I’ve always been a bit suspicious of creamed spinach. I’d seen versions of the dish floating around on Pinterest and I decided to give a couple of recipes a try and then came up with my own low carb and high fat, keto friendly version.

You’ll discover that the easy recipe creates a low-carb keto great vegetable option that has a creamy texture and makes an easy way to get more nutritious greens into your diet and serve the dish as a great addition to any main course.

This perfect side dish couldn’t be simpler to put together and once you’ve tried it you’ll realise what the fuss was all about. My Husband adores it and I’m a huge fan too!

How To Make Keto Creamed Spinach

Start with fresh spinach. Give it a good wash and rinse. Then, heat butter or coconut oil in a frying pan and cook the leafy greens over a medium heat until wilted.

Once wilted, top with a generous couple of dollops of mascarpone cheese, salt, pepper or your seasoning of choice, to taste. You can swap the mascarpone for cream cheese or heavy whipping cream and top with parmesan cheese if you like.

Cook, stirring regularly, until the sauce thickens to a creamy spinach dish. Add on sour cream, mozzarella cheese or minced garlic to the cooked spinach as the perfect addition for extra flavor and healthy fats.

Serve the easy creamed spinach recipe as a low-carb side dish with your favorite keto meal, or even with fried eggs, storing any leftovers in an airtight container and enjoying within a day.

Keto Creamed Spinach Recipe

  • Butter or Coconut Oil for frying
  • Fresh Spinach
  • Mascarpone Cheese
  • Salt, Black Pepper or Seasoning, to taste
  1. Heat butter or coconut oil in a large frying pan or large skillet over medium heat.
  2. When hot, add the fresh spinach and cook until wilted.
  3. Add more butter or coconut oil if it gets absorbed by the spinach.
  4. Once wilted, add a few generous dollops of mascarpone cheese.
  5. Add salt, pepper and your seasoning of choice.
  6. Cook until the sauce is thickened to your liking.
  7. Serve as a side with your favorite keto meal or even eggs for breakfast.

As you can see, the best creamed spinach recipe only needs basic ingredients to create one of the easiest side dishes that you can enjoy on a low-carb diet.

I’m moving soon, so I’ve been looking for quick and easy Keto dinner ideas that require little to no prep and will keep me fuelled through my packing endeavours.

This cheesy cauliflower rice is one of the quickest and easiest meals out there.

Especially if you go the lazy way and buy already riced cauliflower. (Yes, I know it’s SUPER easy to grate or rice cauliflower, but sometimes, store bought just has to do!)

How To Make Keto Cheesy Cauliflower Rice

Start by either preparing your cauliflower by grating it into rice or grabbing ready riced cauliflower.

Next, melt butter in a large frying pan. When hot, add the cauliflower

Cook until the cauliflower rice starts to soften and become translucent. Add more butter if you think it needs it.

When almost completely cooked, pour over cream.

Then sprinkle over grated cheese.

Cook until bubbling and the cheese has melted.

Cheesy Cauliflower Rice Recipe

Ingredients

  • Cauliflower Rice
  • Cream
  • Grated Cheese
  • Butter

Instructions

  1. Prepare your cauliflower rice by grating cauliflower or use ready prepared cauliflower rice.
  2. Next, melt butter in a large frying pan.
  3. When hot, add the cauliflower and cook until starting to soften and become translucent, adding more butter if you think it needs it.
  4. Pour over cream and sprinkle over grated cheese.
  5. Cook until bubbling and the cheese has melted.
  6. Serve and enjoy!

This sweet treat is somewhere between a traditional frosting and a chocolate mousse, but leaning more towards something you’d frost or fill a tempting delight with.

How to make Easy Low Carb Chocolate Frosting

Here’s how to make this easy Keto Chocolate Whippped Cream Frosting.

First, get out your ingredients – 1 Cup of Cream (you can use heavy or whipping cream), 1 teaspoon of vanilla flavoring, 1 tablespoon of stevia and 2 tablespoons of cacao powder. You can start with this volume of stevia and cacao and then add more to taste.

Next, pour the cream into a large bowl.

Then, whip the cream until you have thick, smooth peaks. You can do this by hand with a whisk if you want, but I prefer to use my hand mixer for this job.

Now to add the flavorings – vanilla and stevia go in first.

You’re probably best off sieving, with a small strainer, the cacao powder into the mixture, to avoid any cacao lumps.

Give the mixture another whisk, scraping down the sides to get it all fully incorporated.

Whisk until smooth and then taste and add more stevia or cacao powder to make your keto chocolate whipped cream sweeter or give it a darker chocolate flavor.

As you can tell, this really is an easy recipe. Now that you’ve made your frosting, what can you do with it? Well, apart from enjoying it by the spoonful, you could use it in place of frosting or icing on your favorite Keto sweet treat.

Or, you could serve it with berries or even sandwich a couple of keto chocolate chip cookies together with a dollop (or two) of frosting. The choice is yours!

  • 1 Cup Heavy Cream
  • 1 teaspoon Vanilla Extract
  • 1 Tablespoon Stevia
  • 2 Tablespoons Cacao Powder
  1. Pour the heavy cream into a large bowl and whisk with an electric mixer until starting to thicken.
  2. Add in the vanilla, stevia and cacao powder, then whisk again until creamy and fully combined.
  3. Taste and adjust the sweetness to chocolate ratio to your tastes then use as a frosting on your favorite keto cake, cupcakes or other dessert.

This simple salad is a combination of 3 Keto ingredients to create delicious results.

To make the Keto Avocado Salad, start with a bed of greens. You could use spinach, lettuce, kale or your nutritious leafy green of choice.

Next, add chopped avocado. As little or as much as you want – depending on your macros and tastes.

Finally, crumble over some feta – again, as much as you’d like to meet your macros.

What about dressing? Well, I enjoy this salad as is, but feel free to drizzle over your favourite low carb, high fat dressing. Or, you could simply drizzle over extra virgin olive oil or even avocado oil to raise the fat content even further.

How To Make An Avocado Salad

You’ll discover that it’s easy to work out how to make an avocado salad. You just need to chop the avocado into bite sized pieces and combine it together with your salad greens of choice and other complementary ingredients. Sometimes, I’ve also added cucumber as it gives the perfect crunchy element when combined with spinach, feta and avocado.

As you can tell, this really is a simple salad, but the flavours work so well together. The creamy avocado and salty feta are a dream combination. Give it a try if you haven’t already!

Instructions

  1. Place spinach leaves in the base of a salad bowl.

Sometimes when you’re craving a keto snack you want something that will be wonderously crunchy and give the same savory experience as carby pretzels, crisps or chips, yet still be low carb.

Well, you’re in luck because today I have 7 low carb crunchy snack ideas for you.

1. Vegetable Sticks

Celery and Peppers make a wonderful, crunchy low carb snack. You can enjoy them on their own or with a dipping sauce or even some egg mayo.

2. Kale Chips

This trendy is popular for a reason – it’s tasty, fibre rich, nutrient dense and low in carbs. You can buy these while on the go or make them yourself.

3. Crispy Salami

I LOVE making crispy salami by filling a parchment lined baking sheet with finely chopped salami and then cooking them in the oven until crispy. (15 to 20 minutes in a 180C/350F oven should do it!)

4. Pork Rinds

Pork rinds are a crunchy chip alternative that’s sooooooo crunchily satisftying yet so very low in carbs.

5. Crispy Cheese

These are an AMAZING low carb crunchy snack. You simply heat a frying pan and when hot drop a tablespoon or so of grated cheese per chip.

Then it’s just a matter of being patient and allowing the cheese to melt and then crisp up.

I love using my red spot frying pan, because the spot changes colour to let me know the pan is perfectly hot enough and ready to have cheese dropped into it.

You can use any cheese or combination you like and add herbs and spices to taste.

6. Seaweed Snacks

Seaweed snacks are expectantly crunchy and another chip alternative that satisfies your savory craving without the carbs.

7. Nuts & Seeds

A handful of nuts or seeds is an easy to find and enjoy low carb crunchy snack.

My personal preference is Macadamia Nuts and it is a struggle to exercise portion control, but it’s a must to keep your carbs in check!

If you’re not a huge fan of broccoli, but want to include more of the nutritious vegetable in your diet, then this is a great place to start.

To make this dish, you start by cooking the broccoli in heaps (and heaps) of butter until it’s almost cooked to your liking.

Then, you add 2-3 eggs per person whisked with cream and cheese. Heaps and heaps of cheese!

You cook the ingredients together quickly to scramble and create a cheesy dish which will make you look forward to your next broccoli dish!

  • Broccoli, chopped into bite sized pieces
  • 2-3 Eggs, per person
  • 1-2 Tablespoons Cream, per person

I LOVE eggs for breakfast most mornings on Keto, but sometimes I just feel like starting the day without an egg (or 2).

In those instances I create a keto yogurt breakfast bowl. When choosing a yogurt, your best bet is a greek, plain or natural variety without sugar or other added carbs.

If the yogurt you have found is low fat, then you can raise the fat content by mixing through some creamy, dreamy cream. Or, topping your creation with plenty of delicious whipped cream.

I usually top mine with a couple of teaspoons of chia seeds, which is a great source of low carb fibre plus a host of  essential vitamins and minerals.

You can then sweeten your yogurt with stevia or your sweetener of choice and top it with your choice from the following toppings ideas:

  • Strawberries
  • Blueberries
  • Raspberries
  • Chia Seeds
  • Nuts – almonds, macadamias, brazil nuts or your choice of nuts – you could add whole, chopped or even in nut butter form
  • Seeds – pepitas, sunflower seeds, flax seeds
  • Shredded Coconut
  • Flavour – you can mix through vanilla, orange or even mint essence for a flavoured yogurt
  • Chocolate – create a chocolate yogurt creation with cacao or even a little bit of grated dark chocolate
  • Cheesecake – you could mix through cream cheese or mascarpone cheese for a cheesecake yogurt experience

I was a late convert to the beauty of blue cheese. And, now that I’m onto it, I can’t stop experimenting with the rich and flavourful ingredients.

This low carb blue cheese sauce is a delicious way to add more good fats to your keto diet. You can enjoy it as a side with a savoury meal or as a dressing drizzled over salads. It’s so versatile that no matter which way you enjoy it, it’s going to be the highlight of your meal.

Feel free to mix and match the ratios to achieve your desired creaminess. I like to take advantage of all the creamy ingredients available to me and combine together cream, sour cream and mayo – each bringing their own flavour and richness to the low carb blue cheese sauce.

Low Carb Blue Cheese Sauce Recipe

  • 1/4 Cup Cream
  • 1/4 Cup Sour Cream
  • 1/2 Cup Mayonnaise
  • 1 Tablespoons Apple Cider Vinegar
  • Salt & Pepper, to taste
  • 1/2 Cup Blue Cheese, Crumbled
  1. In a bowl, whisk together the cream, sour cream, mayonnaise, apple cider vinegar and salt and pepper until smooth.
  2. Gently fold through the crumbled blue cheese.
  3. Enjoy straight away, but it does benefit with a few hours in the fridge for the flavours to develop.

Ingredients

  • 1/4 Cup Cream
  • 1/4 Cup Sour Cream
  • 1/2 Cup Mayonnaise
  • 1 Tablespoons Apple Cider Vinegar
  • Salt & Pepper to taste
  • 1/2 Cup Blue Cheese Crumbled

Instructions

  1. In a bowl, whisk together the cream, sour cream, mayonnaise, apple cider vinegar and salt and pepper until smooth.
  2. Gently fold through the crumbled blue cheese.
  3. Enjoy straight away, but it does benefit with a few hours in the fridge for the flavours to develop.
