Chessy Broccoli Scrambled Eggs

Ingredients

  • Broccoli chopped into bite sized pieces
  • 2-3 Eggs per person
  • 1-2 Tablespoons Cream per person
  • Grated Cheese
  • Butter for frying

Instructions

  1. Melt a generous knob of butter in a frying pan.
  2. When hot, add the broccoli and cook until almost done to your liking, adding more butter if it needs it.
  3. Meanwhile, beat together the eggs and cream until smooth.
  4. Once the broccoli is cooked, pour over the beaten egg mixture and add as much grated cheese as you'd like.
  5. Cook, tossing continuously to scramble, until the cheese has melted and eggs have cooked to your liking.
