Preheat the oven to 200C/400F and get out an oven proof dish.

Once the oven has reached the temperature, separate and pierce the sausages and place them into the dish.

Drizzle over a tablespoon or so of olive oil and place into the preheated oven for 10 minutes.

Meanwhile, chop the mushrooms and zucchini to roughly the same sized pieces.

After the 10 minutes, remove the sausages from the oven.

Add the mushrooms and zucchini to the dish, drizzle over another couple of tablespoons of olive oil and add a few shakes of salt and pepper, to taste.

Place back into the oven for a further 10 minutes.

Once the sausages and vegetables have cooked for 10 minutes, remove from the oven and crack over the eggs.

Place back into the oven for a final 8 to 10 minutes or until everything is cooked to your liking.
