This Cheesy Low Carb Vegetable Casserole Recipe is so easy, has only a few ingredients and you can adapt it to your tastes and what’s in season wherever you are.
This can be a really easy, budget friendly dish because you can use whatever vegetables are in season where you are.
For me at the moment, that’s brussels sprouts and broccoli. Though in the past I’ve made this dish with just broccoli, cauliflower or brussels sprouts and it’s been excellent.
Here are some ideas for vegetables to mix and match in your veggie casserole:
- Broccoli
- Cauliflower
- Brussels Sprouts
- Zucchini/Courgette
- Onion
- Garlic
- Leek
- Mushrooms
- Asparagus
Low Carb Vegetable Casserole Recipe
- Brussels Sprouts, halved
- Broccoli, chopped
- 1/4 to 1/2 Cup Sour Cream
- 1/4 to 1/2 Cup Cream
- 1/2 to 1 Cup Grated Cheese
- Preheat the oven to 180C/350F and get out a baking dish.
- Place the brussels sprouts, broccoli or your low carb vegetables of choice into the baking dish.
- Top with the sour cream, cream and half of the cheese.
- Mix to combine the creamy mixture well amongst the vegetables.
- Top with the remaining cheese and place into the oven for 15 to 20 minutes or until golden and cooked to your liking.
This low carb vegetable casserole really is one of my favourite keto dinners. It’s easy, cheesy and full of nutritious ingredients.
