Here are the 3 keto diet friendly ingredients that you’ll need for the sweet treat:

Coconut Milk – a can of coconut milk is used in place of heavy cream or heavy whipping cream in the keto recipe.

The can is popped into the fridge the day before making the recipe, so that the coconut cream thickens and can easily be whipped into a whipped cream texture.

Cocoa Powder – to give the keto mousse a dark chocolate flavor I’ve used good quality cacao powder, but you could use any unsweetened cocoa powder you like instead.

Keto-friendly Sweetener – you can include stevia, monk fruit sweetener, powdered sweetener, liquid stevia or your sugar free sweetener of choice in the low-carb diet recipe.

Optional Extra Ingredients – you can blend through or top your low carb dessert with your choice from vanilla extract, keto chocolate chips, chocolate shavings or drizzle melted chocolate over the top.

  3. Whisk using an electric mixer, stand mixer or hand mixer until the coconut milk forms stiff peaks.

  5. Serve immediately or pop into an airtight container and enjoy within 24 hours.

    The best part is that the easy recipe comes together really quickly and you can enjoy the creamy dessert warm straight from the stove or allow to chill and then indulge over the next couple of days.

    I love experimenting with low carb desserts and I’ve been enjoying adapting different types of custards lately to be ketogenic friendly. This easy version is pure chocolatey goodness and makes a welcome change to a vanilla custard that you may be used to.

    You can serve the whole thing from one serving bowl or move to smaller ramekins or custard cups for the perfect individual dessert that you could serve at a special occasion or even Valentine’s Day.

    Essential Ingredients For The Easy Dessert

    Essential ingredients for the easy dessert recipe

    Here are the simple ingredients that you’ll need to create the easy keto custard recipe: 

    Almond Milk – use unsweetened almond milk to ensure that the recipe is low carb diet friendly. You can feel free to swap for unsweetened coconut milk, cashew milk or any other keto friendly milk that you usually include in your diet.

    Heavy Cream – use heavy cream to create a rich custard mixture. You can feel free to swap for heavy whipping cream, double cream or any other whole milk cream you like. Or, swap to coconut cream or another dairy-free option to make the traditional custard a dairy free dessert.

    Stevia – is my keto diet sweetener of choice that I like to include in my main ingredients. Feel free to swap for monk fruit sweetener or any other sweetener options you usually include in your keto lifestyle.

    Cocoa Powder – yes there are two chocolate ingredients in this recipe, each bringing rich chocolatey goodness to the creamy custard. In this instance, you can use cocoa powder or cacao powder, depending on what you have in your pantry.

    You can also feel free to add in half a teaspoon of vanilla extract or a pinch of sea salt to further enhance the flavor of the dessert.

    Eggs – whole eggs are whisked into the dessert mixture, making it really easy so that you don’t even have fuss with separating egg yolks from egg whites.

    Dark Chocolate Choices

    Dark Chocolate – use decadent 85% or 90% dark chocolate to make sure that the low carb custard recipe is as low in sugar and net carbs as possible.

    Unsalted Butter – butter is added to create a silky smooth texture and add richness to the best keto custard. Make is dairy free by using a dairy free butter alternative.

    • 1 Cup Almond Milk
    • 1/2 Cup Cream
    • 2 Tablespoons Stevia or your low carb sweetener of choice
    • 1 Tablespoon Cocoa Powder
    • 2 Large Eggs
    • 2 ounces/50g Low Carb Chocolate, chopped
    • 2 ounces/50g Unsalted Butter, chopped
    1. Pour the almond milk and cream into a small sized saucepan.
    2. Place the saucepan on the stove top over low heat.
    3. Warm the cream mixture until heated through but not yet simmering.
    4. Meanwhile, combine together the stevia, cocoa powder and eggs in a large bowl.
    5. Once the almond milk and cream has warmed, pour over the chocolate and egg mixture and quickly whisk in.
    6. Quickly add in the chocolate and chopped butter and whisk to combine.
    7. Clean the small saucepan out and then pour the custard mixture back into the cleaned out saucepan.
    8. Place the saucepan back over the low heat on the stove and gently bring up to a boil, whisking the custard continuously until it’s thickened.
    9. Remove from heat when thickened and enjoy warm or cool to room temperature, move the easy keto egg custard to a serving bowl or individual ramekins, move to the fridge to further thicken and chill, then enjoy chilled from the fridge within a couple of days.

      It’s up to you how you’d like to balance the lemon/sweetness flavor in the lemon cheesecake by using more of one or the other in the creamy batter.

      Whisking lemon zest and lemon juice into the simple ingredients

      I usually opt for both the full rind and juice from a lemon and 1/3 cup of stevia – it’s the perfect lemon/sweetness ratio for me to result in a wonderfully lemon flavored cheesecake that’s perfectly sweet.

      You can feel free to swap the lemon in the great recipe for vanilla extract if you’d prefer a more traditional cheesecake flavored dessert.

      Also, you can swap the stevia for any low-carb sweeteners you like, such as monk fruit sweetener, to keep the dessert sweet but still low in grams of net carbs.

      How to make low carb no bake dessert

      For forming the keto dessert, I used a 9 inch or 22 cm square baking tin for my cheesecake, but you could use a round springform pan or pie pan if you’d prefer instead. The smaller the tin that you use, the higher your keto diet cheesecake will be.

      For serving, you can cover the top of the cheesecake with fresh berries and whipped cream for an extra indulgent best cheesecake dessert.

      Any way you choose, you’re sure to enjoy the simplicity of preparing the recipe and then impress the lucky cheesecake eaters with a creamy, light dessert that they won’t believe is low carb and keto diet friendly.

      No Bake Keto Cheesecake Recipe

      • 150g/5.3oz Ground Almonds, Almond Meal or Chopped Nuts
      • 75g/2.6oz Unsalted Butter
      • 1 Cup Heavy Cream
      • 400g/14.10oz Full Fat Cream Cheese, softened
      • 1/2 to 1 Lemon
      • 1/3 to 1/2 Cup Stevia
      1. Place the ground or chopped nuts into a bowl.
      2. Melt the butter in the microwave or on the stove top, then pour the melted butter over the nuts and stir to combine.
      3. Line a baking tin with well greased baking parchment paper and move the melted butter and nut mixture into the prepared baking tin, pressing the mixture firmly down on the bottom of the pan.
      4. Place the keto cheesecake crust into the fridge for 30 minutes to an hour to set.
      5. Once the crust has set, make the cheesecake topping.
      6. Pour the heavy cream into a large bowl and, using an electric mixer, whisk until thickened.
      7. Add the softened cream cheese to the large mixing bowl and whisk until smooth and creamy.

        The easy dessert will satisfy any chocolate craving and you can make the treat quickly for yourself or as a fancy dessert to serve on a special occasion like Valentine’s Day. (For more inspiration, here are 15 Quick Keto Desserts for you.)

        The best part is that you only need 3 simple ingredients to make the dreamy ricotta chocolate mousse:

        Fresh Ricotta Cheese – high protein, creamy ricotta is used to subtly flavor and add wonderful texture to the easy mousse.

        You can feel free to whisk heavy cream, coconut cream or heavy whipping cream into the mousse or even swap the whole milk ricotta cheese for cream cheese, cottage cheese or mascarpone cheese, depending on your tastes and the ingredients you have in your fridge.

        Stevia – as my mousse is keto diet friendly, I’ve included stevia, as I usually do in my healthy desserts. You can feel free to swap that for any low carb sweetener or sugar you like that you usually include in your favorite recipes.

        You can choose your own adventure, making the treat as sweet or as chocolatey as you like, depending on how much of each ingredient you add to the mixing bowl.

        Unsweetened Cocoa Powder – to add decadent chocolate flavor to the creamy mousse, I’ve used rich cocoa powder.

        You could also fold through grated bittersweet chocolate or semisweet chocolate chips for even more chocolatey goodness.

        You can even omit the chocolate and make a vanilla flavored mousse by whisking through a half to a teaspoon of vanilla extract or vanilla essence, or a lemon mousse by whisking through lemon juice and lemon zest. You could even add instant espresso powder to create a coffee mousse.

        Toppings Ideas – I’ve left this creamy ricotta cheese mousse simple as it is, but you can feel free to top your dessert with your choice of toppings to even further satisfy your sweet tooth.

        Choose to top your decadent dessert with whipped cream, fresh berries, mint leaves or even shaved chocolate, dark chocolate curls or drizzled melted chocolate over the top of serving glasses.

        The delicious recipe is so quick that you can even enjoy it straight from the food processor at room temperature if you don’t feel like waiting for it to chill and thicken further in the fridge.

        • 1-2 Tablespoons Stevia

          Here are the 4 simple ingredients you’ll need to make the keto recipe:

          Eggs – separated and whisked separately, eggs provide light, fluffy texture to the cake.

          Vanilla Extract – for a comforting vanilla flavor. You can swap for almond extract for a richer almond flavor in your cake. For a lemon flavored cake, you can mix lemon zest or lemon juice through the cake batter.

          Mixing ingredients together

          Stevia – you can use whatever ketogenic diet friendly sweeteners you usually include in your diet, choose from stevia, as I have done or use monk fruit or erythritol instead.

          Almond Flour – depending on the texture you’re wanting the easy almond flour cake to be and the options you have in your pantry, you can use either almond flour, ground almonds or almond meal. The finer the texture of the flour, the finer your cake will be.

          Powdered Sugar – my choice for this cake is usually sprinkling a little bit of sugar free powdered sugar over a sieve over the cake to keep it simple and elegant.

          Frosting – choose from cream cheese frosting, chocolate cream cheese frosting, chocolate whipped cream frosting or a decadent chocolate ganache to smother your low carb cake with.

          Nuts – sprinkle sliced almonds, flaked almonds or toasted almonds over the center of the cake for even more nutty flavor.

          Fresh Berries – top your cake with low carb diet approved fresh berries like strawberries, raspberries or blueberries or keto friendly jam like sugar free blueberry jam.

          4. Fold the whipped egg whites into the egg yolk mixture until just starting to come together.

          This Keto Basque Cheesecake Recipe is a creamy low carb friendly cheesecake that has only 7 ingredients and comes together like a dream.

          I’ve adapted a classic Spanish Basque Burnt Cheesecake to be keto friendly, simply by swapping the sugar for stevia and flour for coconut flour.

          Since only a tablespoon of flour is needed for the recipe, the cake is virtually identical to it’s carby counterpart but will help you stay on track and meet your macros.

          How to make low carb cheesecake

          The keto basque burnt cheesecake truly is foolproof – the ingredients are simply whisked together in a large mixing bowl and then baked until the cheesecake has a rustic appearance – a golden, burnt top but is still creamy and jiggly beneath.

          You’ll find that you’ll achieve the best results by using room temperature ingredients and ensuring that the baking paper overlaps the sides of the cake pan. You may even have to use a couple of sheets of parchment paper to sufficiently ovelap the sides, because the best keto cheesecake rises up during the baking process.

          I’ve given the keto burnt cheesecake a hint of vanilla flavor, but you can feel free to create a lemon flavored cheesecake instead by whisking through lemon zest and lemon juice instead.

          Keto Basque Cheesecake Recipe

          • 600g/21 ounces of Cream Cheese, Softened
          • 1/2 Cup Stevia or your sweetener of choice
          • 4 Large Eggs
          • Pinch of Salt
          • 1/2 to 1 teaspoon Vanilla Extract
          • 1 Cup Heavy Cream
          • 1 Tablespoon Coconut Flour
          1. Preheat the oven to 400F/200C, get out a round springform pan and line it with well greased baking parchment paper that overlaps the sides well. 
          2. In a large bowl, whisk the softened cream cheese and stevia with an electric mixer, until smooth.
          3. Add in the eggs, one at a time, and whisk until creamy. 
          4. Pour in the cream, shake over the salt and add the vanilla then whisk until fully combined. 
          5. Remove the whisk, add the coconut flour and fold in until completely mixed through.
          6. Pour the cheesecake batter into the prepared baking tin and move to the preheated oven for 50 minutes to 1 hour or until golden and burnt looking on top but still wobbly beneath. 
          7. Remove the cheesecake from the oven, allow to cool completely and then carefully remove from the baking tin to a plate.
          8. Serve slightly warm or move the cake to the fridge and serve chilled.
