Here’s an easy low-carb green bean casserole recipe ideal for a low-carb diet or if you want to control your carb intake.

This makes a perfect easy keto side dish if you are wanting to add some healthy green beans or a little bit of green veggies to your eating plan.

  • 1.1lb/500g Green Beans, chopped
  • 1/2 to 1 Onion, peeled and chopped
  • 2-3 Fresh garlic Cloves, peeled and chopped
  • 1/4 to 1/3 Cup Sour Cream or cream cheese
  • 1/4 to 1/3 Cup Cream
  • 1/2 to 1 Cup Grated Cheese such cheddar or parmesan cheese
  • Add sea salt & white or black pepper, to taste
  1. Preheat the oven to 350F/180C and grease a baking dish.
  2. Heat butter or coconut oil in a frying pan and, when hot, add in the chopped green beans, onion and garlic.
  3. Add in salt and pepper, to taste, then cook for a few minutes, until the vegetables have softened slightly.
  4. Move the cooked vegetables to the prepared baking dish.
  5. Pour over the sour cream, cream and half of the cheese, then stir through until fully combined.
  6. Top the casserole with the rest of the grated cheese, adding more if needed.
  7. Move the casserole to the preheated oven and bake for 20 to 25 minutes or until golden and cooked through, then serve and enjoy.

Is Oatmeal Keto Friendly? For some there is nothing nicer than having a nice hot bowl of oatmeal topped with your favourite fruit and sweetener. But, is oatmeal keto friendly?

That’s a question I’m often asked by blog readers and followers of a low-carb diet.

If you wish to get into or remain in a state of ketosis, that requires you to have a total of around 25 -50g of net carbs.

Looking at the nutritional data below, a regular oatmeal serving of half a cup (117g) has 12 grams of carbs once you take the dietary fiber into account. That doesn’t even include any extra carbs, depending on the type of milk you may want to add such as unsweetened almond milk or coconut milk.

So while it wouldn’t kick you out of ketosis, you would certainly have to be exceptionally careful the rest of the day. Though, if you intermittent fast in addition to keeping a carb intake suitable for a keto diet, it could certainly be done.

How Many Carbs In Oats?

Oatmeal’s nutritional content for a regular serving of half a cup (117g) is as follows:

  • Calories 83
  • Total grams of fat 1.8g (saturated fat 0.4g)
  • Grams of carbs 14g
  • Grams of fiber 2g
  • Grams of net carbs (total carbs – fiber) 12g
  • Sugars 0.3g
  • Protein 3g

As mentioned above while oatmeal technically could be allowed in small enough amounts, it certainly pushes the boundaries of an acceptable carb count.

And, if you’re like me and you find that 30 grams of carbohydrates is your nutritional ketosis limit, I would have to say if you have three meals a day oatmeal is not keto-friendly. Particularly if you want a low carb breakfast to start your day with.

While that may be bad news, the good news is there are plenty of oatmeal alternatives to choose from.

Here are the following keto-friendly food alternatives instead:

  • Chia seeds
  • Flaxseeds
  • Hemp seeds
  • Almond flour
  • Coconut flour
  • Nut Butter

Chia Seeds

A typical serving of chia seeds is per tablespoon or tbsp (12g)

  • Total grams of fat 3.7g (0.4g saturated)
  • Grams of carbs 5.1g
  • Dietary fiber 4.1 g
  • Net carbs (total carbs – fiber) 1g
  • Protein 2g

A good source of fiber and healthy fats in the form of omega 3 fatty acids. Omega 3 health benefits have been shown to be helpful in having good cardiovascular health, brain function and in helping weight loss.

Due to chia seeds ability to absorb up to 10 times there weight in liquid they can make some of the easiest oatmeal substitute recipes for a high-fat diet such as the keto diet.

    When looking at the popular diets of Mediterranean Diet Vs Keto Diet, there are a number of key differences and important factors to consider when choosing an appropriate diet for the particular health benefits that you’re wanting to achieve.

    On the surface the main differences being that the ketogenic diet is a high-fat diet with a much lower daily carb intake than the Mediterranean diet. A typical keto meal plan usually being between under 25 to 50 grams of net carbs a day for the average person.

    While the Mediterranean diet is a moderate fat diet containing lots of whole grains, lean protein and fresh fruits, but no specific macronutrient limitations.

    While all that is true it is not the full picture. So lets delve a little deeper into the two diet plans and see which diet is the better option for you.

    The ketogenic diet was originally designed for children suffering from epilepsy in the 1920’s as a way to reduce the number of seizures even when on antiseizure medication. Now it has gained popularity as a healthy way to quick weight loss and with long-term adherence helps control your body weight.

    The keto or ketogenic part of the diet is so named as when on a very low carb diet for a period of time the body becomes in a state of nutritional ketosis. This means the body uses fats as its primary fuel source instead of glucose.

    As your body uses the fat stores as fuel, the body releases acids called ketones which is measurable in the blood and to a less accurate degree in the urine measurable using keto test strips.

    For some people the keto diet can achieve rapid weight loss and in the long run a diet very high in heathy fats and very low of carbs is fantastic to lower blood sugar, decrease blood pressure, plus, provide lots of other health benefits.

    One of the issues with the keto diet is getting al the essential nutrients your body needs as some fruits can raise your blood sugar levels too high to remain in ketosis. For example fresh fruits such as bananas, apples, and dried fruits like raisins.

    One other issue some people experience (at least initially) is the keto flu.     Whilst there is no definitive definition of the Mediterranean diet there is a general consensus among researchers that the Mediterranean diet can be good in helping in the prevention of heart disease and heart health in general.

    The Mediterranean diet may also help with chronic disease, encourage weight loss, has anti-inflammatory properties and may even help with sleep.

    As mentioned earlier there no clear rules. However, a table compiled by a literature review of the Mediterranean diet found a list of the following foods.

    As you can see from the above list the Mediterranean diet keeps processed foods to a minimum and is high in whole foods and especially whole grains. Making it quite the contrast to low-carbohydrate diets such as the ketogenic diet.

    Some studies suggest that following the Mediterranean diet can lower risk of cardiovascular disease (CVD).

    One study on the effects of the Mediterranean diet on Type II diabetes mellitus suggests there may be a beneficial effect on monitoring blood glucose levels, though the finding were inconclusive.

    There are suggestions that the Mediterranean diet may help with concentration and brain function. One study points to an association between the Mediterranean diet and brain cognition, though the findings do not point a a clear cause and effect relationship.

    The best part is that the easy recipe comes together really quickly and you can enjoy the creamy dessert warm straight from the stove or allow to chill and then indulge over the next couple of days.

    I love experimenting with low carb desserts and I’ve been enjoying adapting different types of custards lately to be ketogenic friendly. This easy version is pure chocolatey goodness and makes a welcome change to a vanilla custard that you may be used to.

    You can serve the whole thing from one serving bowl or move to smaller ramekins or custard cups for the perfect individual dessert that you could serve at a special occasion or even Valentine’s Day.

    Essential Ingredients For The Easy Dessert

    Essential ingredients for the easy dessert recipe

    Here are the simple ingredients that you’ll need to create the easy keto custard recipe: 

    Almond Milk – use unsweetened almond milk to ensure that the recipe is low carb diet friendly. You can feel free to swap for unsweetened coconut milk, cashew milk or any other keto friendly milk that you usually include in your diet.

    Heavy Cream – use heavy cream to create a rich custard mixture. You can feel free to swap for heavy whipping cream, double cream or any other whole milk cream you like. Or, swap to coconut cream or another dairy-free option to make the traditional custard a dairy free dessert.

    Stevia – is my keto diet sweetener of choice that I like to include in my main ingredients. Feel free to swap for monk fruit sweetener or any other sweetener options you usually include in your keto lifestyle.

    Cocoa Powder – yes there are two chocolate ingredients in this recipe, each bringing rich chocolatey goodness to the creamy custard. In this instance, you can use cocoa powder or cacao powder, depending on what you have in your pantry.

    You can also feel free to add in half a teaspoon of vanilla extract or a pinch of sea salt to further enhance the flavor of the dessert.

    Eggs – whole eggs are whisked into the dessert mixture, making it really easy so that you don’t even have fuss with separating egg yolks from egg whites.

    Dark Chocolate Choices

    Dark Chocolate – use decadent 85% or 90% dark chocolate to make sure that the low carb custard recipe is as low in sugar and net carbs as possible.

    Unsalted Butter – butter is added to create a silky smooth texture and add richness to the best keto custard. Make is dairy free by using a dairy free butter alternative.

    How to make low carb friendly custard

    Keto Custard Recipe With Chocolate

    • 1 Cup Almond Milk
    • 1/2 Cup Cream
    • 2 Tablespoons Stevia or your low carb sweetener of choice
    • 1 Tablespoon Cocoa Powder
    • 2 Large Eggs
    • 2 ounces/50g Low Carb Chocolate, chopped
    • 2 ounces/50g Unsalted Butter, chopped
    1. Pour the almond milk and cream into a small sized saucepan.
    2. Place the saucepan on the stove top over low heat.
    3. Warm the cream mixture until heated through but not yet simmering.
    4. Meanwhile, combine together the stevia, cocoa powder and eggs in a large bowl.
    5. Once the almond milk and cream has warmed, pour over the chocolate and egg mixture and quickly whisk in.
    6. Quickly add in the chocolate and chopped butter and whisk to combine.
    7. Clean the small saucepan out and then pour the custard mixture back into the cleaned out saucepan.
    8. Place the saucepan back over the low heat on the stove and gently bring up to a boil, whisking the custard continuously until it’s thickened.
    9. Remove from heat when thickened and enjoy warm or cool to room temperature, move the easy keto egg custard to a serving bowl or individual ramekins, move to the fridge to further thicken and chill, then enjoy chilled from the fridge within a couple of days.

      The other day I shared my full cheap keto grocery list, full of low carb foods that are easy to find at a grocery store. In today’s blog post I’m sharing some of my go to low carb meals that will help to keep your grocery bill down and the whole family will enjoy.

      Crispy Chicken Thighs

      You’ll find that instead of buying pricey chicken breasts, a whole chicken or cheap cuts like chicken thighs or wings are much more economically friendly.

      One of our favorites is crispy chicken thighs that we usually serve with cauliflower rice as a side dish to soak up all of the wonderful flavors.

      Cheesy Chicken Bake

      This cheesy chicken bake can be quickly prepped and popped into the oven to cook for dinner to enjoy with cauliflower rice or your low carb dinner sides of choice that are low in net carbs.

      If you like getting ahead with meal planning, then you can even make double of what you’ll need and then freeze the extra to enjoy as a future night’s meal.

      Keto Diet Bolognese

      Cheaper cuts of meat are a great way to keep your grocery budget as low as possible. I find that ground beef mince is one of the cheapest ways to include red meat in your diet.

      You can cook up a great keto ground beef bolognese really quickly and simply serve topped with plenty of cheesy goodness including grated parmesan cheese, mozzarella cheese or cheddar cheese.

      Or you can mix through cabbage or zucchini noodles and enjoy a keto spaghetti bolognese.

      Ground Beef Stroganoff

      To make this simple keto friendly stroganoff, ground beef mince is cooked in a cream cheese sauce, along with mushrooms and plenty of garlic for a flavorful dish that comes together really quickly.

      Burgers

      You can quickly form ground beef mince into burgers with your seasoning of choice, cook them up in plenty of butter, coconut oil or olive oil in a frying pan and then serve in a lettuce bun and with plenty of fresh veggies and other keto burger toppings of your choice.

      Keto Casserole Recipes

      A cheesy casserole needs only minimal ingredients and takes around 25 minutes to bake in the oven until lovely and golden.

      Simply mix together your choice of low carb vegetables, tuna if you like, heavy cream, sour cream and your choice of cheese, including cheddar cheese, mozzarella cheese or parmesan cheese. Then just bake to casserole perfection.

      Here are some easy keto casseroles full of lovely low carb vegetables to choose from:

      • Green Beans Casserole
      • Tuna Broccoli Casserole
      • Vegetable Casserole
      • Baked Cauliflower Mac and Cheese

      Zucchini Noodles

      I like to call this meal 2 Minute Zoodles, because it comes together as quickly as carby noodles with a similar name, but is low in net carbs and high in healthy fats.

      All you need is zucchini that you spiralize into noodles. (You’ll need a spiralizer for that, here’s a selection of spiralizers on Amazon.)

      Then heat the quick-cooking veggie in a creamy garlic sauce. You can add in a tin of tuna or grated parmesan cheese for flavor and your quick keto dinner is on the table in mere minutes.

      Hearty Soup Ideas

      Meal prep a large pot of hearty soup or bone broth full of cheap keto vegetables over the weekend to reheat and enjoy by the bowl full at dinner through the week.

      You can add a dollop of sour cream or stir through a few spoons of heavy cream or cream cheese to turn a low carb soup into a low carb high-fat diet and keto friendly whole meal for busy weeknights.

      Keto Salads

      Here are some low-carb diet friendly recipes for salads to choose from that are made with easy to find ingredients from a grocery store.

      These good fats for keto include a healthy range of different types of foods that will elevate your daily fat intake while helping you achieve your health and weight loss goals and address any health problems you may have.

      Fats are the main source of energy in your daily calories when on a keto lifestyle and the following foods will provide you with a good balance of all kinds of sources of fat.

      Dairy Products

      You’ll find that dreamy dairy products are an easy way to ensure you’re getting enough fat on a keto diet and the best thing is that there are so many great options to choose from. Enjoy grass-fed butter to cook with and top keto waffles or pancakes with.

      Keep a selection of cheeses to enjoy on the side of a meal, make a cheesy sauce or dessert with to add plenty of natural fats to your meals. Choose from grated cheese, cheddar cheese, mozzarella cheese, cream cheese, cottage cheese, mascarpone cheese and ricotta cheese.

      I also like to keep heavy cream and sour cream in my fridge as a great way to quickly elevate the fat content of a meal, by simply drizzling a spoon or so over the finished dish or on the side of my plate.

      Good Fats For Keto – Animal Fats

      Include a range of animal fats in your diet including in the above pictured steak salad, versatile eggs, chicken with the skin on, fatty fish, fatty meat from grass-fed cows and ground beef mince that’s high in grams of fat.

      Be aware though – while animal fats are a great source of healthy fats, to avoid weight gain don’t go overboard with protein. A keto diet has a protein goal of about 10% to 20% of your daily calorie intake, similar to that of a regular diet.

      Avocado

      Avocado is a superfood that has a whole host of health benefits and can be enjoyed as a creamy side with eggs for breakfast, in a salad for lunch or on the side for dinner.

      You can also enjoy avocado oil instead of extra virgin olive oil drizzled over a salad or for cooking.

      I like to keep a selection of oils in my kitchen for different uses. Coconut oil is perfect for frying or sauteing, extra-virgin olive oil is lovely mixed into homemade salad dressings to drizzle over a salad while MCT oil is the ideal fat to blend into a smoothie or bulletproof coffee.

      Be mindful though that some keto dieters experience adverse effects when including MCT oil in their diet, so if you’re new to the healthy fat then start with a small amount and see how your body digests it before adding more into your diet.

      Nuts and Seeds

      Protein and fiber rich nuts and seeds can be enjoyed as healthy diet snacks to help you increase your daily fat intake.

      Some of my favorite nuts and seeds include macadamia nuts, cashew nuts, almonds, walnuts, peanuts, sunflower seeds, hemp seeds, pumpkin seeds, chia seeds and sesame seeds. (Here’s the full list of the best keto nuts and seeds.)

      Also keep jars of nut butters such as peanut butter to enjoy by the indulgent spoonful or blend into sweet treats.
