Tuna Broccoli Casserole Recipe

October 1, 2019 by Easy Keto Living

Tuna Broccoli Casserole Recipe – Easy Cheesy Low Carb Keto Tuna and Broccoli Casserole.

Easy Keto Cheesy Tuna Broccoli Casserole

Tuna Broccoli Casserole Recipe

This easy cheesy tuna broccoli casserole makes a quick, perfectly balanced keto dinner.

Tuna melts and tuna noodle casserole were some of my all time favourite pre-keto meals. And, this cheesy casserole is like a combination of all the best bits of each cheesy tuna dish – but without the carbs.

You can really use as much broccoli, tuna and cheese you like – depending on how cheesy, broccoli or tuna full you want your budget friendly dish to be. (Here’s more budget inspiration with my full cheap keto grocery list.)

Ingredients for keto casserole

To make the easy dinner, simply chop a head of broccoli into bite sized pieces. Then, place the broccoli into a baking dish.

Top the broccoli with a tin of tuna – small or big, it’s up to you. Next, pour over the cream and sour cream.

Mixing together ingredients for broccoli and tuna bake

I adore the combination of cream and sour cream – it works perfectly in this dish. You could also swap one of the creams for mayo if you like.

Then, mix half the cheese through the casserole and top the mixed dish with the other half of the cheese.

Casserole covered with cheese and ready for the oven

You may want to add more grated cheese – just depends on how cheesy a topping you want.

How to make low carb tuna and broccoli bake

The casserole is then baked in the oven for 25 to 30 minutes or until golden and crisp to your liking.

    Keto Steak Salad Recipe

August 3, 2019 by Easy Keto Living

Keto Steak Salad Recipe – Easy Low Carb Steak Salad Idea with homemade dressing and green vegetables. Quick and easy ketogenic diet meals.

Easy low carb steak for lunch or dinner meal

    Keto Steak Salad Recipe

Often when I fry up a steak for an indulgent meal, such as a Keto Steak Dinner, I’ll cook a second steak to turn into a keto steak salad for a later meal.

In this instance I went for a mix of green vegetables and a quick homemade dressing to construct a tasty steak salad.

    Low Carb Steak Salad Ingredients

    Ingredients for a steak salad

Starting with the star of the show – the steak itself. Pick whatever steak you like and cook it until it’s done to perfect.

I usually cook mine for 4 to 5 minutes a side, depending on the size. It’s always best to allow the steak to rest for a 5 or so minutes to allow the juices to settle.

You can then enjoy your steak in the salad, or pre make the steak, allow to to cool and then refrigerate for a couple of days until needed.

How to make a keto diet friendly steak salad

While the steak is resting, prepare the vegetables. Wash a few handfuls of spinach and place at the bottom of your container.

Chop cucumber into slices and arrange on top of the spinach. Wash and tear basil leaves and scatter them around the salad.

Then, slice the steak and place on top of all the greens. And then finally, make the homemade dressing with extra virgin olive oil, lemon and salt.

Drizzle a few tablespoons of the dressing over your salad. You may not use it all as there’s plenty of it. So, you can save some to use on a salad later.

Enjoy your salad straight away or store in the fridge and take to work for lunch.

Easy keto lunch ideas - salad with steak

    Keto Diet Steak Salad Recipe

    • 1 Steak
    • 1-2 Handfuls of Spinach
    • Handful of Basil Leaves, chopped
    • Sliced Cucumber
    • 1-2 Tablespoons Extra Virgin Olive Oil
    • Zest & Juice of half a Lemon
    • Salt
    1. Cook the steak to your liking, then slice it into bite sized pieces.
    2. Place the spinach onto a plate or base of a lunch box container.
    3. Top with the slices steal, chopped basil leaves and sliced cucumber.
    4. In a small bowl, whisk together the extra virgin olive oil, lemon and salt to create a dressing.
    5. Pour a couple of tablespoons (or more) of the dressing over the steak salad.
    6. Enjoy straight away or store in a fridge and enjoy within a day.

    Low Carb Vegetable Casserole

December 12, 2018 by Easy Keto Living

Cheesy Low Carb Vegetable Casserole Recipe – The Best Easy Keto Vegetarian Dinner Ideas – Ketogenic Diet friendly broccoli, brussels sprouts and a low-carb creamy, cheesy sauce.

    Easy Low Carb Vegetable Casserole

    Low Carb Vegetable Casserole Recipe

This Cheesy Low Carb Vegetable Casserole Recipe is so easy, has only a few simple ingredients and you can adapt it to your tastes and what’s in season wherever you are.

The best part is that the whole family, even picky eaters, will enjoy the tasty casserole that’s loaded with creamy and cheesy goodness that makes the perfect comfort food meal.

This can be a really easy, budget friendly dish because you can use whatever vegetables are in season where you are.

For me at the moment, that’s fresh broccoli and brussels sprouts. Though in the past I’ve made this dish with just broccoli, cauliflower or brussels sprouts and it’s been excellent.

    Low Carb Veggie Bake

Here are some ideas for low-carb vegetables to mix and match in your veggie casserole to help keep it low in grams of carbs:

    • Broccoli Florets
    • Cauliflower Florets
    • Brussels Sprouts
    • Zucchini/Courgette
    • Onion
    • Garlic
    • Leek
    • Bell Peppers
    • Mushrooms
    • Asparagus

You can include any kind of shredded cheese you’d like in the easy recipe for the low-carb casserole, including mozzarella cheese, sharp cheddar cheese, Parmesan cheese or Monterey Jack cheese.

The creamy cheese sauce in the great recipe is made by combining together heavy cream or heavy whipping cream and sour cream to create the perfectly flavored and textured creamy sauce.

You can feel free to swap one of the creamy ingredients for cream cheese, ricotta cheese or cottage cheese instead if that’s what you have available.

The combination of the fresh vegetables, sauce and cheese result in a perfectly flavored keto casserole that’s low in g net carbs, but you can feel free to also add in seasoning such as salt, black pepper, garlic powder or onion powder if you’d like as well.

    Cheesy Low Carb Vegetable Casserole

    3. Top with the sour cream, heavy cream and half of the cheese.
    4. Mix to combine the creamy mixture well amongst the vegetables.

If you’re a fan of the classic comfort dish Tuna Mornay, then you will love this Keto Diet friendly version. Cauliflower is used in place of carby pasta and you really don’t even miss it.

I like to use my red spot frying pan as it let me know when the frying pan is hot enjoy to add the chopped cauliflower.

Then, it’s simple a matter of cooking the cauliflower until browned, adding more butter when needed.

You could of course adapt the recipe and instead of using Mascarpone use cream and/or sour cream. Also, you can use any cheese you like – Parmesan would be great too!
