g net carbs.)
