Keto Zucchini Casserole Recipe

This keto zucchini casserole recipe makes a quick and easy side dish or main meal that’s loaded with creamy, cheesy goodness and the whole family will enjoy. 

There are also plenty of ways to adapt the great recipe to your own tastes, dietary requirements and what’s easy to find at a grocery store near you. 

I bought all of the ingredients at affordable ALDI, making it a brilliant budget friendly meal too.

Here are the 4 basic ingredients you’ll need for the easy zucchini casserole recipe, plus lots of ideas for variations: 

Fresh Zucchini – I’ve included 2 fresh zucchini that are sliced up to create the base for the dish, although you can use as much zucchini as you’d like, depending on how many people you are feeding and whether the dish will be a side dish or main meal.

You can feel free to swap for any other low-carb vegetables, or include a mix of vegetables such as broccoli, cauliflower, mushrooms or cabbage. You could also make it meaty by adding in sauteed ground beef or chicken breast.

Sour Cream – a great way to add a tangy creaminess to the creamy sauce of the main dish. You could swap for cream cheese instead if you’d prefer, which is another creamy ingredient that’s low in g net carbs. 

Heavy Cream –  to add luxurious creaminess to the keto diet friendly meal, heavy cream or heavy whipping cream is the perfect inclusion in the creamy cheese sauce. 

Topping the baking dish with shredded cheese

Grated Cheese – plenty of shredded cheese is mixed through the casserole as well as topped before going into the oven for a golden brown, super cheesy topping that the entire family will enjoy, including picky eaters.

You can include any type of cheese you’d like such as sharp cheddar cheese, mozzarella cheese, Parmesan cheese, Pepper Jack or Gruyere cheese. 

Seasoning – I’ve left the recipe without the mention of seasoning because we adore it as it is with the flavors of the sour cream, heavy cream and cheese combining together with the zucchini.

You can feel free to add in your choice of seasoning though from sea salt, black pepper, Italian seasoning, garlic powder or onion powder.

Keto Zucchini Casserole Recipe

  • 2 Fresh Zucchini
  • 1/3 to 1/2 Cup Sour Cream
  • 1/3 to 1/2 Cup Heavy Cream
  • 2/3 to 1 Cup Grated Cheese
  1. Preheat the oven to 180C/350F and get out an over proof baking dish.
  2. Wash, trim and slice the zucchini into bite sized pieces, them move the zucchini slices to the baking dish.
  3. Add the sour cream and heavy cream, toss well to combine with the sliced zucchinis, then add in half of the grated cheese, mixing through to incorporate.
  4. Top with the remaining cheese, or more, to cover, then place into the preheated oven for 25 to 30 minutes or until golden brown on top and cooked through.
  5. Serve the delicious dish immediately, storing any cooled to room temperature leftovers in an airtight container to enjoy within a day.

This Keto Ground Beef Stir Fry Recipe is super quick and easy to meal prep, perfect for when you need to prepare a healthy low carb high protein friendly meal as quickly as possible. 

The best part is that you can easily adapt the simple recipe to your own tastes, dietary requirements and what’s easily available at grocery stores near you.

The Simple Ingredients In The Easy Recipe

Here are the basic ingredients that you’ll need, along with plenty of ideas for extra low-carb options you can add:

Ground Beef – as the recipe name suggests, I’ve used ground beef mince in this easy dish that’s naturally low in g net carbs. You can feel free to swap for lamb mince, ground pork mince, turkey mince or ground chicken mince instead. 

Low Carb vegetables – Red onion, fresh garlic, mushrooms and pak choy are my stir fry vegetables of choice.

You can go with those or swap for your choice of low carb vegetables such as chopped red bell pepper, green beans, broccoli florets, cauliflower, cabbage, brussels sprouts or green onions. 

Fork with the cooked quick and easy meal

Stir Fry Sauce & Oil – I’ve used coconut oil for frying and added in Tamari, which is a gluten free version of soy sauce, as my sauce and oil options.

You can feel free to swap for sesame oil, olive oil or butter for frying and swap the soy sauce for coconut aminos or another keto diet friendly alternative. 

Extra Ingredients – there are lots of ways to further adapt the keto stir fry to your tastes, such as cooking a little bit of fresh ginger into the meal or sprinkling sesame seeds or chopped cashew nuts or a dollop of sour cream over the top of each small bowl.  

You can also season your delicious meal with sea salt, black pepper and any other seasoning you like such as garlic powder. onion powder or red pepper flakes. 

How to make easy keto ground beef stir fry meal recipe

Keto Ground Beef Stir Fry Recipe

  • 300g-500g Ground Beef Mince
  • 1/2-1 Onion, peeled and diced
  • 2-3 Garlic Cloves, peeled and diced
  • 250g Sliced Mushrooms
  • Chopped Pak Choy, Bok Choy or your low carb vegetables of choice
  • 1 Tablespoon Tamari or Soy Sauce
  • Coconut oil, Olive oil or Butter, for frying
  1. Heat a large frying pan or large skillet on the stove over medium heat to high heat, adding in coconut oil, olive oil or butter to melt. 
  2. While the pan is heating up, prepare all of the vegetables.
  3. Once the pan is hot, add in the onion, garlic and mushrooms and cook until starting to soften.
  4. Add on the pak choy or bok choy and toss through until reduced.
  5. Once the vegetables have all cooked, move them from the frying pan to a plate and place the ground beef mince into the frying pan.
  6. Add salt, pepper and any other seasoning you’d like to the meat and cook, tossing regularly, until fully browned.
  7. Once the meat has browned, return the cooked vegetables to the frying pan, along with the tarami or soy sauce and cook until everything has heated and cooked through.
  8. Serve the low carb dinner immediately, as is or with zucchini noodles or cauliflower rice and store any cooled leftovers in an airtight container to re-heat and enjoy within a day.

The best part is that it’s especially perfect for busy weeknights, with the whole meal coming together incredibly quickly and you can even meal prep it ahead of time to quickly throw into the oven as need be.

Here are the simple keto diet ingredients that you’ll need to the easy recipe, along with ideas ingredient adaptations to create the perfect meal to suit your own tastes, budget and dietary requirements. 

Beef Mince – for the ground meat element I’ve included ground beef mince, you’ll find that the higher the fat content of the meat, the lower the cost, so it’s up to your budget and whether you prefer to include more healthy fats in your diet whether you go for a higher fat or lean ground beef option.

You could also swap for ground turkey, ground chicken, pork or lamb in the simple recipe. 

Onion & Garlic – chopped onion and garlic adds flavor and nutritious vegetables to the great recipe. You can use as little or as much of each ingredient, depending on how many carbs you’d like to allocate to the dish, with onion being slightly higher in carbs than other low carb vegetables. 

Adding broccoli to the large skillet

Broccoli – chopped broccoli florets add in flavor, nutritious greens and help the meal to go further and be more filling. You can swap for cauliflower or cauliflower rice, mushrooms, zucchini, green beans, bell peppers or add in any chopped low carb vegetables you’d like. 

Cream – to make a creamy sauce that’s low in g net carbs, I’ve included a combination of sour cream and heavy cream. You can feel free to swap one of the creamy ingredients for cream cheese, mascarpone cheese, ricotta cheese or cottage cheese instead, if that’s what you prefer and have available. 

Cheese – I find that a good casserole appeals to picky eaters by including plenty of grated cheese within the casserole and crispy, golden brown cheese baked on top. You can use grated cheddar cheese, mozzarella cheese, parmesan cheese or your cheese mix of choice. 

Seasonings – season the hearty meal simply with salt and black pepper, or add in your choice of seasoning such as paprika, garlic powder, onion powder, oregano, taco seasoning or Italian seasonings.

  • 1.1lbs/500g Ground Beef Mince
  • 1/2-1 Onion, peeled and chopped
  • 3-4 Garlic Cloves, peeled and chopped
  • 1 Head of Broccoli, chopped into small pieces
  • 1/2 Cup Sour Cream
  • 1/2 Cup Heavy Cream
  • 1 Cup Grated Cheddar Cheese
  • Sea Salt, Black Pepper or any other Seasoning, to taste
  • Coconut oil, olive oil or butter, for frying
  1. Preheat the oven to 350F/180F and get out a casserole dish, greasing it if need be. 
  2. Heat a large skillet on the stove over medium heat to high heat and add a little of the coconut oil, olive oil or butter to start melting. 
  3. While the pan is warming up, open up the package of ground beef and season it to taste.  
  4. Once the pan is hot enough, add in the seasoned mince, chopped onion and garlic and cook, tossing frequently, until fully browned. 
  5. Once the meat mixture has fully browned, add in the prepared chopped broccoli florets and cook for a couple of minutes to start softening. 
  6. Pour the sour cream and heavy cream over the ground beef mixture and toss until well combined.
  7. Heat the complete meal through and then move it all to the prepared baking dish. 
  8. Add half a cup of the grated cheese and toss well until combined, then top the casserole with the remaining grated cheese, or more to cover completely with grated cheese.
  9. Place the low carb casserole in the oven for 25 to 30 minutes baking time or until crisp and golden brown on top, serve immediately and then store any cooled to room temperature leftovers in an airtight container and enjoy within a day.

This low carb Tuscan chicken meal makes a wonderful keto friendly comfort food meal that the whole family will enjoy for dinner. 

The best part is that you can adapt the low carb meal to your own tastes, dietary requirements and what is easy for you to find at local grocery stores. 

The Keto Diet Friendly Ingredients

The simple ingredients for the delicious recipe

Here are the ingredients included and some ideas for more to adapt the Keto Tuscan chicken recipe to your tastes: 

Chicken – you can include boneless and skinless chicken thighs or boneless skinless chicken breasts in the easy weeknight dinner. You can swap for bone in and skin on, just add more cooking time. I find that there’s plenty of healthy fats in the rich sauce so having skinless boneless chicken thighs is perfect.  

Seasoning – add your seasoning of choice to the meal, choose from simply adding in salt and ground paprika as I have done or add in black pepper, Italian seasoning, garlic powder, onion powder, red pepper flakes, fresh basil or fresh parsley. 

Vegetables – I’ve included chopped red onions, fresh garlic, sundried tomatoes and baby spinach to make a healthy, vegetable infused meal. 

How to make the creamy garlic sauce

Creamy Sauce – mix together heavy cream and chicken broth or chicken broth for a super flavorful creamy low carb sauce. You can swap the dairy ingredients for coconut milk, coconut cream or cashew cream to keep the recipe dairy free. 

Extra Ingredients – make a cheesy, creamy parmesan sauce by adding in Parmesan Cheese, Cheddar Cheese or Cream Cheese.

Sides – serve your delicious meal as is or with keto friendly sides like cauliflower rice, cauliflower mash, green beans or zucchini noodles. 

Keto Creamy Tuscan Chicken with Sun-dried tomatoes

Low Carb Tuscan Chicken Recipe

  • 4-6 Chicken Thighs
  • Salt, Black Pepper, Paprika & Seasoning, to taste
  • 3-4 Garlic Cloves
  • 1 Onion
  • 3-4 Sundried Tomatoes, Chopped
  • 1/2-1 Cup Fresh Spinach
  • 1/2 Cup Chicken Broth
  • 1/2 Cup Heavy Cream
  • Olive Oil or Coconut Oil, for cooking
  1. Heat a large skillet, cast iron skillet or frying pan on the stove over medium-high heat, adding a drizzle of olive oil or coconut oil to heat. 
  2. Season the chicken thighs all over with salt, pepper, paprika and your seasoning of choice. 
  3. When the pan is hot, cook the seasoned chicken for 3-4 minutes a side, or until golden brown on both sides, once cooked move to a plate.
  4. Peel and chop the garlic and onion and add to the pan to golden, moving the vegetables around to absorb all of the chicken flavor.  
  5. Add the sun-dried tomatoes and fresh spinach, cooking until wilted. 
  6. Pour over the chicken broth and heavy cream, then bring the creamy garlic sauce up to the boil. 
  7. Once simmering, add the cooked chicken into the sauce, cooking for a final 5-10 minutes or until the chicken has cooked through. 
  8. Serve the low-carb Tuscan chicken immediately with your sides of choice, then store any cooled to room temperature leftovers in an airtight container to enjoy within 24 hours.

This Irish Corned Beef and Cabbage is the perfect low carb, keto friendly dinner to make on St. Patrick’s Day or any time of the year when you’re craving a hearty comfort food meal that the whole family will enjoy.

I’ve lived in Ireland for 6 years now, and this is by far my favorite Irish inspired meal that I cook over and over again, having adapted the recipe over the years as friendly locals have provided me with cooking tips and the perfect way to create meltingly tender meat. 

As such, there aren’t exact measurements, but rather adding in the right ingredients and enough water to slowly cook the corned beef to perfection. 

You can feel free to cook the easy recipe in your slow cooker, pressure cooker or instant pot, following the directions and length of time for cooking an appropriate sized piece of corned beef according to your machine’s instructions. 

The Simple Ingredients For The Easy Recipe

The simple ingredients for the keto corned beef recipe

Here are the keto diet friendly ingredients that are included in the great recipe for traditional corned beef: 

Corned Beef – I’ve used a 1kg/2.2lb piece of corned beef, if yours is bigger (or smaller), then adjust the cooking time accordingly. I usually aim for half an hour per 500g, plus an extra half an hour cooking time, so the 1kg piece of corned beef takes 1.5 hours to cook to tender perfection.

Onion –  the best way to add plenty of flavor to the meal is by adding in sliced onions. I like to keep mine fairly thick so that they can be enjoyed with the meat, rather than chopped so fine that they dissolve into the liquid during the cooking time.

Garlic – another flavor must have, in my opinion, is plenty of chopped peeled garlic, which I also keep fairly chunky so that it maintains it’s shape during cooking. You can add as little or as much garlic as you’d like, depends on how garlicky you like your meals to be. 

Seasoning –  you can add in your seasoning to taste, although I find that the corned beef that I find at my local grocery store is perfectly seasoned during the curing process and doesn’t need anything else added to it. 

You can feel free to add in sea salt, rock salt, black pepper, mustard seeds, coriander seed, bay leaves or any other seasoning you like into the cooking liquid. You could also add in some beef broth, chicken broth or stock for added flavor, too. 

Sliced and cooked keto Irish Corned Beef and Cabbage

Cabbage –  you can use green cabbage or purple cabbage wedges as a great way to add in plenty of flavor and nutrition to the meal without brining up the total carbs too much. 

Carrots –  while being higher in g net carbs than other vegetables, I like to include chopped carrots when cooking my best corned beef for the flavor that it brings to the low carb version of the dish. My kids, who don’t follow a low carb diet, enjoy the carrots, while I enjoy the flavor they bring.

  • 1kg/2.2lbs Corned Beef Silverside
  • 1 Onion
  • 4-6 Garlic Cloves
  • 3-4 Carrots
  • Salt, Pepper & Seasoning, to taste
  • 1/2 Head of Cabbage
  1. Open and clean the corned beef then place it in a large pot or dutch oven. 
  2. Peel and chop the onion, garlic and carrots and add them to the corned beef in the pot. 
  3. Pour over cold water to cover, then place on the stove top with the lid on, over medium heat to high heat and bring it up to the boil. 
  4. Once boiling, reduce to a gentle simmer and cook for 1.5 hours or until cooked through and fork tender. 
  5. Remove the meat and vegetables from the cooking liquid and bring it back up to the boil.
  6. Slice the cabbage and add it into the bubbling cooking liquid, cooking for 10-15 minutes or until the cabbage is tender to your liking. 
  7. Serve the corned beef with the cooked cabbage as a complete meal, along with any of the onion and garlic that you’d like and your side or sauce of choice, mine is my simple Russian dressing. 
  8. Store any leftover corned beef and cabbage dinner in an airtight container to consume within a couple of days.

    Here are the low carb diet approved ingredients that you’ll need to make the pan-seared salmon dish: 

    Salmon Fillets – choose from a variety of different types of salmon including wild-caught salmon, Atlantic salmon or any other fresh salmon that you can get a hold of. You can also use frozen salmon filets if you’d prefer.  

    Ideally your salmon will have it’s skin on so that you can enjoy the crispy skin that this recipe produces.

    Heavy Cream –  the easiest way to create a creamy, tender salmon dish is to pour over plenty of heavy cream. You can also make it cheesy by adding a little Parmesan Cheese to the creamy sauce. 

    Garlic Cloves – crush or grate peeled garlic cloves for the best way to achieve a dish with so much flavor. You could of course always swap for garlic powder, if you’d prefer. 

    Seasoning – season your salmon with sea salt, black pepper or any other seasoning or herb you’d like. You could also squeeze over a little lemon juice or soy sauce for flavor, too.

    • 2 Salmon Fillets
    • 1/2 Cup Heavy Cream
    • 1-2 Garlic Cloves
    • Sea Salt & Black Pepper, to taste
    1. Heat a little coconut oil, olive oil or avocado oil in a large skillet or frying pan over medium-high heat. 
    2. While the pan is heating, open the salmon package and season the salmon with salt, pepper or any other seasoning you’d like.
    3. Pour the heavy cream into a small bowl then peel and either crush or grate the garlic cloves over the cream, and stir together until well combined.
    4. Once the pan is hot, place the salmon skin side down into the hot pan and cook for 3-5 minutes, then turn the salmon over and cook for a further 3-5 minutes or until golden brown and cooked through. 
    5. Remove the salmon to a plate, then pour the prepared creamy sauce into the pan and cook for a couple of minutes until bubbling. 
    6. Return the salmon to the pan and heat through in the creamy sauce, then serve immediately, with your best salmon sides of choice that are low in g net carbs.

      I’ve made these all on the stove top, but you can feel free to use the same suggested ingredients and throw everything into a slow cooker instead, following your manufacturers instructions for cooking temperature and length of time for soups. 

      1. Keto Bone Broth

      This Keto Bone Broth or keto chicken soup recipe is a great way to either use as a base for another hearty soup or to enjoy as a nourishing chicken broth on it’s own to enjoy all of the incredible health benefits. 

      You can even add in some zucchini noodles to create a tender chicken noodle soup that’s ketogenic diet friendly and that the entire family will enjoy. 

      To make the homemade chicken stock, brown onion, garlic and chicken in a large pot, you can use any piece of chicken you like, or even leftover bones so that nothing from a roast chicken meal goes to waste. Ideally including plenty of pieces with bones and skin, with pieces like chicken breasts not adding in the same nutrition as fatty pieces like thighs, legs or wings.

      Add in salt, pepper and any other seasoning you like, then pour over water, stock or broth to cover. I like to also pour over a spoon of apple cider vinegar, to help the nutrients become released from the bones.

      Simmer for 2-3 hours and then serve, or allow to cool to room temperature, place in the fridge and consume the next day for added flavor and nutritional benefits. 

      2. Broccoli Cheese Soup

      To make the easy low carb soup recipe, heat coconut oil, olive oil or butter in a large saucepan then add in onion and garlic until browned, add in chopped broccoli florets, salt and black pepper and then almond milk and heavy cream to create a luxuriously creamy soup, without the need for any low-carb thickeners.

      The comforting soup is simmered away until the broccoli has softened to be easily mashable, then you can either serve the soup as it is, mash with a potato masher or blend with a stick blender.

      You can add in as much cheddar cheese as you’d like, some just before taking the soup off the boil and more when serving to create the ultimate cheesy broccoli soup that’s full of healthy fats. 

      3. Keto Zucchini Soup

      This creamy keto zucchini soup is a budget friendly soup option to make when zucchini are in season, in abundance and cheap.

      You can adapt your soup recipe to include a number of creamy ingredients that are low in net carbs cream cheese, sour cream, coconut milk or Greek yogurt, depending on what you have in your kitchen or what’s easy to find at your local grocery store.

      4. Cauliflower Soup

      I’d suggest doing your own research on each ingredient, and determining for yourself whether a small portion of either can be included in your diet to help you satisfy your rice cravings without such a high carb count.

      Even if you’re on a tight budget, there really are plenty of quick meals to make that will fit into your keto meal plan.

      Each easy recipe will help you meet your macros while also helping you achieve your health and weight loss goals.

      The other day I shared my full cheap keto grocery list, full of low carb foods that are easy to find at a grocery store. In today’s blog post I’m sharing some of my go to low carb meals that will help to keep your grocery bill down and the whole family will enjoy.

      You’ll find that instead of buying pricey chicken breasts, a whole chicken or cheap cuts like chicken thighs or wings are much more economically friendly.

      One of our favorites is crispy chicken thighs that we usually serve with cauliflower rice as a side dish to soak up all of the wonderful flavors.

      Cheesy Chicken Bake

      This cheesy chicken bake can be quickly prepped and popped into the oven to cook for dinner to enjoy with cauliflower rice or your low carb dinner sides of choice that are low in net carbs.

      If you like getting ahead with meal planning, then you can even make double of what you’ll need and then freeze the extra to enjoy as a future night’s meal.

      Keto Diet Bolognese

      Cheaper cuts of meat are a great way to keep your grocery budget as low as possible. I find that ground beef mince is one of the cheapest ways to include red meat in your diet.

      You can cook up a great keto ground beef bolognese really quickly and simply serve topped with plenty of cheesy goodness including grated parmesan cheese, mozzarella cheese or cheddar cheese.

      Or you can mix through cabbage or zucchini noodles and enjoy a keto spaghetti bolognese.

      Ground Beef Stroganoff

      To make this simple keto friendly stroganoff, ground beef mince is cooked in a cream cheese sauce, along with mushrooms and plenty of garlic for a flavorful dish that comes together really quickly.

      You can quickly form ground beef mince into burgers with your seasoning of choice, cook them up in plenty of butter, coconut oil or olive oil in a frying pan and then serve in a lettuce bun and with plenty of fresh veggies and other keto burger toppings of your choice.

      A cheesy casserole needs only minimal ingredients and takes around 25 minutes to bake in the oven until lovely and golden.

      Simply mix together your choice of low carb vegetables, tuna if you like, heavy cream, sour cream and your choice of cheese, including cheddar cheese, mozzarella cheese or parmesan cheese. Then just bake to casserole perfection.

      Zucchini Noodles

      All you need is zucchini that you spiralize into noodles. (You’ll need a spiralizer for that, here’s a selection of spiralizers on Amazon.)

      Then heat the quick-cooking veggie in a creamy garlic sauce. You can add in a tin of tuna or grated parmesan cheese for flavor and your quick keto dinner is on the table in mere minutes.

      Hearty Soup Ideas

      Meal prep a large pot of hearty soup or bone broth full of cheap keto vegetables over the weekend to reheat and enjoy by the bowl full at dinner through the week.

      You can add a dollop of sour cream or stir through a few spoons of heavy cream or cream cheese to turn a low carb soup into a low carb high-fat diet and keto friendly whole meal for busy weeknights.
