Keto Breakfast Bake Recipe

This Easy Keto Breakfast Bake couldn’t be simpler to put together. You simply get to enjoy all your favourite low carb friendly breakfast staples, just cooked in the oven instead of the frying pan.

It’s really a no fuss breakfast – you simply cook the items, adding more to the dish as you go, depending on how long each item takes to cook.

Low Carb Breakfast Foods

Ingredients for Keto Breakfast Bake

You can feel free to mix and match your favourite low carb breakfast foods. Here are some ideas for ingredients to include in your breakfast bake:

  • Eggs
  • Bacon
  • Sausages
  • Steak
  • Beef Mince
  • Leftover roast meat/chicken
  • Feta or another cheese
  • Mushrooms
  • Cauliflower
  • Broccoli
  • Zucchini
  • Spinach
  • Herbs – Sage, Oregano, Thyme or your herb of choice

Below I’ve shared my personal favourite combination of ingredients, but feel free to change them to your tastes and dietary requirements.

  • Sausages
  • Mushrooms
  • Zucchini
  • Eggs
  • Extra Virgin Olive Oil
  • Salt & Pepper, to taste
  1. Preheat the oven to 200C/400F and get out an oven proof dish.
  2. Once the oven has reached the temperature, separate and pierce the sausages and place them into the dish.
  3. Drizzle over a tablespoon or so of olive oil and place into the preheated oven for 10 minutes.
  4. Meanwhile, chop the mushrooms and zucchini to roughly the same sized pieces.
  5. After the 10 minutes, remove the sausages from the oven.
  6. Add the mushrooms and zucchini to the dish, drizzle over another couple of tablespoons of olive oil and add a few shakes of salt and pepper, to taste.
  7. Place back into the oven for a further 10 minutes.
  8. Once the sausages and vegetables have cooked for 10 minutes, remove from the oven and crack over the eggs.
  9. Place back into the oven for a final 8 to 10 minutes or until everything is cooked to your liking.
  10. Serve and enjoy!

This Keto Chocolate Sauce is just so thick, rich and decadent you’ll be enjoying it with all kinds of low carb sweet treats, yet feel like you’re indulging in an off limits dessert.

The sauce is really thick, so feel free to add a few extra tablespoons of cream for a thinner, more pourable sauce.

How To Make Homemade Keto Chocolate Sauce

To make the chocolate sauce, you simply melt together the ingredients over a very low heat. You can do this in a saucepan, directly over the heat or in a double boiler, where you place the ingredients into a heatproof bowl over a saucepan of boiling water, to gently melt.

Taste the chocolate sauce and add Stevia or your sweetener of choice if you’d prefer a sweeter sauce.

Once you’ve made your chocolate sauce, here are some ideas for how to enjoy it:

  • As a topping for Keto Waffles or Pancakes
  • With strawberries
  • As an ice cream topping
  • In a milkshake
  • Mixed through coffee or hot chocolate

Low Carb Chocolate Sauce Recipe

  • 100g 85%+ Dark Chocolate
  • 25g Unsalted Butter
  • 2 Tablespoons Cream
  1. Place the ingredients into a small saucepan.
  2. Melt over a low heat, stirring continuously.
  3. Remove from the heat as soon as the sauce is ready when the chocolate and butter has completely melted.
  4. Enjoy warm or chill and the refrigerate to enjoy.

With pumpkin season coming up, there are loads of low carb pumpkin recipes which make a great way to celebrate the fall season.

It’s easy to  adapt old carby favourites, by reducing the carby ingredients (pumpkin) and increasing nourishing keto ingredients like eggs and coconut flour.

You can even make a big batch of the fluffy keto pumpkin pancakes over the weekend to enjoy as a speedy keto breakfast through the week.

Batter

When you prepare the Keto Pumpkin Pancakes Recipe, you simply whisk all of the ingredients together, except the coconut flour.

For the pumpkin flavor, you can use pumpkin pie filling, canned pumpkin puree or cook them mash real pumpkin to a puree, depending on what you can find at grocery stores near you.

You can feel free to swap the cinnamon for pumpkin pie spice if you’d prefer, and also swap the stevia for monk fruit sweetener or your low carb keto diet friendly sweetener of choice.

Whisk all of the simple ingredients until smooth and then add the coconut flour to create the pancake batter.

You may need to add additional coconut flour to thicken or cream to thin the batter to perfection.

Then, it’s just a matter of frying the keto pancakes batter in a frying pan on the stove top until cooked through and golden brown on both sides.

Serve as a tasty low carb breakfast topped with sugar-free syrup, cream cheese, whipped heavy cream, sugar-free chocolate chips or indulgent keto friendly ice cream.

Easy Low Carb Pumpkin Pancakes

Keto Pumpkin Pancakes Recipe

  • 2 Eggs
  • 2 Tablespoons Pumpkin Puree (where to find pumpkin puree)
  • 1/4 teaspoon Ground Cinnamon (where to find ground cinnamon)
  • 1/4 teaspoon Maple Flavor (where to find maple flavor)
  • 1/4 teaspoon Vanilla Extract (where to find vanilla extract)
  • 1 teaspoon Stevia (where to find stevia)
  • 2 Tablespoons Coconut Flour (where to find coconut flour)
  • 2-3 Tablespoons Heavy Cream or Almond Milk (Optional)
  • Butter or Coconut Oil, for frying
  1. In a bowl, whisk together the eggs, pumpkin, cinnamon, vanilla and stevia.
  2. Whisk in the coconut flour to form a smooth batter.
  3. Add cream or almond milk if the batter needs thinning or more coconut flour if it’s too thin.
  4. Heat a pat of butter or coconut oil in a frying pan over medium heat.
  5. When hot, drop a tablespoon or two per pancake.
  6. Cook until golden brown on both sides and cooked through.
  7. Serve, topped with whipped cream, sugar-free maple syrup or your pancakes toppings of choice.

As you can see, these low carb pancakes are easy to prepare with keto friendly ingredients and make the perfect breakfast or special treat.

If you’re a fan of lemon sweet treats then you’re going to love these luscious keto lemon cookies. They are sweetened with stevia and flavored with real lemon zest and juice and are naturally low in net carbs. Perfect for fans of all things lemon to satisfy their sweet tooth.

If you haven’t worked with coconut flour before then you may be surprised that cookies need so little flour.

But, you’ll find that coconut flour is incredibly absorbent and that half a cup is the perfect volume for these low carb lemon cookies.

You can boost the flavor of the lemon cookie recipe by adding in half a teaspoon to a teaspoon of lemon extract, in addition to the fresh lemons, or vanilla extract or make a quick lemon glaze to cover the baked cookies with.

How To Make Keto Cookies With Coconut Flour

Preparing the delicious lemon cookies is really easy – you simply melt the butter, pour it into a large bowl and mix through the low-carb diet approved ingredients, one at a time.

Then you place the cookie dough onto a prepared baking tray before baking until golden. You can feel free to sprinkle macadamia nuts over the lemon keto cookies.

I’ve used stevia in place of regular sugar in the sugar-free cookies, but you can feel free to swap that for monk fruit sweetener, an erythritol blend, a low carb powdered sweetener such as powdered erythritol or any other sugar substitute you’d like that you usually include in delicious keto recipes.

You can enjoy the cookies as is or sandwiched together with whipped cream, cream cheese or even with chocolate whipped cream frosting. (Click here for the recipe!)

Low Carb Lemon Cookies Recipe

  • 100g/3.5 ounces Unsalted Butter
  • 1/4 Cup Stevia or Keto Sweetener of Choice
  • 1 Egg
  • Zest of 1/2 Lemon
  • Juice of 1/2 Lemon
  • 1/2 Cup Coconut Flour
  1. Preheat the oven to 180C/350F and line a baking tray with greased baking parchment paper.
  2. Melt the butter in the microwave or over a low heat in a saucepan.
  3. When the butter has melted, pour into a heatproof large mixing bowl.
  4. Allow to cool slightly and then whisk in the stevia, egg, lemon zest and fresh lemon juice.
  5. Whisk until smooth and then stir through the coconut flour until you have a cookie dough.
  6. Drop a teaspoon per cookie onto the baking sheet in a single layer and flatten slightly to create the cookies.
  7. Place into the preheated oven for 10 to 15 minutes or until golden brown and cooked through.
  8. Remove the low-carb cookies from the oven, cool to room temperature and enjoy, storing any leftovers in an airtight container.

The weather has slowly become chillier, so I couldn’t wait to get in the kitchen and experiment with wintery Keto Soup Recipes hat the whole family will enjoy. This is the first success – Keto Cauliflower Soup that makes the perfect comfort food meal for chilly nights and an excellent alternative to carby potato soup.

Some recipe notes – I mixed blue cheese through my creamy soup, but feel free to substitute with your favorite cheese, sour cream or even cream cheese instead. You can also include way more than the suggested quarter of a cup for a more cheesy healthy cauliflower soup that’s full of rich flavors.

Regarding the soup liquid, I included a mixture of stock, almond milk and heavy cream. It really depends on how creamy you want your soup and how much healthy fats you want to include.

Feel free to change the ratios to suit your tastes or dietary requirements. You can easily adapt the keto soup recipe to be dairy free by swapping the dairy cream for coconut cream or coconut milk instead.

I’ve blended my soup using an immersion blender (or stick blender) because I adore a super creamy, velvety soup, but you can feel free to not blend the soup and enjoy the softened cauliflower florets in a thicker texture instead.

Keto Cauliflower Soup Recipe

  • 1/2 Onion, peeled and diced
  • 2-3 Garlic Cloves, peeled and diced
  • 1 Head of Cauliflower, chopped
  • 4 Cups Chicken Stock or Vegetable Stock
  • Sea Salt & Black Pepper, to taste
  • 1/2 Cup Heavy Cream
  • 1/2 Cup Almond Milk (or your milk of choice)
  • 1/4 Cup Crumbled Blue Cheese
  • Butter or Coconut Oil, for frying
  1. Heat butter or coconut oil in a large pot or saucepan over medium heat.
  2. When melted, add the diced onion and garlic.
  3. Cook until lightly golden.
  4. Add the chopped cauliflower, stock, salt and pepper to taste.
  5. Bring to the boil, reduce the heat to a simmer and cook until the cauliflower is softened, about 25 to 30 minutes.
  6. Allow to cool and blend with a handheld blender, regular blender or move to a food processor, being very careful and mindful of the hot liquid.
  7. Return to the saucepan, pour in the milk and cream.
  8. Bring back up to a simmer, add the cheese and bubble away for a couple of minutes.
  9. Serve the creamy cauliflower soup and enjoy, topped with chopped green onions if you like, storing any leftovers of the healthy soup in an airtight container.

A Typical Day On The Keto Diet

When you’ve been on the keto diet, you get into a routine. Enjoying mixing and matching ingredients to create delicious meals is easy with the choice of low carb foods available.

Here’s a typical day on the keto diet, to give you ideas for meals to enjoy – whether you’re a beginner or veteran Keto follower, you’re sure to find inspiration. (Here’s my full keto food list for beginners for you.)

Day In The Life of Keto – Breakfast

Breakfast usually involves fried eggs, vegetables and a couple of portions of healthy fats. In the above example, I’ve put together a Keto Breakfast Hash which includes beef mince, mushrooms, radishes and fried eggs.

You could enjoy eggs any way and with any vegetables you like on the side. To elevate the fat content, you could enjoy your breakfast with a side of avocado or sour cream.

Typical Keto Lunch

For lunch, I usually enjoy a salad. I start with a bed of greens and then top them with low carb and high fat ingredients.

For example, the above Avocado Salad is loaded with healthy fats thanks to the avocado and added flavour with feta.

Keto Dinner Ideas

Dinner can easily be adapted from regular favourites. For example, I’ll often enjoy a meaty bolognaise, but without spaghetti, or burgers with lettuce cups instead of buns.

A regular go to dinner is the above pictured Tuna Mornay. (Get the recipe here.) You simply replace carby pasta with cauliflower and you can enjoy a cheesy, comfort dish.

Low Carb Snack Ideas

My regulars are either strawberries and cream or hot chocolate – each being nourishing and keeping me full for hours.

Keto Breakfast Hash

Keto Breakfast Hash – An easy low carb breakfast idea with radish, mushrooms, beef mince and fried eggs. Simple gluten free breakfasts for easy mornings.

Keto Breakfast Hash

There are so many variations on the Keto Breakfast Hash. The one I’m sharing today is a mish mash of ingredients I had in my fridge at the time, that came together to create breakfast perfection.

It started with a portion of beef mince, left over from making bunless burgers. I decided to brown the mince, then cook up some sliced mushrooms and radishes, along with adding tamari for flavour.

Frying up a Keto Breakfast Hash

Once cooked, space was made for eggs, which were fried until cooked. The resulting breakfast was hearty and flavourful and the perfect way to start the day.

This is a combination which worked really well and one I’ll be creating again in the future. You could of course mix and match the ingredients depending on what you have in your kitchen and what you feel like enjoying in your own breakfast hash.

Keto Breakfast Hash Recipe

  • Beef Mince
  • Sliced Mushrooms
  • Chopped Radishes
  • Tamari or Soy Sauce
  • Eggs
  • Butter or Coconut Oil, for frying
  1. Heat butter or coconut oil in a frying pan.
  2. When hot, add the beef mince.
  3. Cook until just browned.
  4. Add the sliced mushrooms and chopped radishes.
  5. Drizzle over a couple of tablespoons of Tamari.
  6. Cook until the vegetables have browned and meat is cooked through.
  7. Made space within the hash and crack a couple of eggs.
  8. Fry until the eggs are done to your liking and enjoy.

It is possible to simultaneously follow a Vegetarian Diet and a Ketogenic Diet. You just need to be a little creative to keep meals varied and also be sure that you’re meeting your macros and maintaining adequate health.

In this post you’ll find a list of keto foods to include on your shopping list that are vegetarian friendly too.

Vegetables & Fruit

Keto Fruit and Vegetables

Here’s a list of low carb vegetables to enjoy in meals.

  • Spinach, Kale & Leafy Greens

  • Herbs such as Mint, Oregano, Sage, Coriander, Cilantro

Be aware though that carbs can add up very quickly with nuts and seeds, so measure and count out your nuts carefully to avoid blowing all your daily macros on nuts and seeds.

Healthy Fats

Avocado - healthy vegetarian keto fats

Fats tend to make up 70 to 80% of a Ketogenic Diet, so you will find yourself enjoying tons of healthy fats.

  • Coconut Oil/Milk/Cream
  • Eggs
  • Dairy – Cream, Cheese, Yoghurt, Butter, Ricotta

Chocolate

Yes, chocolate deserves a category on it’s own. If it weren’t for Keto Hot Chocolates, I don’t know how I would survive the Keto Diet! Choose as dark as possible (like this one) and then sweeten with Stevia or your sweetener of choice.

Pantry Staples

To help prepare meals, here are some staples to keep on hand in your pantry.

  • Coconut Flour
  • Coconut Milk
  • Almond Milk
  • Vinegars – including apple cider vinegar
  • Herbs & Spices
  • Salt & Pepper
  • Chocolate (see above!)
  • Cacao Powder
  • Almond Flour
  • Stevia or your sweetener of choice
  • Vanilla and other flavourings
  • Psyllium Husks
  • Protein Powder – to help you meet your protein macros. (I like this one.)

Keto Tuna Mornay Recipe

Keto Tuna Mornay Recipe – Easy Low Carb Dinner Ideas – with just a few Ketogenic Diet friendly ingredients you can enjoy this cheesy comfort casserole dish.

If you’re a fan of the classic comfort dish Tuna Mornay, then you will love this Keto Diet friendly version. Cauliflower is used in place of carby pasta and you really don’t even miss it.

I like to use my red spot frying pan as it let me know when the frying pan is hot enjoy to add the chopped cauliflower.

Then, it’s simple a matter of cooking the cauliflower until browned, adding more butter when needed.

Once the cauliflower has cooked, you just add tuna, mascarpone cheese and heaps of grated cheese. Cook until your Keto Tuna Mornay is cheesy and creamy to your liking.

You could of course adapt the recipe and instead of using Mascarpone use cream and/or sour cream. Also, you can use any cheese you like – Parmesan would be great too!

Keto Tuna Mornay Recipe

  • Chopped Cauliflower
  • Small Tin of Tuna
  • Mascarpone Cheese
  • Grated Cheese
  • Butter, for frying
  1. Heat butter in a frying pan.
  2. When hot, add the chopped cauliflower.
  3. Cook until softened and cooked to your liking, adding more butter when needed.
  4. Add the tuna, mascarpone and cheese.
  5. Stir to combine and cook until the cheese has melted and you have a creamy, cheesy tuna mornay.
